My guest needs little introduction. Averie Swanson is well-known in the craft beer industry for her work at Jester King Brewery—a brewery in Austin, Texas renowned for their farmhouse ales. She's also one of 19 Master Cicerones in the world, and the founder and beer maker behind Keeping Together. Averie is here to talk about one of the most romantic beer styles in craft beer—Saisons. Though IPAs have long reigned in the American craft beer scene, many of us share a deep love for this rustic farmhouse ale, its origins, and the beer's ability to express a vast range of nuanced flavors. In our conversation, you'll hear Averie share her Saison philosophy. She also touches on the history of Saisons and how that history connects to some of the style's characteristics. Averie talks about why she prefers stainless steel over oak, and we discuss the idea of keeping the “farm” in farmhouse ales. We also share our favorite food and beer pairing experiences, and finally, Averie gives us an update on what we can expect from Keeping Together in the next year.

While 47 U.S. congressional Republicans voted with the unanimous Democrats to codify same-sex marriage into federal law on Tuesday, the only one from Texas was Tony Gonzales of San Antonio - the rest, including the several who represent gerrymandered slices of Austin, voted against. Kaitlin Armstrong had her first court appearance yesterday, during which she entered a plea of not guilty. She's charged with first-degree murder. Gas prices have continued to drop, now down to a local average of $4.02 per gallon - that's 20 cents below this time last week. The cheapest gas in central Austin as of this morning is $3.82. A new study finds Austin squeaking into the top ten most educated cities in America - the only one in Texas to do so. Austin history: Huston-Tillotson University has been registered on the National Register of Historic places, and the 1929 Hancock-area home where both Tom Miller and Emma Long once lived is likely to officially become a historical landmark via the Austin Historic Landmark Commission. Dale Watson's iconic coin-covered Telecaster-style guitar was stolen from a Houston restaurant's parking lot last weekend. Weekend live music highlights: Friday shows include Ricky Skaggs and Kentucky Thunder at the Haute Spot and Blackillac at Jester King Brewery. Saturday and Sunday the Float Fest is on at Gonzales Texas with Deadmaus, Vampire Weekend and Chance the Rapper headlining Saturday, and Marshmello, Cage The Elephant, Lord Huron, Tove Lo and CHVRCHES playing Sunday. And the Ripplefest heavy metal and stoner rock festival runs through the weekend at the Far Out Lounge and Stage. And, while blazing temperatures continue through the early part of next week, some relief may be on the way - highs in the upper 90's, by the current forecast, will begin by next Thursday and extend into early August.

Following the holiday reporting gap, COVID hospitalization numbers spike well into Stage 5, climbing more steeply than any of the three prior pandemic waves, and both positive testing percentages and new case counts are spiking as well. Pfizer boosters are approved for ages 12-15, and Jester King Brewery has a treat for folks over 21 seeking shots this weekend. COVID home tests, still hard to find in Austin, may be more readily available in outlying and suburban areas. Texas State University delays the resuming of in-person classes. Texas and Austin are criticized in a new Netflix mockumentary from the producers of Black Mirror. Fraudulent QR codes have been popping up on downtown Austin parking meters - don't fall for it. And not one but two more cold fronts are inbound for the Austin area by Sunday.

Surprising and delightfully engrossing, Americanon explores the true history of thirteen of the nation's most popular books. Overlooked for centuries, our simple dictionaries, spellers, almanacs, and how-to manuals are the unexamined touchstones for American cultures and customs. These books sold tens of millions of copies and set out specific archetypes for the ideal American, from the self-made entrepreneur to the humble farmer. Benjamin Franklin's Autobiography, How to Win Friends and Influence People, Webster's Dictionary, Emily Post's Etiquette: Americanon looks at how these ubiquitous books have updated and reemphasized potent American ideals—about meritocracy, patriotism, or individualism—at crucial moments in history. Old favorites like the Old Farmer's Almanac and Betty Crocker's Picture Cook Book are seen in this new way—not just as popular books but as foundational texts that shaped our understanding of the American story.Taken together, these books help us understand how their authors, most of them part of a powerful minority, attempted to construct meaning for the majority. Their beliefs and quirks—as well as personal interests, prejudices, and often strange personalities—informed the values and habits of millions of Americans, woven into our cultural DNA over generations of reading and dog-earing. Yet their influence remains uninvestigated. Until now. What better way to understand a people than to look at the books they consumed most, the ones they returned to repeatedly, with questions about everything from spelling to social mobility to sex? This fresh and engaging book is American history as you've never encountered it before.HOST: Rob MellonFEATURED BREW: Come to Light West Coast IPA, Jester King Brewery, Austin, TexasBOOK: Americanon: An Unexpected U.S. History in Thirteen Bestselling Bookshttps://www.amazon.com/Americanon-Unexpected-History-Thirteen-Bestselling/dp/1524746630MUSIC: Bones Forkhttps://bonesfork.com/

"It's not always easy to tell when it's time to make a change. You may be waiting for a sign that never arrives, or feeling paralyzed by fear and anxiety of the unknown. So what happens when you finally step off the ledge and take the plunge into uncertainty—and the entire world changes as a result? Jester King Brewery outside Austin, Texas, is known for their rustic country beers, a focus on ingredients, and being one of the best mixed culture ale producers in the country. Under the watch of their head brewer, Averie Swanson, the brewery continued to be a sought after destination for beer geeks from around the world. Averie recently struck out on her own and founded Keeping Together, her Saison and farmhouse-inspired beer project in Chicago, Illinois. Operating out of Half Acre Beer Company, her business model for Keeping Together is an unconventional one, and on today's episode we discuss how and why she chose to leave Texas to bring her brewing knowledge to the Midwest, our mutual love for wild ales, and the challenges of starting a new endeavor in the shadow of COVID-19.

Feeling disappointed in himself for not participating in the local protests, Marcus Baskerville, Founder and Head Brewer at Weathered Souls Brewing Company in San Antonio, Texas, decided to use his brewery platform to start the Black is Beautiful Beer Initiative. Challenged by his friend and mentor, Jeff, Co-Founder of Jester King Brewery, to turn his recipe into a collaboration, over the next 24 hours, that's exactly what he did. “This platform and collaboration is about understanding and supporting people of color and inclusion. It is a collaborative effort to raise awareness for the injustices people of color face daily and raise funds for police brutality reform and legal defenses for those who have been wronged.” (Black is Beautiful) ( https://blackisbeautiful.beer/#consumer-section ) Today there are over 1,000 breweries, 50 states, and 19 countries participating in the Black is Beautiful Beer Initiative. We brought a few of these breweries together in one place to talk more about why they joined this initiative and what they are doing to keep this momentum moving forward. From our conversation, we also gained a little insight into the diversity, or lack there-of, in the brewing industry. While these topics need to be talked about – from tension and strife comes change – as humans, we also need a way to decompress and find joy. So we even got a chance to talk about cooking, playing Dungeons and Dragons, and how simply enjoying a good beer can be joyful. The brewing industry will continue to build community and provide the much needed space to continue to talk across the aisle, to listen to each other, and to learn from each other. Will you? ------------ Participants ------------ We were honored to be able to speak to representatives from the following breweries: Weathered Souls Brewing Company ( http://weatheredsouls.beer/ ) - San Antonio, TX Green Bench Brewing Company ( https://www.greenbenchbrewing.com/ ) - St. Petersburg, FL Jester King Brewery ( https://jesterkingbrewery.com/ ) - Austin, TX Goldspot Brewing Company ( https://goldspotbrewing.com/ ) - Denver, CO St. Elmo Brewing Company ( http://www.stelmobrewing.com/ ) - Austin, TX Fogtown Brewing Company ( https://www.fogtownbrewing.com/ ) - Ellsworth, ME Sedona Beer Company ( https://www.sedonabeerco.com/ ) - Sedona, AZ There are over 1,000 breweries participating in this initiative. Today's guest is Jeff Stuffings, founder of the famed Jester King Brewery in Dripping Springs. We sit down at the brewery and chat about the origins of the the company and how it all started, the early commitment to brewing farmhouse ales using spontaneous fermentation, how they landed on the 165 acre ranch in Dripping Springs, the discovery and implementation of the open-book management philosophy, what you can expect from a trip out to the brewery, and how Jeff took a passion for home brewing and a little business savvy and created Jester King Brewery, universally revered as one of the most innovative and respected breweries in the United States. Enjoy.

Episode 228 - Jeffrey Stuffings, Jester King Brewery, is back Hey Y'all. We're back in Boston for a second week. Still hungover but very excited to welcome Jeffrey Stuffings of Jester King in Texas. As the makers of some of the finer farmhouse ales and Belgian-inspired beers in the United States, we had a lot to talk about with Jeff. From why language is important in classifying the beers he makes (and the efforts being made to get brewers and drinkers to use the right words, to his plan for the farm just outside of Austin. Hint: it involves wine. Double hint: Augie gets excited. You guessed it: John Holl offers a deep sigh. For the black glass Jeff goes local and easy on us. His picks offer insight to his region and American beer in general. Tune in and let us know what you think!**Want to support us? We have launched a PATREON Page. INTRODUCTION: Ben, Steve and Jamie kick off the the third episode of the podcast with updates about Steve's transportation situation as well as Jamie's experience leading the Slow Roll. Riverwalk released two new beers over the past week: Slow Roll is a light lager brewed with Cashmere hops, perfect for the pool or post-ride! Renewable will scratch the Double IPA itch, with Southern Hemisphere hops! Steve and Ben discuss some of the food pairing options for Slow Roll, as well as the brewery's love for the Cashmere Hop. More information regarding Cashmere hops from our friends at Crosby Farms can be found here. Chuck is back from his Texas trip and filled the group in on the beer culture in Austin and beyond. He recommended checking out Jester King Brewery and Lazarus Brewing in Austin. NEWS: Ben experienced a milestone in his life, meeting one of the idols of 80's wrestling, Brutus "The Barber" Beefcake. Not only did Ben get to interact with the legend, but he came away from the encounter with a signed can of Brutus, our Brut IPA. Destined for a place of glory in the brewery. Ben with the legend! On a more serious note, the story of a questionable cocktail from the Yukon Territory leads to a discussion on the idea of extreme beer and whether the industry has reached a tipping point. The resurgent interest in lagers and lighter offerings brings up a few questions for the crew. For those of you who aren't squeamish, here is the source of this story: Nick Griffiths donated some digits. We also tackled a few listener questions, including the return of Stratabus and whether there would ever be a "Men of Riverwalk" calendar. RECOMMENDATIONS: The whole crew is eagerly following the new show from the creator of Patriot, with some of the same cast. Perptual Grace Ltd is now showing on Epix and will feature a cameo by Cool Rick! You can now find our podcast on all of your favorite platforms, so go ahead and subscribe! CREDITS: Steve and Ben were joined by Jamie and Chuck, with equipment assistance from Jon. Intro and Outro music by Steve and his G&L Legacy.

About 20 miles outside downtown Austin, Texas, it’s easy to forget you’re a short car ride away from one of the fastest-growing cities in the country. Sitting partially hidden in the middle of spacious farmland is one the crown jewels of modern U.S. beer: Jester King Brewery. Enthusiasts make the pilgrimage from all over, waiting in line to try some of the most beloved wild, sour, and spontaneous beers being made today, every one of them with a purpose of time and place. It’s the brainchild of Jeff Stuffings, co-founder of the family-owned business and an advocate for all the ways making beer can be an intimate process. Plenty of wooden barrels and stainless steel tanks comprise a modestly sized brewhouse at the farm brewery, but it’s the ideas of what beer could and should be that have made Jester King such a popular brand among drinkers. And as you’ll find out in this conversation, the process of what's taken Stuffings and his team to this moment in time—not to mention what he hopes to achieve in years to come—is very much based on a connection to the land and people around him.

For our third annual pilgrimage to Denver, we again recorded mere hours after the closing of GABF from our hotel room to recap the fest, share some interviews, and drink even more beer. We review beers from Weldwerks, Odd13, and Copper Kettle with some help from MC Johnsen of Worth A Thousand Beers. There are also interviews with a bevy of brewers: Neil Fisher from Weldwerks Brewing, Ryan Fields from Beachwood Blendery, Eric Larken from Odd13 Brewing, Jonathan Wakefield from J. Wakefield Brewing, Jeff Stuffings from Jester King Brewery, Bob Kunz from Highland Park Brewery, James Howat from Black Project Spontaneous and Wild Ales, and Jeremy Tofte from Melvin Brewing. We discuss our personal festival highlights, Illinois medal winners, non-festival events, the Hanson brothers, Party Chapazian, Schwimmer Vintage Ales, the Tappening, and Little Lemmy & Friends. But the beer professionals we interview share knowledge on branding, coolships, mixed fermentation, the interplay of art and beer, green bottle experiments, a parking spot barrel house, fermenting with weeds, upscaling problems, and some “high” stakes brewer bets. (It’ll all make sense in the end.) Craft Brewer, Entrepreneur and Jester King Brewery Founder Jeff Stuffings didn't start his professional career as a brewer. Jeff began his career as an Attorney in the public defender's office in Massachusetts. He moved to Texas and joined a law firm but in his words, "sold out". His time at the law firm was short lived and after two years he quit. He had been home brewing since law school and it was time to get out of the buttoned up corporate world to follow his passion on brewing beer but on a bigger scale. 2 years after he joined the law firm, he quit and was on his own networking with potential investors to start his company. What he had behind him was a stack of student loans and a brewery out of his garage but he kept after it and eventually made the right connections to build Jester King just outside of Austin, TX. Jeff's fund raising strategy? "I never asked for money" I catch up to him 7 years after his ripcord out of law and into the craft brewery world. In this episode we cover... Cold calling investors and asking for help. His strategy around raising money in the middle of the US recession. Navigating the brewing laws in Texas. The perfect timing of meeting the right person at the right time. The biggest change that moved the brewery from break-even to profitable. What it means to build a 'farmhouse brewery'. The challenges and complexities of being a better Business Manager. Building a self sufficient and sustainable company utilizing the land around the brewery.> The Jester King mission to brew different beer that doesn't fit into any craft beer category. Season 2, Episode 42 – This week, the boys are headin’ to Texas. Jason tends to travel quite a bit for work.
