Spontaneous fermentation may be the most unique brewing technique in the world and the beers they produce are just as interesting, with many flavors not seen outside these styles. But “spontaneous” doesn't really tell you anything about what goes into making lambic, gueuze and American made versions from insane boiling hours to months and years waiting to see if the beer is actually any good to sell. Today we talk to two producers: one a classic lambic house from the Senne River Valley and the brewery that defined American sour brewing.Werner Van Obberghen is one of the owners of Brouwerij 3 Fonteinen.In 2013, Armand Debelder and Michaël Blancquaert called upon Werner to help shaping the futureof 3 Fonteinen. With his experience in strategy and with masters in finance and business economics,he is now responsible with Michaël for managing 3 Fonteinen and its team of twenty. Michaël takescare of the creative & operational side (brewing, blending, bottling, labelling) while Werner managesthe business side (administration, sales, marketing, tasting room).Michaël and Werner continue the life-long craftmanship of Armand and – inspired by his values andwishes – took 3 Fonteinen a step further. The Craft Brewers Conference is an annual event that brings brewers from around the world into a selected city for a few days of education, equipment buying, and camaraderie.  Brewers have also been using the occasion to get together in advance to create and then release collaboration beers. One of the most ambitious – at least from what I've experienced in recent years – will be released on May 1 by Embrace the Funk, the wild and wooded side of Yazoo Brewing.  Brandon Jones, the brewer behind ETF called his friends – Vinnie Cilurzo of Russian River, Jason Perkins of Allagash, Jeffrey Stuffings of Jester King and Khristopher Johnson of Green Bench Brewing and they all agreed to lend their time, talent, and inspiration to the beer.  Then Jones got Jeff Mello of Bootleg Biology involved on the yeast side and Matt Albrecht of River Drive Cooperage to sort out the wood.  Everyone – minus Jason Perkins of Allagash – was able to jump into the zoom studios earlier this month to talk about the beer, how it all came together, and the spirt of collaboration among brewers and in the beer industry. For more Drink Beer, Think Beer check out All About Beer. Jeffrey Stuffings, co-founder of Jester King, discusses a bill in the Texas Senate that would fine businesses $10,000 for hosting “sexually oriented performances” – which includes drag events, if people under age 18 are present or on public property – and shares why the Austin, Texas-based brewery is encouraging its followers to oppose it.   Although the proposed law does not apply to establishments that are 21+, many breweries and restaurants that host drag shows are family-friendly and would like to stay that way. Stuffings explains how Jester King has built an inclusive space and why he sees the legislation as an example of “fear of the other.”   Dave Infante, editor of independent drinks newsletter Fingers, joins the conversation to share why brewery owners hosting similar events need to be prepared for potential backlash in this overheated political environment.

Defining farmhouse beers is a bit like trying to explain jazz or comfort food to someone who’s never experienced them. It usually requires a conversation because there is no single, simple definition we can all agree on. We tend to look to Belgium or France to bail us out of this pickle since Lambics, Saisons and Biers de Garde are the best known examples. In reality, farmhouse beers tend to be drinkable, complex, traditional and innovative, all at the same time. Historically, they’re humble beers brewed for laborers with the ingredients endemic to the region, but with a complexity of flavor befitting the finest restaurants. Just a short drive outside of Austin, you can bathe in the warm Texas sun on a farm that grows world-class farmhouse beers. Through conservation, sustainability, and stewardship of the land, Jester King is one of the few places that blend the old world with the new. My next guest gave up corporate America and set out to just make some good beer. He eventually employed the traditions and techniques found in those European countries.
