What is a Pet-Nat?They will often have a bottle cap on top. They are sparkling, but not at the level of a Cava, Prosecco, or Champagne. They are lightly fizzed. They are natural wines made without much intervention. They use natural yeasts and without many additives. Pet-Nat's normally have a little lower alcohol. I've read that they can be kind of funky, not sure what to expect.They use the “Methode ancestrale” – without intervention.Tonight, we are tasting::2024 Amuse Bouche Pet-Nat. I purchased this at Trader Joe's for $12.99. It has no added sugar, yeasts, or sulfites. The wine has 12.5% alcohol. 100% Grenache from the Languedoc region. Notes of Raspberry and grapefruit, as well as some white peach notes by the nose. On the palate. The wine is moderate in acidity and has a good mouthfeel due to the fine and delicate bubbles. It contains no added yeast, sugars, or sulphites. Pairs with summer salads, seuteed shrimp.We did not like the wine. Denise rated it a 2 and I had more of a dislike and gave it a 1. Neither of us would buy this wine again.

It has been revealed that Meghan Markle's jams are proving popular with over one million jars snapped up by shoppers...But, just why is jam so sought after, whether it has a royal connection or not, and just how easy it is to make at home?Chef Darina Allen of Ballymaloe Cookery School joins Seán to discuss.Raspberry JamMakes 3 x 450g (1lb) potsRaspberry jam is the easiest and quickest of all jams to make, and one of the most delicious. Loganberries, Boysenberries or Tayberries may also be used in this recipe.900g (2lbs) fresh raspberries790g (1lb 12oz) granulated sugarWash, dry and sterilise the jars in the oven 100°C/Gas Mark 1/4, for 15 minutes. Heat the sugar in a moderate oven for 5-10 minutes.Put the raspberries into a wide stainless steel saucepan and cook for 3-4 minutes until the juice begins to run, then add the hot sugar and stir over a gentle heat until fully dissolved. Increase the heat and boil steadily for about 5 minutes, stirring frequently.Test for a set by putting about a teaspoon of jam on a cold plate, leaving it for a few minutes in a cool place. It should wrinkle when pressed with a finger. * Remove from the heat immediately. Skim and pour into sterilised jam jars. Cover immediately.Hide the jam in a cool place or else put on a shelf in your kitchen so you can feel great every time you look at it! Anyway, it will be so delicious it won't last long!*How to Fix It!If the jam overcooks it will be too thick. Just add a little boiling water to loosen.Raspberry and Cassis Preserve Make Raspberry jam as above, add 4 tablespoons of cassis to the jam just before potting.Loganberry, Tayberry, and Boysenberry jams are made in exactly the same way

Loganberries, Boysenberries or Tayberries may also be used in this recipe.900g (2lbs) fresh raspberries790g (1lb 12oz) granulated sugarWash, dry and sterilise the jars in the oven 100°C/Gas Mark 1/4, for 15 minutes. Heat the sugar in a moderate oven for 5-10 minutes.Put the raspberries into a wide stainless steel saucepan and cook for 3-4 minutes until the juice begins to run, then add the hot sugar and stir over a gentle heat until fully dissolved. Increase the heat and boil steadily for about 5 minutes, stirring frequently.Test for a set by putting about a teaspoon of jam on a cold plate, leaving it for a few minutes in a cool place. It should wrinkle when pressed with a finger. * Remove from the heat immediately. Skim and pour into sterilised jam jars. Cover immediately.Hide the jam in a cool place or else put on a shelf in your kitchen so you can feel great every time you look at it! Anyway, it will be so delicious it won't last long!*How to Fix It!If the jam overcooks it will be too thick. Just add a little boiling water to loosen.Raspberry and Cassis Preserve Make Raspberry jam as above, add 4 tablespoons of cassis to the jam just before potting.Loganberry, Tayberry, and Boysenberry jams are made in exactly the same way

Whether you love to use butter, shortening, or even lard, the important thing is to leave your fat a little chunky to create those flaky layers in your pie crust. If you prefer a rustic look and feel, a galette might be more your style. Hot tip: bake it in a cast iron skillet to avoid the mess if the filling leaks out of the pastry. When it comes to decorating the top of your pies and tarts, prepare your toppings in advance but wait to finish it off just before you serve it. RecipeAlmond crumble 25g soft butter 30g plain flour 25g finely chopped almonds nuts 30g castor sugar Rub the butter and flour together to coarse crumbs. Rub in the sugar and nuts.Raspberry Clafouti 300g raspberries, tossed in 25g castor sugar and 3 tablespoons brandy or whiskey 30g melted butter plus more for greasing 2 tablespoons Demerara sugar 3 eggs 40g castor sugar 250ml whole milk 75g plain flour 1 teaspoon vanilla extractBrush a baking dish with butter and scatter over the Demerara sugar. Set oven to 180oc. Whisk the eggs with the sugar until pale and creamy – will take about 8 minutes at full speed with an electric mixer. Sieve in sugar and add the milk. Whisk to a smooth batter and then whisk in the vanilla, flour and melted butter. Spoon the raspberries and any juices into the dish and pour the batter on top. Scatter over the crumble and bake for about 25 minutes. Serve straightaway from the oven.White chocolate cream 250ml double cream 50g white chocolate finely grated Whisk the cream and fold in the chocolate.
