With his new brewery, Ism (https://www.ism.beer), Ian McCall is back in the brewery and taproom that once housed Beachwood in Long Beach, California—a brewery where he was once lead brewer—although he's in a different position now as founder and owner. Despite the very young age of this new brewery, McCall and team have already made a big splash, landing three World Beer Cup medals earlier this year, two of them gold, and one in the prized West Coast IPA category for their IPA Western Standard Time. The conversation, of course, turns to West Coast IPA, and stays there, as McCall walks through his award-winning IPA. Along the way, McCall covers: optimizing the beer lineup to eliminate lower performers driving leaner malt in West Coast IPA using group hop selection to his advantage brewing with wheat to boost body without affecting dryness moderating chloride levels in West Coast IPA shaping bitterness to hit strongly and quickly then disappear using active fermentation dry hopping to push fruitier hop notes building complexity with hot side hop additions constantly evolving even award-winning recipes And more. The Humble Sea (https://humblesea.com) origin story told by cofounder and brewmaster Nick Pavlina is a common one: Avid homebrewer turns pro at the urging of family and friends. Yet that early experience with brewing, brewing, and brewing some more—on a one-barrel system—instilled a discipline for testing, evaluating, and adapting that stays with Humble Sea to this day. A 2022 World Beer Cup silver medal for Munich-style helles gave them the validation they sought for the nascent lager program—but rather than anchor them in place, that success put more wind in their experimental sails. They continue to tinker with that beer, testing mash-step times and temperatures as well as fermentation parameters, in an ongoing quest to make it as perfect as possible. Meanwhile, they've hitched a ride on the swift current of hazy IPA—or, in their lingo, “foggy IPA”—but they've done so in ways inspired by their West Coast locale. The result has been significant growth, and the brewery now has five different ports they call home. In this episode, Pavlina and brewing operations director Nate Chesser discuss: developing a house lager style by assembling pieces of various traditions and the practices of brewer peers changing and adjusting their medal-winning helles despite its success embracing decoction for both its tangible and intangible benefits choosing and sourcing Noble hops for helles and pilsner fermenting lagers with a less common yeast strain building their initial “foggy” IPA out of a Pliny the Elder–inspired recipe leaning into their unique water profile spunding IPA for natural carbonation And more. First up is Jason zumBrunnen, cofounder of Denver's Ratio Beerworks (https://ratiobeerworks.com), recent gold medal winner for their King of Carrot Flowers carrot saison (and 2020 silver medal winner in American-Belgo style ale for their Dear You saison dry hopped with Citra, upon which King of Carrot Flowers is based). He dives into saison standards, like building body despite fermenting with diastaticus saison yeast, single infusion mashing in saison, before drilling down on the particulars of using carrot juice—processing, addition timing, maintaining color and haze, and even the secret ingredient that helps promote the idea of sweetness in the very dry beer. Next is Jeremy Claeys, head brewer for Charlotte's Protagonist Beer (https://protagonistbeer.com), recent gold medal winner for the Kal-El classic saison (and 2022 gold medal winner in American-Belgo style ale for the dry hopped saison Bizarro, as well as 2021 gold medal winner in Specialty Saison for Air is Beautiful). He talks through their philosophy of brewing classic styles with small twists that make traditional beers their own, building character through grain, simplified step mashing, the benefits of high temperature fermentation, blending saison yeasts, bottle conditioning, and lagering both bottled and kegged saison for a cleaner and smoother beer. For Brandon Capps of New Image Brewing (https://www.nibrewing.com) (Arvada, Colorado), the question of how to push more hop intensity in beer flavor and aroma, despite the inherently inefficient process of extracting those vital hop compounds in the weak alcohol solution of beer, pushed him down the rabbit hole of brewing with extracted terpenes. And the deeper he gets, the more excited he becomes about its prospect for reducing environmental impacts while also achieving intense and vibrant flavors. In this episode of the podcast, Capps discusses: Using terpenes to overcome limits to saturation in hop extraction through dry hopping The impact of hop variety on the extraction process Singular terpene extraction versus full spectrum extract Improving solubility of extracted terpenes The upsides and downsides of hyper-efficient supercritical CO2 extraction The value of short and cold dry hopping Reducing vegetal matter in the dry hop to limit reabsorption of hop compounds Maximizing Thiol expression Malt choices that benefit hop expression and more. While the science is evolving and initial results are mixed, Capps has found some clear preferences, and offers his thoughts for brewers intrigued by this scientific approach to brewing. *This episode is brought to you by: * G&D Chillers (https://gdchillers.com): Born in the Pacific Northwest from a lot of hard work and singular goal, G&D has become the best damn chiller company in the world. In the feedback we take a moment to not only reflect on the launch of the Brew Files, but to also remind folks about the difference between companies and people particularly when the snark is flying in podcast land. We donated $688 to the Children's Tumor Foundation in the name of the listeners. Thanks to Robert Allaway for the suggestion. Reminder our charity is now the San Gabriel Valley Humane Society. Let's try and raise enough funds via Patreon to hit a cool thousand by July! Episode 36 is an all Q&A episode - so get your questions in at questions@experimentalbrew.com (or call us at 626-765-1ALE) In the pub, we talk Sierra Nevada's Beer Recall from North Carolina and how Firestone Walker is switching to smaller bottles for their "special" beers Hey whatever happened to the nip? In the library, Denny covers a timely article from Scott Janish looking at the impact of dry hopping on final beer bitterness In the lab, we get our IGOR on and try to better understand the results that we saw in our IBU experiment. Why were some of the IGORs dead on and others way low? We talk to five IGORs about their brew day experiences and try and see is there a common culprit? Saw Hi to Kevin Kolk, Dave Matson, Ben Myton, Mike O'Toole and Jeremy Wickham. Lastly, we swing through a super quick suggestion of a not so super quick podcast. They just dropped a six hour episode!
