Simon's ethos is to brew beers that are connected to the local area, in this case Cornwall. Simon is passionate about creating and sourcing ingredients that are part of the local area and community. We sample the two beers that are being released today, and both feature unmalted barley, which provides a different taste experience, and is something Simon has perfected for Coldframe following months of research and experimentation. One of the newest breweries in the Chicagoland area, they opened last November with a solid, classic taplist and a full restaurant menu. Tony chats with The Brit and co-host Ken McMullen (Fox Republic Brewing) while they sample some of his brews, including what could be called his 'early days' flagship beer, a rather delicious Kölsch.
