His journey began as a passionate home roaster in the 1990s, followed by roles as Beverage Specialist at Procter & Gamble (Millstone and Folgers), Operations Manager for a Kansas City roaster, and Co-Owner of Zoka Coffee Roaster & Tea Company in Seattle. At Zoka, he helped establish the company as a leader in both quality and barista training — with its baristas consistently ranking among the top in U.S. Barista Competitions. Today, Tracy channels this extensive expertise through Brewed Behavior to help clients worldwide achieve excellence. He is the last full-term President of the SCAA and Founding Chair of the WBC Rules & Regulations Committee. He has been a certified U.S. and World Barista Competition judge, an SCA Certified Cupper, a certified Q Grader and Instructor, and a three-time "Super Taster." Park interviews the award-winning chef, best-selling author, restaurateur, and featured television personality, Ben Vaughn, who shares his journey to becoming Founder and CEO of The Center of Culinary Cultivation and The Sow Project, and Culinary Director for Brewed to Serve Restaurant Group and Be Nice Hospitality Group. During the interview, Ben talks about his journey from a 30-year career as a chef to launching the nonprofit organization that is focused on transforming culinary workforce development through a no-cost, paid apprenticeship program that combines on-the-job training, industry mentorship, and job placements for individuals seeking a new path forward in Memphis. The program currently serves high school students and adults. It has grown from teaching basic cooking skills in a home kitchen to operating a fully developed 6-month curriculum approved by the Tennessee Department of Labor, serving approximately 90 students annually. Ben discusses the growth of their program, success stories, their collaborations for kitchens and training space, and how they now provide healthcare access through a concierge program and partnership with Lifedoc's VidaPlus. He outlines plans to expand into a 10,000 square foot space at 409 South Main, where they will establish a student-led restaurant and teaching center, and discusses their partnership with IOTA Community Schools, which will be expanding to serve 50 students in the 2026-2027 school year. This week, we look at some local companies that have successfully leveraged a love for Louisiana to expand their operations across the state and beyond. We begin with the cannabis-infused seltzer brand, Louie Louie. Brewed on the banks of the Mississippi in New Orleans, the company celebrates our state's flavors in every can. And people are drinking it up – everywhere from local restaurants like Mosca's and the Napoleon House to locations across the nation. Two of the company's founders, Ken Jackson and Eric Becker, join us. Then, we sit down with Braithe Tidwell. The corporate beverage director for the Ralph Brennan Restaurant Group tells us how Louie Louie Pimm's Cup cocktails made their way onto the Napoleon House menu. Next, we learn about the fast-casual seafood restaurant company, Off the Hook.
