In “South Asian Food Makes Northwest Arkansas Taste Like Home,” Gravy producer Mackenzie Martin heads back to Northwest Arkansas (NWA), where Walmart began, to look at the retail giant's influence on the region's demographics and culinary landscape—specifically, spurring a boom of South Asian restaurants and food shops.   Walmart is seen by some as the king of genericness. Most of the products it sells don't have much of a regional or local spirit. Yet, in NWA, Walmart (along with other big employers) is making the community more diverse by bringing in people from all over the country, and the world. And as the population has diversified, so, too has the quality of food and restaurants.   Between 2011 and 2018, the Indian American population in Bentonville alone more than tripled. It would be easy to see the infrastructure or community resources lacking. Thankfully, in Bentonville, people are starting to step up to fill the gaps. Twenty years ago, you'd have to go to Tulsa, Kansas City, or Oklahoma City to find Indian food served in a restaurant, a four-to-seven-hour round trip. Now, there are a dozen local options, in addition to several Indian grocery stores.   To investigate the way recent immigration has influenced the quality of South Asian food and restaurants, Martin visits a local Indian restaurant, a festival at the area's first Hindu temple, and what is believed to be the first Pakistani restaurant in the region.   Many of the transplants here tell her that the resulting community is a uniquely welcoming one. Immigrants of all kinds participate in shared activities and culture while preserving the traditions of the countries they grew up in.   This is particularly on display at BBQ King, where Indian and Pakistani dishes share space on the menu. The blending of these two cuisines and cultures here is notable, since India and Pakistan have a complicated and tense relationship that goes back generations and includes several wars. Abdullah Asif, a student at the University of Arkansas whose family owns the restaurant, says it's not like that in the United States, though: “We're all part of the same community here.”   The Northwest Arkansas of today is a cosmopolitan region where people from all over the world make a living and find a home. They're making space for others but also working to preserve what makes them unique. And thanks to places like BBQ King, they now have one more place to gather and meet each other. Noble Village, known for the popular Noble Fish sushi restaurant and White Wolf Japanese patisserie, will be opening two new Asian food halls in Metro Detroit. The first, a 12,000-square-foot location, will be in Clawson at the site of the existing Noble Fish and White Wolf locations. This hall will incorporate the existing brands, expand seating and offerings, and include a ramen counter and a cocktail bar. The Clawson food hall is expected to open in phases beginning in March and include an adjacent grocery section and a larger grab-and-go selection. The second project, a massive 34,000-square-foot food hall in Novi, will be at the current location of One World Market, a Japanese grocery store owned by the same group. This location will be significantly larger and include more food concepts including a cocktail bar, an Asian fried chicken concept, a sandwich concept, an Izakaya restaurant, an expansive second floor theater space, and an expanded marketplace including an Asian spirits section. It is projected to open within a couple of years. Doran Brooks, director of business development for Noble Village Group, joined us on the show to talk about not only the two major upcoming expansions, but his story and things he's learned over the years as a restauranteur. Although not all Vietnamese Americans are nail technicians, there are enough to make up approximately 50% of the nail technicians in the $8 billion per year American nail industry.  It all started with the celebrity activist, Tippi Hedren, an actress known for being in The Birds, Marnie, and many more features. She has made an effort to work on a variety of causes throughout her life, and that includes helping the Vietnamese American refugees starting in 1975. In this episode, we share the origin of the Vietnamese American Nail Salons. To learn more, check out the documentary by Adele Pham called Nailed It! We open the episode by talking a little about AAPI athletes in the Olympics, API Emmy nominees, and other current events. In our recurring segment we introduce “So Annoying” where we take a topic that annoys us and talk about it. Adam Lajara is just an all-around good guy. After working hard on the line in restaurants and at hotels, he transitioned to becoming a private chef. His current client is Julius Randle (yes, All-Star NY Knick, Julius Randle). Adam sets the menus, makes sure Julius hits all of his nutritional requirements, and even cooks for the entire Randle family- including the kids. After listening to Adam for a minute, what stands out is how grateful and blessed he feels every day. Whether he is slogging away as a line cook, or catering to the Randle family, Adam keeps his positive attitude. “Who do I want to be in five years?” This is what Felix Cheung, AKA “Fat CheFelix” asked himself before he quit his successful career as a tech engineer to pursue his passion. With no professional experience, he moved to Melbourne where he started cooking and eventually gained a huge following both on and off-line. Felix continues his rise with sold-out pop-up dinners where he experiments with bold flavor combinations and locally sourced ingredients. There is no doubt that his next endeavor, a solo restaurant project in Melbourne, will be a hit. The restaurant is slated to open later this year and feature all the best of Felix's former menus. I sat down with Felix to ask him about his inspiration for cooking, his thoughts on local ingredients, and his advice for upcoming chefs.
