Hazy IPA is all the rage, but what’s actually going on when brewers pile many pounds per gallon of dry hops into a tank still in active fermentation? It’s one thing with a homebrew-scale fermenter to take a flyer and do it, and it’s riskier to do it in a typical craft brewery’s 15-, 30-, or even 60-bbl fermenter. But what happens when you fill a 2000 hectoliter (1700 bbl) fermenter with hazy wort and an enormous pitch of London Ale 3, then dry hop with pellets that measure as much as a ton? New Belgium Brewing (https://www.newbelgium.com) reduces the guesswork and risk by taking a highly analytical approach, looking at how compounds in hops undergo transformation through the fermentation and dry hopping process. In this episode, Brewing Innovation Specialist Ross Koenigs dives deep into what the brewery has learned by extensive quantitative testing throughout the hopping and biotransformation process. Additionally, he discusses everything from their innovation process, to the challenging of scaling for production, the impacts of lesser-known hops compounds (such as polyfunctional thiols) on hops flavor and aroma, how biotransformation impacts specific hops like Citra, Mosaic, and Chinook, how California ale yeast makes for the perfect biotransforming yeast, and much, much more. The CEO (Cosmic Engagement Officer) of Dr. Bronner's Magic Soaps, on how hemp (and psychedelics) can make America great again.I’ve used Dr. Bronner’s Magic Soaps for years, but never understood just how progressive/impressive the company that turns out products with thousands of tiny words crowding its labels was. I remember the company as a sort of hippie outlier, but today it’s a paragon of a movement known as Constructive Capitalism. This is largely the brainchild of the company’s Cosmic Engagement Officer (CEO), David Bronner. So I was pleased when David, 37, agreed to do this podcast from his home in Vista, California. Here are some fun facts to set the stage: David, who has a BA in Biology from Harvard, has grown the company from $4M a year to over $122M in 2018. Under his (and his family’s) stewardship, Dr. Bronner’s has donated $60M to causes related to drug policy reform, animal rights, sustainable agriculture, fair trade practices, and over $5 million to ending cannabis prohibition. In September 2019 the company donated a matching grant of $150K to Oregon’s statewide ballot initiative to legalize psilocybin assisted therapy.Another target of Bronner’s activism has been advocating for the US hemp industry. In 2001, Dr. Bronner’s funded a lawsuit against the DEA to prevent a ban of hemp food sales in the US. In 2009, he was arrested for planting hemp seeds on the lawn of the DEA. In 2012, he was arrested again for harvesting hemp and milling the oil while locked in a metal cage in front of the White House. He clearly understands the need for underscoring donations with dramatic action.Dr. Bronner’s is a leader of the “constructive capitalism” movement. Over half of the company’s 226 employees are people of color and/or women; over 40% of managers are PoCs or women. The starting salaries average $18.71 and hour, 170% higher than California’s average wage and Bronner caps his salary at 5 times that of the lowest earner. Ten percent of the company’s revenue is donated to charitable causes (all of which are listed publicly) and their stated goal is to offset all of their carbon emissions by 2023. Rather than marketing, they invest in the causes they believe in. In other words, it’s perfectly possible for companies to do well and to do good. Today we spotlight New Belgium's The Hemperor HPA. A fan of almost all IPAs, this is the 1st HPA I have ever encountered. You may be wondering, like I was, "What the hell is an HPA?"
Chip and Cern survived yet another 4th of July and kept all their fingers. Joe threw a party, and there were some unique beers that Cern brought, swimming and of course fireworks. Chip and Cern dig up some old 4th memories and stories. In Chip and Cern’s misspent youth there is no shortage of excessive drinking and stupid firework decisions. Cern tells a story that one 4th of July the crew went back out to the bar after all the fireworks and Girls Gone Wild was playing on the TVs. This shocked Chip and Cern, who always have wanted to see Girls Gone Wild on TV, but this was a dream come true. Cern brought over The Hemperor and a unique blend by Lazy Dog Brewery. Both very tasty, but the Hemperor was overly dank in Chip’s opinion. There were some chicken fights and Chip and Cern talk about how sore they were after the hours of chicken fights at past parties. Chip and Cern were trying to judge if Joe was more subdued because his lady friend and parents were over. The fireworks have gotten weaker and weaker. Certain ones don’t last as long as they did even a year or two ago. Cern shares some stories about how he got some M80s when he was a kid, but thinking back on it now how dangerous is it.
