Dina and Kenisha dish about eating disorders in the Black community, going back to school as an adult learner, and food justice. Kenisha Sutherland (she/her) is a senior at Delaware State University majoring in Nutritional and Food Sciences with a concentration in Coordinated Dietetics and a minor in Women and Gender Studies. Kenisha went to culinary school and has been a chef for ten years. While working in the hospitality industry, she would use her talents to help people by fundraising for organizations that aligned with her life's mission or helping to provide free meals and groceries. She saw a need in her community for education surrounding food as well as a need for someone to speak up about the lack of quality affordable fresh groceries. Welcome to season two of the Chefs Without Restaurants podcast. I'm your host, Chris Spear. On the show, I have conversations with culinary entrepreneurs, and people in the food and beverage industry who took a different route. They're caterers, research chefs, personal chefs, cookbook authors, food truckers, farmers, cottage bakers, and all sorts of culinary renegades. I, myself, fall into the personal chef category, as I started my personal chef business Perfect Little Bites 10 years ago. And while I started working in kitchens in the early 90s, I've never worked in a restaurant unless you count Burger King. I'm really excited to share Season Two with you. I've taken the past month off to record a bunch of new shows and get them ready for release. The show will be returning next week on Tuesday February 2nd, 2021 with culinary historian Michael Twitty. Michael's book The Cooking Gene won the James Beard award for Book of the Year in 2018. You'll also be hearing from Chef Shola of Studio Kitchen. He's currently working up in New York at the Stone Barns center with Chef Dan Barber, doing a month long residency. Combine maple syrup, coconut oil, and vanilla. Whisk to combine ingredients. Add zucchini and mix with a spoon until thoroughly combined. In a separate bowl, combine quinoa flour, cocoa powder, sea salt, baking soda, cinnamon and any optional ingredients. Mix well. Add wet ingredients to dry and mix gently just until no more flour can be seen. Batter will be thick. Spoon batter into prepared 9 X12 baking dish and smooth surface to even the top with the back of a spoon. Bake for 30 minutes and remove from oven. Allow brownies to cool before slicing. Avacado Chocolate Mousse Frosting - This recipe is adapted from Chocolate Mousse of the Gods in "The Balanced Plate" by Renee Loux Prepare the frosting a day or two in advance for better flavor. 2 C Avacodo - 2-3 avacados (frosting works better with extremely ripe avacado) 3/4 C Maple syrup 2 T Coconut oil 2 t Vanilla 1 T Balsamic Vinegar 3/4-1 C Cocoa Powder Raspberries and Mint leaves provide an optional garnish Scoop flesh from avacados and place into a food processor. Add remaining ingredients and process for a couple minutes, stopping to scrape down the sides. A little water may be added depending on desired consistency. Blend for a few more minutes. Christina (26) was diagnosed with terminal leukemia. Just two years after her mother died of cancer. Cancer of various forms was in her family: The majority of her grandmother's 16 siblings had also died of it and some of her grandfather's family. By the time her illness was identified, the cancer had already advanced to an acute stage. She was told she had only months to live and to prepare herself for the inevitable. Robert Pirello, her now husband, would change her life forever.
