Ever dream of eating for a living? In this mouthwatering episode, we feast on conversations with two culinary personalities who stumbled into food careers through unexpected paths.(00:48) First, we chat with B Dylan Hollis, the vintage recipe TikTok sensation whose theatrical taste tests of bizarre historical dishes like "pork cake" have captivated millions. Dylan shares how boredom and a collection of old cookbooks transformed this jazz pianist into a cookbook author with an obsession for America's forgotten flavors. His new book, "Baking Across America," explores regional specialties from across the nation, including Pittsburgh's beloved strawberry pretzel salad. Don't miss Dylan Hollis's Pittsburgh visit on May 27th at the First Unitarian Church in Shadyside! (12:16) Then, Hal B Klein, senior food writer and dining critic for the Pittsburgh Post-Gazette, takes us behind the scenes of professional food journalism. From an acting career in early adulthood, Hal pivoted to a gastronomic calling, pursuing food studies at Chatham University, then eventually becoming one of Pittsburgh's most trusted culinary voices. He shares insights on hidden restaurant gems (like an authentic Uzbek kitchen disguised as "Vinny's Pizza"), Pittsburgh's collaborative chef community, and how a once-picky eater transformed into someone who eagerly explores every cuisine. Follow Hal B. Klein's adventures @HalBKlein on Instagram for your guide to Pittsburgh's most exciting eats. Both Hal and Dylan exemplify how curiosity and openness can transform not just careers but relationships with food itself. Whether you're a dedicated foodie or simply someone who enjoys good eating, this episode offers a delicious exploration of culinary passion, cultural exchange through food, and Pittsburgh's evolving restaurant landscape.Support the showLiked the episode? All this week, the City Cast team is treating you to some of our favorite food and drink episodes from 2022. If you're hoping to ring in the new year with a craft beer instead of champagne, we've got you covered. Not long ago, you'd be hard-pressed to find a Pittsburgh brew pub with an all-local rotation — let alone one with a fire pit or board games or dogs and babies at the bar. But today, it's not just normal, it's expected. We're revisiting our conversation with City Cast contributor Hal B. Klein to learn why locals are hopping to start breweries. A moment of silence for some of our now-closed East End favorites: Bitter Ends, B52, and Reed & Co. Today we listen my conversation with my friend, classmate and fellow food fan, Hal B. Klein. Hal is the food writer, editor, and critic for Pittsburgh magazine. Hal has live in Pittsburgh since 2010 when he moved from California to attended the food studies program at Chatham University, and then found home. It was at Chatham that Hal started his writing adventure. I'm happy every time I see his name pop up, whether it be as MC for the fermentation festival or a friend talking about his latest article, Hal B. Klein makes me smile. Hal talks about some of his food firsts, the beginning of his writing career, how the pandemic changed his work. We also get into a little food studies nerdiness. Check out Hal's list of 2021 Best Restaurants, regular reviews of new restaurant openings, hidden gems, and old faithfuls, not to mention his epic reporting of the great variety of pizza's to be found around the 'Burgh at Pittsburgh Magazine. --- This episode is sponsored by · Anchor: The easiest way to make a podcast. https://anchor.fm/app --- Send in a voice message: https://anchor.fm/withbowlandspoon/message Support this podcast: https://anchor.fm/withbowlandspoon/support
