LA GASTRONOMIE Jean-Robert Pitte, vous êtes géographe, professeur émérite et ancien président de l'Université de Paris IV – Sorbonne. Depuis 2008, vous faites partie de l'Académie des sciences morales et politiques, dont vous avez été six ans le secrétaire perpétuel. Spécialiste du paysage et de la gastronomie, vous figurez également parmi les membres de l'Académie du Vin de France. Vous présidez depuis 2008 la Mission pour le Patrimoine alimentaire français. Celle-ci a permis l'inscription, en 2010, du « Repas gastronomique des Français » sur la liste du Patrimoine immatériel de l'UNESCO. La France a en effet cultivé l'art de bien manger et de bien boire tout au long de son histoire, au point d'en faire un élément essentiel de son « art de vivre ». Notre histoire gastronomique remonte aux Gaulois et à leur « art du banquet », alors que les repas offraient l'occasion d'affirmer son rang, sa richesse et son prestige. Le règne personnel de Louis XIV marque un tournant décisif dans la gastronomie française. Elle se démarque du modèle hérité de Rome pour affirmer le pouvoir du Roi sur la haute noblesse et l'éclat de la France en Europe. Les premiers restaurants naissent en France, à Paris, au tournant de la Révolution, ainsi que le terme de « gastronomie » en 1801, sous la plume du poète Joseph Berchoux. Les recettes de terroir intègrent le patrimoine culinaire au cours du XXe siècle et la gastronomie devient un rouage essentiel de l'identification à la nation, à forte dimension politique et géopolitique. Encore aujourd'hui, l'attachement des Français à leur patrimoine culinaire est important. Selon un sondage de l'IFOP en date de 2016, trois quarts d'entre eux déclarent « bien cuisiner » et plus de la moitié des sondés s'essayent au moins une fois par semaine à la préparation de plats qui « sortent de l'ordinaire ». La réputation internationale de la gastronomie française n'est pourtant pas assurée. En 2015, le classement des « 50 meilleurs restaurants » de la revue britannique « Restaurant » ne compte aucun chef français dans le top 10, et seulement 4 parmi les 50. Les critères de ce classement sont vivement critiqués et une liste alternative, créé la même année et fondé sur la compilation de 200 guides nationaux, place la France au deuxième rang mondial, derrière le Japon, un pays que vous connaissez particulièrement bien. En parallèle, de nouvelles cuisines s'affirment sur la scène internationale, parfois soutenues par leur gouvernement dans le cadre d'une politique de « gastro-diplomatie ». Ainsi, le programme « Global Thaï » lancé en 2002 par la Thaïlande a permis de multiplier par trois le nombre de restaurants thaï dans le monde en moins de 20 ans et d'attirer plus de 30 millions de visiteurs dans le pays en 2016. Ces dernières années, les contours du paysage gastronomique mondial ont rapidement évolué sous l'effet de nouveaux enjeux. Avec la mondialisation, les nouvelles tendances culinaires se créent et se diffusent à une vitesse sans précédent mais ne s'intègrent pas toujours avec succès aux cuisines nationales. La montée en puissance de la consommation engagée interroge nos modèles alimentaires tandis que de nouveaux préceptes de santé publique remettent en cause certaines de nos traditions culinaires, comme la consommation de vin.Chaque semaine, Philippe Meyer anime une conversation d'analyse politique, argumentée et courtoise, sur des thèmes nationaux et internationaux liés à l'actualité.
