Monica started her career spending 8 years working in the conservation biology field. She received an undergraduate degree in Environmental Science and Policy from the University of Maryland, College Park and an Executive Master's in Natural Resources from Virginia Tech. Additionally Monica has over 20 years experience in the service and hospitality industry and 10 plus years experience with marketing, branding and strategic planning.Monica eventually moved back to her hometown of Frederick, MD where she founded Tenth Ward Distilling Company in July of 2016. She has grown the business from a tasting room and distillery at 1600 square feet and virtually no employees to an expanded cocktail bar and tasting room, private event venue and production facility with a combined square footage of 20,000. Episode 14 “The Triangle Shirt Waist Factory Fire”: with Hasia Diner,Professor New York University.As historian Robert Hughes notes, “The Tenth Ward of Lower Manhattan—the Lower East Side—had by the 1890’s, the highest concentration of people in the world: 344,000 people packed into one square mile, or nine square yards each, including street and pavement space.” There were, it was thought, 11,000 sweatshops turning out clothing, cigars, furniture, and tin ware. One of those sweatshops was the Triangle Shirt Waist Factory.The events that unfolded on March 25, 1911 resulted in the worst industrial disaster in New York City. Called the “Triangle Shirt Waist Factory Fire”, It would also become the catalyst for an extraordinary intervention and the addition of another bizarre chapter in the history of Hart Island!Michael T. In this conversation with Tenth Ward head distiller and absinthe aficionado, some of the topics we discuss include: How Mark came to be the head distiller at Tenth Ward Distilling Co., and why their innovative approach to distilling made absinthe a really attractive choice as an anchor point in their core collection of products. What it’s like to build a flavor profile with herbs and botanicals that go through several phases of different distillation treatments. We cover where this can go wrong, and how to know when you finally get something right. Then we jump into the murky history of absinthe, which begins in mainland Europe, makes a splash across the world in the post-phyloxera drinking landscape, and then is forced underground for much of the 20th century. We teach you how to operate an absinthe fountain to louche and dilute your absinthe, with or without the traditional sugar cube. We debate the costs and benefits of the absinthe rinse method vs. the atomizer approach when building a Sazerac. And we even attempt to put to rest some of the apocryphal stories and malicious smear campaigns that kept absinthe out in the cold until very recently.

Our four panelists are Janna Howley, Director of Operations, Grow and Fortify: Alex Weiss, Sales Director, Caledonia Spirits; Monica Pearce and Kyle Pfalzer, co-owners and founders of Tenth Ward Distillery. Food, farms and economic development have been Janna Howley’s passions since the early 2000s. Janna is currently the Director of Operations for Grow & Fortify, which manages the Maryland brewers, distillers and wineries associations. In her previous position she worked for the USDA National Organic Program’s Accreditation and International Activities Division, where she conducted auditing and accreditation activities related to organic certifiers and international partners. Alex Weiss started his journey into distilled spirits via a degree in Botany and a fierce love and respect for agriculture and the relationships humans forge with their environment. After a two year stint studying this subject in China, Alex moved to New York City and began managing sales for a grass-fed beef producer in Central NY. Eventually, Alex was approached by the founder and master beekeeper for Caledonia Spirits to come on board as a Brand Ambassador, becoming the Sales Director a year later and helping to grow the distribution footprint to 29 States and five countries.  As a nature lover and wildlife enthusiast, Monica Pearce built her career in the conservation field.  Monica has a BS in environmental science and policy from the University of Maryland and her Master’s in natural resource management from Virginia Tech. Prior to the launch of Tenth Ward, she worked for a few non-profits and even spent a year in the Galapagos volunteering for a biological station. With inspiration from the growing spirit industry, she chose to make the crazy leap into booze manufacturing. Kyle Pfalzer is originally from Long Island, but came to the Frederick area to major in the Civil War at Shepherd University.  The job market for Civil War studies on Long Island being a little slow, he decided to stay (and is very glad he did.)  He grew up in a household that appreciated good beer which introduced him to craft booze.  He took up homebrewing as a hobby, and when presented with the opportunity to start a distillery it was a no brainer.
