When you think of aperitifs, it's a fair bet that Mistelle is not one that you've come across very often. A type of fortified aperitif, Mistelle originated in France where grape juice and other fruits, are mixed with some sort of locally made spirit. While this style of drink has a long history in the grape-growing regions, today, we are looking at a Mistelle created by award-winning Australian bar, Bulletin Place. Adapting the style, while adding some good old Australian irreverence, the team created Rhubi Mistelle. To understand more about this aperitif, we talked to award-winning bartender and Bulletin Place's own, Tim Phillips, about history, taking a product to market and the cocktails you can make with it.
Tim Philips-Johansson is a Senior Consultant at Sweet & Chilli, a multi-venue owner and Australia's most awarded bartender. And once upon a time, he was trained by our own Marcus Motteram!Tim has become a somewhat of a behemoth of the bar and cocktail industry since working at London institution Milk & Honey in the 2000s, and going on to win Diageo Global World Class cocktail competition in 2012. Since returning to Australia in 2010, he's set up shop in Sydney with the hugely successful Bulletin Place, where he still finds time to get behind the bar once a month. Show Highlights: The question: “I ran into an unusual datasheet from Murata, for a common mode choke and on page 7 it says: ‘Do not use a gilded pattern. The copper wire may cause open by dissolution of metalization’ - question is, what does ‘gilded’ mean? The answer: Gilded means gold plating - solder plated over hard gold just doesn’t work. This is a good example of how crazy datasheets can be, and it’s apparent that this was translated from another language. Lee Ritchey always says: “app notes, should be assumed wrong unless proven right”. This whole question of app notes and whether you can trust them is very important. For example application notes often advise separating the analog and the digital ground, to reduce electrical noise. Which is not necessary. Application notes are often produced by IC Engineers, who have no exposure to field theory and their conservative nature is aimed at the worst case scenario in various industries such as medical, aerospace and automotive where people’s lives are at stake. What’s the solution to unreliable datasheets? That’s where your training comes in. Starting with reference designs is good, but it’s just a starting point, you need to apply your engineering knowledge. You have to speak to applications engineers, who know products and did testing to compile the data–you have to verify. Measuring yourself, there are no shortcuts to actual measurement, you must have a test lab due to the ‘overkill’ of most sheets. Dan Beeker also says: “datasheets may be functional, but could result in higher BOM costs”. A cocktail inspired by Charles Dickens? Or experimental beverages that include Weet Bix milk or charred Jerusalem artichoke? These are just some examples of Phil Gandevia's highly inventive work – he's an award-winning bartender who modestly describes himself as “the bar guy” at Bentley, but there's no other person I would trust to include wasabi vinegar and olive brine in a drink and actually make it delicious. You might've spotted him behind the bar at Rambutan, Eau de Vie, The Roosevelt and The Apothecary – where he concocted superfoods cocktails that even a skeptical Ned Brooks (DRNKS, Moon Park) approved of. And for someone who has thoroughly mastered booze, Phil has also applied his imagination and years of cocktail-savvy intel to a brilliant non-alcoholic menu at Bentley that is one of the best drinking experiences in Sydney: expect a smoked apple and verjus that you'll want to down “shots” of, a frothy wattleseed and West Indian spice buttermilk that's as good as the desserts it's paired with and a "wine" that he's cleverly made out of beetroot. We also cover some of the other Sydney restaurants offering intriguing booze-free matches, like Momofuku Seiobo and Quay. Phil also talks about the many places his bartending career has taken him – from Scotland to Japan and competition battles where he's witnessed knockout cocktail-making performances (like Tim Philips creating magic with an egg while dressed in a Day of the Dead costume).
