Step into the minds of sommeliers and wine professionals to discover what really happens when they sit down to identify wines in a blind tasting. In Episode 175, recorded live at Vino Venue, we bring together a panel of seasoned blind tasters who are veterans of Atlanta's annual “Somm Smackdown” blind tasting competition. This conversation unpacks the art, intuition, and discipline behind identifying an unknown wine with nothing but your senses. What started as a question from someone who attended the competition as a spectator in the past – “how do you even train your palate to do this?” - evolves into an energetic, deeply insightful conversation filled with real-world strategies, personal stories, and the occasional myth-busting moment. As bonus dialogue and to provide full context for this discussion, we kick things off with Sommelier Ryan Mullins, the first-ever Somm Smackdown Champion, who shares the history and evolution of this competition along with some of his own philosophies for why he continues the pursuit of refining these skills. Whether you're a curious beginner or a seasoned industry professional, this episode pulls back the curtain on one of wine's most fascinating and humbling challenges. The on-premise side of wine analytics has traditionally been a black hole, not covered by other data services. Somm.ai changed that when they launched in 2021, now covering ~100k on-premise accounts in the US alone. The richness of data allows Somm.ai to help their clients benchmark, prospect for new accounts, and so much more. What happens when you hand a sommelier a mystery glass and ask them to identify a world-class red wine — completely blind? In this episode of Got Somme, we put the palate to the ultimate test with a stunning Rioja Gran Reserva 2016 that left us speechless (and one of us with actual goosebumps). We got ours here: https://www.platinumfinewine.com.au/product/bodegas-lan-gran-reserva/ From deep ruby colour to lingering pencil-shaving tannins, this wine delivered layer after layer of complexity — black currant, black plum, truffle, leather, clove, nutmeg, star anise, and what our co-host could only describe as fresh pasta flour. The nose alone was worth the price of admission. Was it Bordeaux? Was it Rioja? #121Josh, Matt, and Mike are back for another trio episode, and things heat up right from the cold open as Mike unleashes a spicy critique of Danny Meyer's restaurant empire. Comparing Meyer's concepts to "safe, VH1-style" dining, Mike questions his public persona compared to boundary-pushing restaurateurs like Keith McNally and Stephen Starr. After the fiery start, the guys settle into discussing the intricacies of project management, prioritizing ideas using tools like ClickUp, the nuances of developing a burger blend over seven months, and Mike's past life as a bedroom musician. The temperature rises again when Matt dives into a heated debate about professional titles: What makes someone a Sommelier? If you step off the restaurant floor, are you a "former" Somm, or is it a lifelong title just like being a Chef? The trio wraps up the episode by exploring the anti-chef-driven restaurant movement, celebrating the brilliance of the original Momofuku Ssäm Bar, and Mike's full, unfiltered take on Meyer and the Eleven Madison Park buyout.Timestamps04:05 Parenting reflections and having a 10-year-old08:29 Using ClickUp and Replet for restaurant project management16:45 Wine blending, barrels, and case yields22:30 Why did it take 7 months to develop a burger blend?25:52 Mike's past life as a musician35:36 The Great Sommelier Debate: What defines an active Somm?42:26 Are TV personalities like David Chang still considered Chefs?56:23 The brilliance and innovation of the original Momofuku Ssäm Bar01:00:51 The anti-chef-driven restaurant movement01:07:18 Retirement, career transitions, and leaving the restaurant floorLinks and resources

For the first time in Got Somme history, Angus is using a spittoon. For the first time ever our Master Somm is tasting clean skin wine. In this episode, Angus and Master Sommelier Carlos Santos put six $5 clean skin wines under the microscope to answer a question we get asked all the time: Are clean skin wines actually drinkable, or are they only good for cooking? With six bottles on the table, including Sauvignon Blanc, two Chardonnays, Rosé and Shiraz, Carlos gives an honest, no-nonsense assessment of what’s worth drinking, what’s best kept for the kitchen, and what should probably go straight down the sink. What Is a Clean Skin Wine? Clean skin wines are bottles sold without a branded label. Often they are the result of: Oversupply from wineries Wines not making the cut for a producer’s main label Brand changes or ownership transitions Excess wine needing to be cleared quickly In some cases, these wines may even come from large, well-known producers who simply can’t move stock fast enough in the current market. Wines Tasted in This Episode: All wines were purchased for approximately $5 per bottle. Sauvignon Blanc (2024) Chardonnay (modern branded clean skin) Chardonnay (traditional black-and-white clean skin) Rosé Shiraz Each wine was assessed for aroma, palate, balance, drinkability and value for money. The Results: Which $5 Wines Passed the Test? ✅ Drinkable at $5 According to Carlos, these wines are genuinely drinkable at the price point: Sauvignon BlancFresh, fruity and recognisably Sauvignon Blanc in style. High acidity and noticeable sulfites, but surprisingly competitive in blind tasting against entry-level New Zealand styles. Chardonnay (traditional clean skin label)Simple, short and one-dimensional, but balanced and inoffensive. Better on the palate than the nose and acceptable for casual drinking or food pairing at the price. ShirazThe standout of the lineup. Peppery, dark fruit driven, recognisably Shiraz and the most enjoyable overall. Less aggressive sulfites due to tannin structure and the best value of the bunch. ❌ Best Left for Cooking Rosé Chardonnay (modern branded version) These wines showed strong sulfite aromas, artificial flavours and lacked balance. Fine for slow cooking, sauces or reducing into a dish, but not recommended for drinking. Does Wine Quality Matter When Cooking? Carlos explains that for most everyday cooking, especially slow cooks like: Bolognese Stews Braises There is little difference between using a $5 bottle and a $100 bottle. Once wine is reduced and cooked for hours, nuance disappears. Save the good stuff for the glass. Final Verdict on Clean Skin Wines Clean skins can be drinkable Oversupply in the wine industry means quality can trickle down the price ladder At $5, expectations matter Some are fine for drinking responsibly Most are perfectly suitable for cooking If you’re on a tight budget, a chilled glass from Carlos’s top three is acceptable. If you can stretch to $15–$20, you’ll still get more consistency and enjoyment. Carlos’s Top Picks (In Order) Shiraz Chardonnay (traditional clean skin) Sauvignon Blanc Want to See the Bottles? Head to @gotsomme on Instagram to see the exact labels tasted in this episode. Have questions about clean skin wines?Drop them in the comments. We reply to every single one.

Whether you're a seasoned collector, investor, or simply wine-curious, this discussion unpacks strategies to maximize both enjoyment and value. Episodes like this are packed with insights that demystify the fine wine market, reveal what really drives price appreciation, and share hard-earned advice on avoiding costly mistakes. Meet the Expert Panelists Nick Pegna is the Global Head of Wine & Spirits at Sotheby's, bringing over 30 years of international experience in building and leading fine wine businesses across Europe and Asia. Formerly a senior executive at Berry Bros. & Rudd, where he helped shape global markets and co-led Hong Kong's successful campaign to abolish wine duties, Pegna now oversees Sotheby's record-setting global auction and retail operations. https://www.sothebys.com Callum Woodcock is the Founder and CEO of WineFi, a London-based investment platform that combines institutional-grade analytics with expert curation to make fine wine investing more transparent and accessible. A former J.P. Morgan asset manager with degrees from the University of Bristol and the University of Cambridge, he's leading WineFi's mission to position fine wine as a data-driven, tax-efficient, and inflation-resilient asset class. https://www.winefi.co Amanda McCrossin is a sommelier, media personality, and creator of @sommvivant, where her wine-focused content reaches over 450,000 followers across Instagram, TikTok, and YouTube. Formerly the Wine Director at PRESS Restaurant in Napa Valley—the world's largest collection of Napa Valley wines—she's now a leading voice in wine education and storytelling, hosting the Wine Access Unfiltered podcast and appearing regularly at major global wine events. https://www.amandamccrossin.com https://www.sommvivant.me Robbie Stevens is the Head of Broking at Live-ex, the global exchange for fine wine, market data, and insight. On a daily basis he deals with the largest fine wine buyers and sellers globally, offering them data-driven intelligence and opportunities to trade. With over a decade at Liv-ex and experience across global wine markets, as well as regularly sharing his experience on the international stage, speaking at conferences such as Vinexpo and the National Association of Wine Retailers, he combines deep knowledge of the fine wine market with strong industry perspective. https://www.liv-ex.com Unfortunately, Dustin Wilson was not able to make this episode but appears on "The Art of Wine Pairing: Elevating Retirement Gastronomy with Fine Wines" from April 2025. Dustin Wilson is a Master Sommelier, entrepreneur, and co-founder of Verve Wine, a modern retail and hospitality brand with locations in New York, San Francisco, and Chicago. Known for his role in the SOMM film series, Wilson has also launched Après Cru, a firm supporting the growth of visionary restaurant concepts. https://ny.vervewine.com Key Highlights 1. Disciplined Bidding at Auctions Nick Pegna reveals why preparation and strategy, including setting a maximum bid and understanding total costs, safeguard buyers against emotional overspending: "The most careful and frequent buyers at auction have a strategy. They've planned what they're looking to bid on...across multiple auctions." 2. Secondary Market Liquidity Drives Investment Value Callum Woodcock emphasizes the importance of focusing on wines with proven resale liquidity, not just brand prestige or critics' scores. Data-driven models and decades of market transaction history are now key to "blue chip" wine selection. 3. Storytelling Fuels Scarcity and Demand Amanda McCrossin illustrates how narrative and personal connection make certain bottles iconic and drive up their market value, citing Napa's Screaming Eagle as a prime example. "Scarcity is really only informed by storytelling...what has made Napa Valley so successful is the storytelling element." 4. Transparency and Technology Are Raising the Bar Robbie Stevens shares Liv-ex's role in fostering trust: from vetting merchants, digitizing provenance, to benchmarking prices. The expansion of data access and seller management tools allows collectors to track market movements and optimize timing for liquidation. Call-to-Action Take a look at one item in your own collection, wine, art, or even another collectible, and think about it like an investor. What makes it valuable? How would you verify its authenticity, track its performance, and decide the right time to sell? Just doing that exercise will give you a new lens for appreciating your investments, and maybe even inspire your next move.
