Trap Door took some nectarines that previous created a kick-ass sour, and used them to sour this NEIPA. Its a subtle sweetness with a tart bite, rounded out in this smooth hazy. Chris is drinking an absolutely delightful Forgotten Field Sour IPA from Oast House Brewers, but also getting real about how heart-breaking the current events in the US and Canada are.
Hazy IPA is all the rage, but what’s actually going on when brewers pile many pounds per gallon of dry hops into a tank still in active fermentation? It’s one thing with a homebrew-scale fermenter to take a flyer and do it, and it’s riskier to do it in a typical craft brewery’s 15-, 30-, or even 60-bbl fermenter. But what happens when you fill a 2000 hectoliter (1700 bbl) fermenter with hazy wort and an enormous pitch of London Ale 3, then dry hop with pellets that measure as much as a ton? New Belgium Brewing (https://www.newbelgium.com) reduces the guesswork and risk by taking a highly analytical approach, looking at how compounds in hops undergo transformation through the fermentation and dry hopping process. In this episode, Brewing Innovation Specialist Ross Koenigs dives deep into what the brewery has learned by extensive quantitative testing throughout the hopping and biotransformation process. Additionally, he discusses everything from their innovation process, to the challenging of scaling for production, the impacts of lesser-known hops compounds (such as polyfunctional thiols) on hops flavor and aroma, how biotransformation impacts specific hops like Citra, Mosaic, and Chinook, how California ale yeast makes for the perfect biotransforming yeast, and much, much more. We've had it before but really feel like they perfected the style and it tastes like the milk left at the end of a bowl of cereal. In our first segment of the week we all discuss our top 5 emojis. Glad we got to try it but it was not for us. Jake listed his 3 favorite beers and we discuss beer festivals in general and rehash some Birthday Party stuff, but overall Jake had a good time and had his complaints kept to a minimum. We get into some more nuances in beer styles and bash the Sour IPA trend. Season 3, Episode 20 – Sour IPA. It’s a thing apparently. But is it a good thing? We’re gonna find out this week on the show. Sour IPA. I don’t know about this. I mean, IPA isn’t supposed to be sour. Sure, there are massively over-hopped sour beers out there that are deliciously awesome, but what exactly is a sour IPA? Is it a standard IPA recipe fermented with brettanomyces, or bacteria? It’s not that simple, right? WHAT’S HAPPENING?! Not all of the beers on the show this week are sour IPAs. But, we’re gonna easy into this. A little bit of foreplay, if you will… Monkish Brewing Co. – Soul Foudre First up is a beer from a brewery that is always a safe bet in terms of quality and execution, Monkish Brewing Company’s Soul Foudre. While this beer has no place in a sour IPA show, it’s our way of telling our palates, “hey…this is what a good beer tastes like.” Not that we think the sour IPA will be bad, but it’s called SOUR IPA. Anyway, Soul Foudre is great. Monkish will have some fruit variants of Soul Foudre up for sale this week, so check that out. Monkish is 4B approved! *ding* Epic Brewing Co. and Odd 13 Brewing Alright, now to the nitty gritty. The first sour IPA on deck is Epic Brewing Co.’s Tart N’ Juicy Sour IPA (marketing, anyone?). This is an unusual beer, to say the least. Without giving too much away, it’s tart…and juicy. Yep. It is definitely those things. Next up is Odd 13 Brewing’s Vincent Van Couch. They call this a “session sour” and it’s made with Citra and Mosaic hops. So while technically not an IPA, it kinda is? This is so confusing… The Rare Barrel and Prairie Artisan Ales We wrap up the show with two more beers that take us back to the funky side, Prairie Artisan Ales’ Funky Gold Simcoe, and first-timer to the 4B podcast, The Rare Barrel’s Forces Unseen.
