Lagers are amazing, but a lot of people refrain from brewing them because of all the "required" steps involved. However, over the last few years, some of us have approached lager brewing from a different perspective, adapting methods to make the process easier. Back in the early days of homebrewing, it was customary for brewers to transfer their beer out of the primary fermentation vessel into a secondary vessel for a period of conditioning before packaging, though nowadays it's common to ferment in primary only. For some, this means extending the time the beer spends on the trub, which has been purported to lead to certain issues. In this episode, contributor Jake Huolihan sits down with Marshall to talk about the impact leaving beer in the primary fermenter can have on beer as well as the results of fascinating xBmt on the topic. Brewing isn't the cheapest hobby, and one way brewers can save some money is by harvesting yeast that was previously used to ferment one beer and pitching it into a new batch of wort. When doing this, it's often recommended not to harvest from a high OG beer. In this episode, contributor Andy Carter joins Marshall to discuss reusing yeast, the purported concerns with harvesting from a high OG beer, and the result of an xBmt on the topic. The easiest and presumably most common method for adding spices to beer involves tossing them directly in at some point in the process, usually during the boil and/or fermentation. However, this method is believed by some to be a bit haphazard, leaving little room for controlling the pungency of the spice character, which has led to the use of alternative approaches. In this episode, contributor Cade Jobe joins Marshall to talk about the use of tinctures in brewing and discuss the results of an xBmt on the subject. | Relevant Article | Spice Tincture xBmt The Brülosophy Podcast is brought to you by Imperial Yeast who provide brewers with the most viable and fresh yeast on the market. Cold crashing is a relatively simple method brewers use to clarify beer prior to packaging. Yeast being the living organism it is, it's often recommended the temperature of beer be gently reduced over the course of a few days when cold crashing. Brülosophy’s Marshall Schott talks exBEERimentation We all know the saying, "if it ain't broke, don't fix it." However, Marshall Schott of Brülosophy reminds us that just because something isn't broken doesn't mean it can't be improved. Schott and a team of other hardcore homebrewers at Brülosophy examine some of the long-held traditions of brewing to see if there's a better way to do things. Sometimes they do find a better way, and occasionally that upsets a few people. It can be tough to let go of traditions. Through their "exBEERiments" the Brülosophy team has tested the idea that a lager needs months of lagering to be great, the importance/necessity of long mash times and boils for your beers, fermentation temperatures, and a host of other brewing methods. They've helped a lot of homebrewers in making better beer, and even a few professional brewers. One of the best things about these exBEERiments is it gets people talking about the way we brew. Brülosophy shares Short & Shoddy recipes to give you a tasty beer and a quick brew day. (Photo: Brülosophy)[/caption] Learn more about hops and yeast from Brülosophy Brülosophy has a host of other resources on their site as well. The Hop Chronicles examine the performance of hop varieties in single hop beers and Short & Shoddy offers up quick recipes for various brews. They also share several methods for brewing including mashing, kegging, fermenting, and how to harvest your own yeast. It's a one-stop information shop over there. If you're more of a listener than a reader (and we definitely hope that's the case) you can check out the Brülosophy Podcast for more on their exBEERiments, Q&A sessions with the team and industry experts, and plenty of other brewing-related topics. New opening to the show this time through. Let's see how you like it (let us know!) In the pub, we stop by and take about brewery charities and one in particular for Denny's area. We talk about one previous guest's new "kid" rules and the response, before we tackle the big Wicked news of the week and the really insidious piece that virtually no one is talking about behind the scenes. We stop in the brewery to talk the latest malt report from our good friend Teri Fahrendorf and Denny reminices about the good old cow and hog reports of his youth. In the lab, we announce our latest experiment - the IGORs are taking a stab at the Brulosophy gang's Biotransformation ale - aka can you tell a difference between a beer dry hopped at high krausen and one dry hopped in secondary. Of course, we're adding an extra special twist to the whole thing because we're required to by law. Twist one, testing two different strains with some IGORs pulling out Wyeast 1318 and some pulling Wyeast 1056. Twist two - we're going to have some visually blind trials vs visual trials. Woo... Then in the Lounge, Denny talks to Jessica Davis of the Bruery about what it means to do QA work for a brewery with as many on going projects as they have. It's seriously interesting to learn what it means to work in the beer world and be tasked with keeping an eye on things Finally we tackle questions we can answer. Drop a quick tip on ya and explore just why Drew wants to subject one of his chihuahuas to dangerous acrobatics. The Session welcomes back Marshall Schott from the insanely popular Brulosophy blog! Normally, he sends us one beer to try on the show, but this time he fired out two, which is great for us because we get extra beer. One was part of his Hop Chronicles series, taking a single hop and trying to get some ultra-detailed information on flavor and aroma, and the other was the classic triangle tests we have done a few times before. We always learn something when Marshall is on, and this show was no exception. Learn more about your ad choices. Visit megaphone.fm/adchoices

Homebrewing beer. Malcolm Frazer of Brulosophy joins us to talk about a recent exbeeriment they conducted comparing beer flavor between decoction mashing and single infusion mashing of a German Pilsner recipe. Decoction is a age-old technique for achieving better extraction and hitting the mashing rest temperatures with less modified malts, but how much difference does it make in the beer flavor. Fans of decoction swear that it adds that little something extra you just can’t get from infusion mashing. Malcolm discusses the results of two groups of triangle test panelists who could not significantly and statistically tell the difference between the two beers. Learn more about your ad choices. Attention, attention... this episode is brought to you by an accidentally awesome quirk of fate. After we announced our experiment (Saison Yeast - Airlock vs. Open Ferment - Does it prevent "stall") way back when, our itinerant "Science" co-host Marshall Schott let us know that his site, Brulosophy.com was running the same experiment! We waited and coordinated our experimental results release. Marshall released his results earlier this week and now we get together and discuss our results plus his. There are a total of five experimental runs here and what do they say? Well, put yer earbuds in and listen! (And if you think this is the last time we're doing this.. ha, you don't know how all this works! Maybe we'll do it on purpose next time!) First time ever! Denny and Drew and a thousand of their favorite friends are in the same room - the Expo hall at the 2016 American Homebrewer's Association "HomebrewCon". We sat down in the BrewcraftUSA booth and talked with a bunch of different folks including some of our sponsors and some of our very favorite people - including IGOR Nicki Forster who brought us a beer to taste, Marshall Schott who abused us with a triangle test and another listener, Keith Baker, who dropped a beer on Denny to make him crazy! This episode is jammed packed with questions, answers, and really interesting people so give it a listen! Ray Found from Brulosophy.com shares two experiments: one on the effects of spent grains in the boil and another on sparging with room temperature water.
In Episode 8 - Denny and Drew remind listeners about the upcoming Q&A episode. (Send your questions to questions@experimentalbrew.com) They run off to the pub and discuss a potential canning crisis, actual grown up science, the upcoming Pacific Northwest Homebrewers Conference and Denny's run for the Governing Committee. Then they visit a new location for the podcast - the brewery (who woulda guessed) to discuss the availability of the Idaho 7 hop (currently branded 007 The Golden Hop) and Weyermann's Barke Malt. And then to the lab where the guys are joined by Marshall "Brulosophy" Schott, to discuss the results of the Hop Whirlpool Temperature Test. Does it make a difference if you whirlpool your hops at 120F instead of 170F. (In theory, fewer hop oils get volatilized at the lower temp). What was the result? Listen! Once again, hoppy times are brought to you by NikoBrew.com! Back to the Bay Area - no not the San Francisco Bay Area - the Tampa Bay Area where Drew conducts an interview with Brian Fenstermacher at his homebrew store turned nanobrewery - Southern Brewing & Winemaking. Brian has a long history in the craft brewing industry and eventually ended up opening a great homebrew store. Unable to leave the beer world completely behind, he turned the homebrew store into a nano brew with an impressive 24 taps being brewed on a nano-scale. Listen to the interview to discover the incredibly intricate system he's created for his brewers to keep that variety running! Denny and Drew take your questions and lie about all of their answers. Denny drops another quick tip from our AHA Forum friends about creating a quick chilled carbonated sample of your beer to let you speedily evaluate your beer. Marshall then drops in with his love of music on our "Something Non-Beery" segment. Malcolm Frazer of Brulosophy.com shares his experiment comparing the results of adding sugar to the fermenter all at once vs staggered over time.
In Episode 6 - Denny and Drew look to even more listener feedback. In the pub we promulgate a public service announcement near and dear to Denny's heart, investigate rumors of nefarious hop dealings and reminisce about Denny's time in the big snowy territory of Vail. And then we go to the lab where we discuss the first ever results delivered by our IGOR crew. Is there a discernable difference between Wyeast 1056 and WLP001? Marshall "Brulosopher" Schott of Brulosophy.com joins us to provide his view on the data provided by our IGORs and the vast swath of tasters. Back to the Bay Area we're onto Faction Brewing in Alameda and the ever voluble Rodger Davis. This is part one of two parts thanks to all the stories Rodger has at his disposal! Finally we take your questions, Drew talks about pressure and Denny remembers David Bowie and Alan Rickman. So, what do you guys think of our results? Do you agree? Disagree? Try brewing the test yourself and see what you find! Episode Links: Dangers About Grapefruit - http://www.experimentalbrew.com/blogs/dennyanddrew/dangers-brewing-grape...
