This week's show brought to you by: MAS Iron Outside of training deficiencies, low iron is one of the most common reasons for poor results during workouts and races. Recent research indicates that almost 56% of male runners and 86% of female runners suffer from an iron deficiency that severely hampers performance. The problem with eating iron-rich foods or supplementing with traditional iron supplements is that iron is notoriously difficult for the body to absorb and utilize. In fact, only about 25% of dietary iron found in animal sources is absorbed while 17% or less of the iron from plant sources is absorbed. But MAS Iron has found a way to combat these absorption issues to ensure you can get the iron you need for health and performance. By combining the most efficiently absorbed form of elemental iron with clinically proven ingredients to aid in absorption, MAS Iron performs like no other iron product on the market. In fact, clinical research has shown the combination of ingredients in MAS Iron can quadruple absorption and increase bioavailability by 30%, all while reducing GI issues by 50%. Check out the research and the results for yourself at masedge.com/iron. Runnersconnect fans will automatically save 20% on any purchase. Have you seen the prices of whey protein isolate lately? Explaining the multitude of factors causing record high commodity inflation would take longer than the allowable video length, but maybe I have a better solution for our current broken food system. Plantible uses proprietary technology to grow duckweed on aqua farms in West Texas that's efficiently extracted into a complete protein called “Rubi Protein.” According to the food technology startup, Rubi Protein has diverse functional CPG applications because it has high solubility, moisture retention, fat binding capacity, and outperforms egg whites in both foam capacity and stability. If only I knew earlier that saving money on protein shakes was as easy as jumping into the small lake behind my home (and consuming all those small flowering aquatic plants). Moreover, it was just announced that through its corporate venture capital arm Cultivate Next, the fast-casual chain Chipotle Mexican Grill has made a minority investment in Plantible. So, are aquatic plants the next hot ingredient in the plant-based space? Chipotle seems to think so...

How can you tell if an emerging brand will be a long-term success? It's not an easy question to answer. A lot of private-equity firms, restaurant executives, real estate companies, consultants, vendors and others all spend hundreds of millions of dollars to try and answer that question. This week's episode of the Restaurant Business podcast A Deeper Dive does its best to answer that question and features David Henkes, senior principal with RB sister company Technomic. Thousands of entrepreneurs start new restaurants every year. Many of them yearn to grow those restaurants into major chains. The vast majority of them fail. This year has demonstrated just how hard it is to tell whether a brand will ultimately fulfill whatever promise it once had. Companies such as MOD Pizza, Uncle Julio's, Rubio's, Tijuana Flats and many others, all of which had major backing at one point, either filed for bankruptcy or came close to it after their once-promising futures did not come to fruition. And we recently told you the story of Baja Fresh, which 20 years ago was considered a pioneer of fast-casual Mexican only to quickly lose its place to the younger Chipotle Mexican Grill, which has gone on to become the biggest such concept in the world. The result is a fascinating discussion on emerging chains and what it takes to make them work, and why it's so difficult to tell winners from losers, at least early on. So check it out.

It probably won't come as a surprise to you that 7 in 10 millennials and Gen Z say they prefer to communicate digitally – mostly by text – than in person. Kernel, the new venture by Steve Ells, the founder and former CEO of Chipotle Mexican Grill, is trying to fix that by introducing food-making robots and a "digital-first" approach to restaurants. In this conversation from the WSJ Global Food Forum in June, reporter Heather Haddon talks with Ells about his new bet on consumers' desire to eat less meat, and on a business model that could solve some of the industry's thorny challenges. Last year, the American fast-food industry experienced significant transformations. Several chains expanded their market reach and others innovated to adapt to evolving consumer preferences. In this episode of the Xtalks Food Podcast, Sydney talks about the top 10 restaurant chains in America, ranked by their 2023 revenue. She not only highlights their financial achievements but also their influence on employment and their broad range of offerings. The top three highest-earning fast-food chains in 2023 include Starbucks, McDonald's and Chick-fil-A. Other chains that made the list include Chipotle Mexican Grill, Domino's Taco Bell and Wendy's, among others. The top 10 restaurant chains excel in generating revenue and play a crucial role in shaping dining experiences across America. The team is surprised to learn that Starbucks was the highest-earning restaurant chain on the list and wonders how much third-party delivery apps impacted each company's revenues. Also in this episode, Sydney talks about a new rule implemented by the US Department of Agriculture (USDA) that mandates lower Salmonella levels in frozen breaded and stuffed chicken products. Starting in 2025, poultry producers will be required to decrease Salmonella to very low levels in targeted chicken products. Despite explicit cooking instructions on labels, the persistence of Salmonella-related illnesses underscores the necessity for strict regulations. The Centers for Disease Control and Prevention (CDC) estimates that Salmonella is the leading cause of foodborne illnesses, with chicken being a significant contributor. Approximately one in every 25 chicken packages at grocery stores is contaminated with Salmonella. This targeted regulation paves the way for broader Salmonella control measures, now under consideration by federal authorities. The team applauds the USDA for considering Salmonella an adulterant and wonders whether this rule will reduce foodborne-illness outbreaks. While restaurant operators continue to struggle with both labor costs and employee retention, the foodservice industry may very well have deeper employee-side problems. According to a study of Glassdoor reviews just released from BBADegree.org (an organization that provides resources for prospective business professionals seeking higher education), workers in the restaurant and foodservice industry complain about burnout the most, as compared with other industries.Chipotle Mexican Grill scored a 97.72 out of 100 on the organization's burnout rating score, second only to Progressive Insurance as the workplace with the most complaints of burnout, with “stressful” being the most common word used to describe the workplace environment. According to the Glassdoor reviews that mentioned burnout, Starbucks was also in the top 10 companies out of the 550+ companies surveyed. As non-franchised organizations, the reviews of both Starbucks and Chipotle are overwhelmingly from corporate employees.

Chipotle Mexican Grill is one of the most popular fast food chains in the United States, but the company has been facing some challenges in recent months. The Restaurant Power Index (RPI) has shown a slide in Chipotle sentiment, and the company's stock price has also fallen. One of the challenges that Chipotle is facing is labor shortages. The company has had to close some stores due to a lack of staff, and it has also raised wages in an attempt to attract new employees.Another challenge that Chipotle is facing is rising menu prices. The company has raised prices several times recently, angered some customers. To address these challenges, Chipotle is turning to robotics. The company is testing a new robotic system called Hyphen, designed to automate the process of making burrito bowls and salads.Hyphen is a collaborative robot that can work safely alongside human workers. The robot moves bowls and salads down a conveyor belt, dispensing the correct ingredients into each bowl or salad.Chipotle believes that Hyphen will help to reduce labor costs and improve order accuracy. The company is currently testing Hyphen in a few restaurants, and it plans to roll out the system to more restaurants.Hyphen: A Potential Solution to Chipotle's Challenges? It is too early to say whether Hyphen will succeed for Chipotle. However, the system can potentially address some of the company's biggest challenges, such as labor shortages and order accuracy. If Hyphen is successful, it could help to improve Chipotle's customer satisfaction scores and boost its stock price. However, it is essential to note that robotics is not a magic bullet. Chipotle will still need to focus on other areas, such as food quality and customer service, to be successful.Menu Price Increases and Robotics at Other Restaurant ChainsChipotle is not the only restaurant chain that is raising prices. Many other chains have also increased prices in recent months due to rising costs. For example, McDonald's recently raised the price of its Big Mac for the first time in over 14 years.Other restaurant chains are also testing robotics. The Wendy's Company announced a new partnership with Pipedream, a hyper logistics company, to pilot its underground autonomous robot system to deliver digital food orders from the kitchen to designated parking spots in seconds, for faster and more convenient pick-up experiences for Wendy's digital customers. The use of robotics in the restaurant industry is still in its early stages. However, the potential benefits of robotics are clear. Robotics can help to reduce labor costs, improve order accuracy, and increase efficiency. It remains to be seen whether Chipotle's use of robotics will be successful in the long term. However, the company's decision to invest in robotics is a sign that it is serious about addressing its challenges and improving its performance.
