Send a textWe chart Alan Bishop's leap from an established distillery to Old Homestead, how he rebuilt his stills, and why he's doubling down on experiential spirits. We taste and unpack Wickliffe Bell at 139.2 proof—peat-smoked oats, smoked apples, clean cuts, and a rest that polishes without erasing character.• Reinvention after French Lick and owning the build at Old Homestead• Pot still aging limits and why barrel babysitting matters• Labels that free creativity: whiskey from a bourbon mash• Making uncommon whiskey for common people as a guiding idea• The Old Homestead campus and “Alcohol Acres” destination• Wild Newton Stewart yeast capture and sense of place• Wycliffe Bell process, thumpers, peat, apples, and cask strength• Water, highballs, and choose-your-proof tasting• Upcoming Rise & Shine trio and barrel-rested sunshines• New absinthe and gin releases, plus where to find Alan's workThe best spirits don't just taste like a place—they tell you its story. We sit down with Alan Bishop for his record-setting return to talk about leaving a legacy brand, hand-building a new distillery at Old Homestead, and charting a bolder future where labels serve flavor, not the other way around. If you've ever wondered how a distiller reinvents without losing soul, this is a masterclass in making uncommon whiskey for common people.Alan opens up about the real arc of starting over: the existential first year, the stubborn stills, and the moment the “house character” finally reveals itself. He explains why pot still whiskey has a sweet spot, how to babysit barrels so wood doesn't swallow grain, and why he's transparent about using “whiskey distilled from a bourbon mash” to unlock honest flexibility—used oak, varied entry proofs, and subtle pre-distillation botanicals—while telling drinkers exactly what's in the glass. Then we dive into Wickliffe Bell, a cask-strength Black Forest Spirit at 139.2 proof that drinks shockingly gentle. Oats malted by Sugar Creek are peat-smoked with Irish turf, apples are smoked and loaded into a thumper, and the cut is clean like a white distillate before a short rest in new oak. The result is apple-oat warmth, soft phenolics that read like hickory-kissed smoke, and a choose-your-own-proof journey that blooms with a splash of water or lifts in a smoky highball. It's not bourbon. It's not scotch. It's a place in a bottle. We also map the broader canvas: Bartels & Bishop hitting distribution, limited Old Homestead bourbon kept intentionally scarce, the Rise & Shine trio (citrus, jasmine-chamomile, hickory bark) riding the thumpers, and a new absinthe that merges Old World method with New World botanicals. Along the way, Alan talks underdog grit, storytelling as craft, and building “Alcohol Acres”—a lakeside destination that pairs serious spirits with a weekend worth remembering. If you care about flavor, place, and where American whiskey goes next, press play. Then tell us how you took your pour—neat, water, or highball—and leave a review so more curious drinkers can find the show.Find us at www.scotchybourbonboys.com — glens, t-shirts, bourbon balls, and moreFollow on Facebook, Instagram, YouTube, X, TikTok, and PatreonApple listeners: leave a five-star rating and a thoughtful review“Drink and drive, drink responsibly, and live your life uncut and unfiltered”voice over Whiskey Thief Add for SOFLSupport the showhttps://www.scotchybourbonboys.com The Scotchy bourbon Boys are #3 in Feedspots Top 60 whiskey podcasts in the world https://podcast.feedspot.com/whiskey_podcasts/

There are a few places that I just keep going back to. Today we are chatting with Alastair over at Boulder Spirits. We chatted about everything from the early years to why malt has such complexity. Such a good conversation, hope you enjoy.Boulderspirits.comPatreon.com/offtopicwhiskeyBadmotivatorbarrels.com/shop/?aff=3https://www.instagram.com/zsmithwhiskeyandmixology?utm_source=ig_web_button_share_sheet&igsh=ZDNlZDc0MzIxNw==THE MISSIONBarley, yeast, water, oak, and the pursuit of happiness. These make up the foundation of what we here at Boulder Spirits stand on. We're a small Colorado whiskey company with big dreams, bigger goals, and the biggest pot still in the state. We're here to make our best versions of American Single Malt Whiskeys, Bourbons, and Gins that our team can. We hope you can find us in your future, whether by visiting the distillery for a tour and tasting, or seeing our products at your favorite spirits retailers and finer whiskey serving establishments.THE MOVEMENTUnbeknownst to Alastair during his pursuit of whiskey, an entire movement was abrew. Since the day we filled our first freshly charred, virgin American Oak barrel with malt whiskey to the day that we filled our first bottle, the American Single Malt Whiskey category was born. Around the country, as well as the world, the taste for American Whiskey has grown. The thirst for Bourbon stays strong, but this country is great at many things, and innovation is absolutely one of our greatest. This innovative mindset shared by distillers in every corner of this country has created an entirely new set of flavors to explore; these flavors all begin with one common source: 100% malted barley. Currently, there are over 130 distilleries that have ventured into the American Single Malt Whiskey realm, each with as different of an approach to creating whiskey from each other as the next. Single malt whisky is made in many, many countries around the world, but only the United States utilizes the virgin American Oak as a standard. We believe that is the truest defining characteristic of American whiskey. We take traditions from Al's homeland, along with American ingenuity to find a balance that creates award winning whiskeys: distillers malted barley, a Scottish pot still, #3 char American White Oak barrels, aged in an arid, high elevation climate, and cut with the celebrated Eldorado Springs water. This is our American Single Malt.American Single Malt WhiskeyA forthright representation of a traditional pot distilled malt whiskeycombined with American aging techniques. Jim and Todd welcome back a familiar face to the Bourbon Road: Drew Hannush, the host of the Whiskey Lore podcast and author of the massive new travel compendium, Experiencing American Whiskey . With the 2026 edition of his book hot off the press, Drew joins the hosts to discuss the monumental task of documenting over 1,000 distilleries across all 50 states . From the historic roots of Kentucky to the surprising whiskey scenes in states like New York and North Dakota, Drew shares stories from the road and tips for planning the ultimate whiskey adventure In the second half of the show, the trio dives into a "virtual road trip" tasting, sampling three distinct craft whiskeys from across the country. Todd kicks things off with a pour from Michigan: New Holland's "Walleye Run" Malted Rye Whiskey. This barrel pick, selected by friend of the show Dusty Dan, surprises the group with delightful notes of "grilled peaches" and a unique fruit-forward profile that defies typical rye expectations. Next, Drew introduces a true curiosity from Virginia: Malarkey Distilling's "Smokehouse" Whiskey. This experimental spirit is finished with wood staves that were smoked alongside pounds of bacon, resulting in a savory, meaty profile that Drew likens to a "bacon-smoky Tootsie Roll" . It's a polarizing but fascinating pour that proves there's always something new to discover in American whiskey. Finally, Jim heads west to Nevada for a sip of Frey Ranch Estate Grown Straight Rye Whiskey. Known for their "ground-to-glass" operation, Frey Ranch delivers a robust 100% rye mash bill that showcases the terroir of the high desert with classic spice and a rich mouthfeel. Throughout the episode, Drew offers insights into the shifting landscape of craft whiskey, highlighting how states like New York and Ohio are becoming major players . He also shares a fun travel tip for those visiting their 50th state: the "Save the Best for Last" club in Fargo, North Dakota . Tune in for a globetrotting conversation that will inspire your next distillery road trip! We dig into the 2026 American whiskey outlook with straight talk on supply, demand, and what really determines whether a bottle sits on the shelf or vanishes on drop day. After years of aggressive expansion, major distilleries are moving from growth-at-all-costs to smart inventory management, strategic pauses, and tech-driven consistency. That shift, paired with a more selective “drink less, drink better” audience, is reshaping pricing, releases, and how brands earn trust beyond the hype.We break down the big forces at work: millions of barrels finally maturing into wider availability, the return of core labels to shelves, and why allocations feel different when production catches up. Expect more thoughtful age-stated expressions, creative finishes that add depth rather than noise, and fewer shortcuts as producers compete on substance. We also unpack tariffs and exports, the tug-of-war between on-premise and retail, and the real metrics distillers use—velocity, demographics, and inflation—to plan what you'll be able to buy two, five, and ten years from now.For drinkers, the news is encouraging. Less artificial scarcity, more stable pricing on everyday winners, and a richer lineup of older and better-crafted releases mean you can skip the frenzy and focus on flavor. Whether you chase unicorns or value sleepers, the next chapter favors curiosity, patience, and honest drinking. If you're ready for a clear-eyed look at where bourbon goes next—and how to make the most of it—pour a glass and join us. 466. Blending Masters: Inside Barrel Craft Spirits with Joe and Tripp

The Bourbon Road

Jim and Todd welcome Joe Beatrice, Founder, and Tripp Stimson, Chief Whiskey Scientist, from the highly acclaimed Barrel Craft Spirits to the studio. While their award-winning whiskeys have graced the show before, this episode offers listeners a chance to hear directly from the minds behind the brand. Joe and Tripp share the origin story of Barrel Craft Spirits, their unique philosophy as non-distilling producers (NDPs), and their intricate approach to sourcing, blending, and finishing exceptional spirits. The tasting kicks off with a Barrel Foundation Single Barrel release, clocking in at 105.8 proof. Tripp explains this expression builds upon their original Foundation bourbon (their first product bottled below cask strength at 100 proof). It involves selecting unique barrels, creating a micro-blend just above proofing strength, re-barreling that blend into a single cask, and allowing it further maturation in a specific rickhouse location before final bottling. This particular barrel, sourced from Indiana, offers delightful notes of stone fruit like peach and apricot. Next up is the Barrel Foundation Double Barrel. This takes select whiskeys used in the original Foundation blend (aged 5-9 years) and finishes them in new, heavily toasted American oak barrels. The result is a darker, richer expression compared to the single barrel, showcasing notes of milk chocolate, apple, and nuanced pepper, demonstrating the transformative power of a secondary maturation in toasted oak. Joe Beatrice then takes listeners back nearly 14 years to the brand's inception. He recounts a random distillery visit sparking the idea, quickly realizing he wanted to build a brand, not necessarily a distillery, focusing intensely on sourcing and blending the best possible liquid. He discusses the early days, embracing cask strength when few others did, championing transparency as an NDP during a time of consumer skepticism, and gambling on the idea that drinkers would crave variety and new experiences over consistency – a gamble that clearly paid off. Tripp Stimson shares his extensive background in biochemistry and spirits R&D, explaining how his path converged with Joe's. They bonded over a shared philosophy, recognizing the immense challenge and capital required to build a distillery versus the creative freedom and market potential of focusing on sourcing and blending expertise, drawing parallels to the esteemed merchant bottler tradition in Scotland. The conversation delves deep into the art and science of their blending process. The core team, consisting of Joe, Tripp, and Nick Christensen, starts with whiteboard concepts and intent but allows the whiskeys themselves to guide the final creation. They meticulously sample and catalog thousands of barrels, developing a unique shorthand to understand the characteristics imparted by different distilleries, mash bills, ages, yeast strains, distillation styles, cooperage, and even micro-climates from various maturation locations across the country. They speak of layering flavors like building a symphony, using different barrels (young and old) to "fill the gaps" across the palate – from the initial taste to the mid-palate complexity and the lingering finish – iterating until the blend reaches its optimal saturation point of complexity without any single component overpowering the others. They also explain their "derived mash bill" calculation, providing consumers with valuable data points even for complex blends. The third tasting features Barrel Bourbon Batch 37, a blend of 8-to-15-year-old bourbons from Kentucky, Indiana, and Tennessee, bottled at 111.38 proof. Joe describes these numbered batches as their flagship line, representing a high bar for their blending prowess. Tripp elaborates on the value of incorporating significantly aged whiskeys (like 15-year-old) not necessarily for the age statement itself, but for the specific, nuanced qualities they bring, balancing them with younger components to achieve a complete, well-rounded, and complex flavor profile that avoids being overly oaked. Finally, they pour the Barrel Cask Finish Series: Armagnac Finish. This series highlights the interaction between their whiskey blends and specific cask types. This expression uses bourbons aged 7-to-15 years, finished in Armagnac casks for up to two years. Tripp emphasizes their patient approach to finishing, sometimes waiting years for the whiskey and cask to fully integrate and reach their peak potential, rather than adhering to rigid timelines. The result is a rich, complex whiskey redolent with dark fruit notes like fig and raisin, perfect for contemplative sipping. Throughout the episode, Joe and Tripp offer fascinating insights into the evolution of the whiskey market, the rise of the educated consumer, navigating market fluctuations, and Barrel Craft Spirits' strategy of continuous innovation and quality across various price points. Be sure to check out our private Facebook group, “The Bourbon Roadies” for a great group of bourbon loving people. You will be welcomed with open arms!
