Eric Kozlik of Modern Bar Cart shared with me an email exchange he'd had with a PR agency, where their selling point for a new Bourbon was that it was made using a "proprietary heirloom corn.” That made me think about Tequilas that are labeled “gluten-free.” Which made Eric think of “non-GMO.” Which made me think about the difference between “still strength” and “cask-strength,” and between casks and barrels. The main reason why I started this podcast was to have conversations that could expand how we understand agave spirits. You may have noticed this by now, most of the episodes are not directly about mezcal, but about the places, the people and the cultures that make mezcal possible and fascinating. In this eye-opening conversation with Bar Director Deke Dunne of Allegory here in Washington, DC, some of the topics we discuss include: How Deke transitioned from a life in politics to a life behind bars, starting by working security at perhaps DC's most successful pop-up EVER and then making the switch to bartending. What a surrealist Victorian novel by Lewis Carrol has to do with Ruby Bridges, a civil rights pioneer who was the first black child to desegregate a white school here in the US, and why the artwork at Allegory mixes those stories together and puts them on display. Of course, we talk cocktails and drink development, explaining how Deke and his team use flavors to tell stories. And this might sound cut-and-dry, but when we explain how rum, bourbon, oxidized sherry, banana liqueur, and a purple tuber all came to reside in a Kefir-finished milk punch, your mind will be blown. We also necessarily dig into the tricky balance that a bartender needs to walk when engaging with guests about historically charged and culturally sensitive subject matter. It's possible to do it really well, but there's also a lot of work that occurs behind the scenes to strike the right balance. To me, that feels like a very short time, but then I pull up the Modern Bar Cart inbox, and I see all the listener-generated questions that have piled up during those three months. So, this episode is all about you folks--the listeners who make this podcast exciting by sending along your questions and comments. We’re gonna take a virtual field trip through the Modern Bar Cart mailbag today, and we’ll see if I can’t shed some light on some of the most pressing cocktail dilemmas our fans are facing.
What’s up cocktail fans. I’m coming at you today with a great summer cocktail. And maybe I shouldn’t be saying A cocktail...but rather THE cocktail. Even if you’re just getting into cocktails, if you haven’t heard of this drink, I’m a bit worried about where you’ve been for the past century. That’s right, this episode is all about the legendary Martini. And I want to give you a chance to make yourself one before we jump into this interview with Embitterment Bitters and Modern Bar Cart co-founder Ethan Hall (@ethanjhall). So, if you want to do that, you’re gonna want to put two ounces of gin in a stirring pint with ice, as well as a half-an-ounce to an ounce of dry vermouth (based on your flavor preference), and some orange or citrus bitters. Stir that all up (or shake it if you’re in a James Bond mood), and then strain it into a chilled cocktail glass. Last but not least, you’ll want to express a lemon peel garnish over the top, and either leave that bad boy in the glass or discard it--again, your preference. Ethan and I grew up in the cocktail space practicing our drinks on one another. I think he makes a solid, SOLID Martini, and I know you’ll enjoy our banter and his insights. Not only do we cover the recipe nuances and variations on the martini, but we also delve into some of the historical and cultural forces that have cemented this cocktail as one of the crown jewels of the mixed drinks world. Hello, and WELCOME to the Modern Bar Cart podcast, a weekly radio show where we demystify the tools and techniques that make great drinks. I’m your host, Eric Kozlik, and today I’ve got for you one of the FOUNDATIONS episodes in which we review the essential tools that every good bar cart or home bar should have. I think you’ll be hard-pressed to find an episode of this podcast that DOESN’T contain at least some small tidbit of advice about how to optimize your home bar, but this episode is gonna be a central repository of the most crucial bits of advice so you can access it all in once place and review it anytime you like. When it comes to building your home bar or bar cart, I like to use a computer analogy, in which the consumable cocktail ingredients are like computer software, and the various tools that you reuse again and again to make your cocktails are like computer hardware. The idea being that you purchase a piece of hardware once—the physical computer—and that hardware can then be used to run an almost infinite array of software.
