Paul mentioned Celestial Seasonings' backstory and promised he'd share listener Cory P.'s vegetarian green chile recipe: CORY P'S VEGETARIAN GREEN CHILE 12 roasted Anaheim or Pueblo chiles, peeled & chopped. 1 Tbsp olive oil 1/2 onion, diced 4 cloves garlic, minced 4 Roma tomatoes, diced 6 cups vegetable stock (I use Better than Bouillon, mixed in hot water) 1 tsp cumin 2-8 Tbsp Cornstarch to thicken Directions: Saute onion & garlic in olive oil until soft in a 5+ quart pot. Add stock, green chiles and bring to a boil. Add tomatoes. Simmer for 1 hour. Add cornstarch mixed with water (2 tbsp or more as needed) to thicken. Serve on everything! A note on chile heat: medium chiles are usually plenty of heat for this dish. If you'd like it a little milder, a mix of mild and medium (or even just mild chiles) is fine. As a 13 year old dyslexic student struggling through school, and of course not knowing he was dyslexic, Bobby Stuckey started bussing tables at a Greek restaurant in Phoenix. His journey continued, with Bobby working his way up from dishwasher to management and taking a path through The Little Nell restaurant in Aspen in 1995, as sommelier then in 2000, onto Thomas Keller's French Laundry in Napa where Bobby's team won the James Beard Foundation's Award for Outstanding Wine Service and where Bobby met his present day business partner, Chef Lachlan Mackinnon-Patterson. In 2004, Bobby earned his Master Sommelier Diploma. He and his partners opened Frasca in Boulder, CO where Stuckey and his team again won the Beard award for Outstanding Service, later changed to Outstanding Hospitality, at Bobby's suggestion. As a teenager, Lachlan Mackinnon-Patterson starting working in restaurants St. Louis, Missouri. After graduating from Colorado State University, Mackinnon-Patterson set out to fulfill a dream and moved to Paris in 1999. He obtained his Certificate d'Aptitude Professionnelle at the renowned Ecole Gregoire-Ferrandi. Upon returning to the states in 2001, he worked at Thomas Keller's The French Laundry, where he met future business partner, Bobby Stuckey. Mackinnon-Patterson and Stuckey opened their first restaurant, Frasca Food and Wine, in 2004 in Boulder, CO. In 2007, the partners launched Scarpetta Wines.
