Over the past two years, five beers that Lapel, Indiana's Pax Verum (https://www.paxverum.com) sent to Craft Beer & Brewing Magazine for review have scored 95 or above. That naturally piqued our interest, so when we planned our Craft Brewers Conference itinerary we made sure to visit the hip outpost an hour north of Indianapolis. Head brewer and co-owner Colt Carpenter cut his teeth working in a homebrew shop before making the jump to the world of professional brewing, and his embrace of high quality and diverse ingredients tracks with that experience of assisting home brewers with their own ingredient choices. Now, he embraces everything from traditional English styles and European lagers to cutting-edge IPAs, but always with a slight contemporary edge. In this episode, Carpenter discusses: building a wider understanding of and familiarity with beer ingredients by working at a homebrew shop sourcing ingredients intentionally with flavor in mind designing robust porter around a specific specialty malt managing challenges with craft malt like increased friability and seasonal variation focusing on freshness while managing color swings with specialty malts avoiding over-oxygenation cool pooling IPAs with flowable hop products building depth in hoppy beers without T-90 pellets finding hop lots that meet flavor goals, without selecting unique flavors and aromas from Michigan-grown varieties And more. Brewers Association Staff Economist Matt Gacioch on Craft Brewers' ‘Realistic' Mindsets, Industry Trends, Headwinds & CBC

Brewbound Podcast

Play Episode Listen Later Apr 23, 2025 48:24

When Brewers Association (BA) staff economist Matt Gacioch is asked whether craft brewers are optimistic or pessimistic, his response is “brewers are realistic.”   “They are understanding that this is a new environment that they are operating in,” Gacioch said during the latest edition of the Brewbound Podcast. “Mid-April 2025 is very different than mid-April 2015.”   Gacioch, who is in his first year as a full-time employee of the BA, described a maturing and challenging craft beer market for a variety of factors, from consumer consumption shifts to increased competition and variety to economic pressures and tariffs.    “The way that consumers and markets don't like uncertainty, small business owners really don't like uncertainty,” he said. “That is the environment that we're in right now. There's a lot of products that go into beer making and [the] operating of a brewery [that] can be bought from within the U.S., but the supply chain is so complex and so global that certain tariffs are going to have an impact on pricing of brewery inputs.    “So not being able to plan too far into the future because of how things have been changing so quickly has made it really tough for brewery owners to make great beer and feel like they can make a solid business plan for the year and years ahead,” he continued.   Which brings us to the 2025 edition of the Craft Brewers Conference taking place in Indianapolis next week (April 28-May 1). Gacioch anticipates that many of the conversations inside and outside of the Indiana Convention Center will center on those factors and strategies for pushing forward, including his own seminar  (1:15 p.m. ET Tuesday, April 29) discussing case studies from breweries who tapped into growth drivers in 2024.    Gacicoh also touches on new breweries making this year's top 50 craft list, potential opportunities and challenges for breweries adding food service and why he's excited for CBC. Plus, more conversation about kicking field goals than you'd expect.   But first, the Brewbound team recaps the latest news, including the BA's recent webinar on tariffs and the NBWA and Fintech's Q1 2025 webinar on beer category sales trends. Justin, Jess and Zoe play Another Round or Tabbing Out on copycat designs infiltrating the hard lemonade and iced tea space, with a hat tip to Fingers' Dave Infante.

Originally founded out of Avery Brewing Co., Arryved was created to solve a challenge that many breweries still face today: finding a point-of-sale solution specifically designed for the unique operations of a taproom or production brewery. Arryved's dedication to the craft community doesn't stop at software. With the launch of Arryved Capital, the company is now helping breweries scale faster by providing access to quick, flexible funding. He also dishes on the tension between value and volume, slumping craft sales, channel outlooks and brand life cycles.   Plus, Zoe is back with a beer report from the Bahamas. The growth in the non-alcoholic adult drinks category is a bit of a bright spot amidst recent trends in craft brewing. As more and more craft brewers consider bringing NA beers to market, compliance concerns come to the forefront. While NA beers contain scant or no alcohol, they still come with a variety of compliance concerns, not all of which may be intuitive or simple to grasp. This session will cover: -How is NA beer regulated by alcohol control boards, including licensing, taxes and distribution restrictions -How to properly label NA beer, including FDA requirements -How and if NA beer can be sold by alcohol retailers Please join Alex Koral of Sovos ShipCompliant and Shauna Barnes of Barnes Beverage Group for this review of the legal considerations impacting NA beers. Shauna Barnes is the founder of Barnes Beverage Group, a law firm specializing in providing external general counsel and regulatory counsel to beverage companies. Shauna has over a decade of experience counseling alcohol companies, specializing in creative distribution relationship management and risk-based advice in all aspects of the product life cycle. Before founding Barnes Beverage Group, Shauna founded the Alcohol & Beverage Practice at Kaleo Legal. Prior to that, she was General Counsel and a trusted member of the leadership team at Dogfish Head for nearly a decade. She found that position during her tenure as an attorney with McDermott Will & Emery focused on alcohol beverage clients and antitrust issues. She is a former Events Chair of the Rose Council of Wake Forest University School of Law and currently serves on the school's Law Board of Visitors. She regularly volunteers her time to the Delaware Brewer's Guild, assisting the members with alcohol-related challenges and legislative efforts. Based in Boulder, Colorado, Alex Koral is Regulatory General Counsel for Sovos ShipCompliant, where he serves as lead legal researcher for beverage alcohol regulation and has become a leading expert on interstate distribution of alcohol. He has spoken on the topic at many industry events including the Craft Beer Professionals Virtual Conferences, Craft Brewers Conference, American Craft Spirits Association Convention, as well as meetings for the National Council of State Liquor Administrators and the National Liquor Law Enforcement Association. Not to get all political on here, but historically speaking, Black people have not exactly been welcomed into the halls of power in the American beer industry. There are a dozen well-documented reasons for that, many of which stem less from endemic characteristics of beer or brewing than from the systemic racism baked into this country's laws and institutions. But to this day, less than 1 percent of the country's ~10,000 breweries are owned by Black people — a sobering state given Black people represent around 13 percent of the overall population in the United States. So the National Black Brewers Association has its work cut out for it. Joining the show today is three-decade beverage-industry veteran Kevin Asato, the NB2A's executive director, to talk about the newly formed trade association's historic debut at the 2023 Craft Brewers Conference, the unique challenges its constituents face, and how the org hopes to tackle them. This episode is a special one for us. It brings together voices of people who were in Nashville for the 2023 Craft Brewers Conference as a spiritual sequel to a 2018 episode we called "Strong Feelings." Our goal then and now is simple: To capture the feelings of a particular moment in the beer industry and encourage people to share ideas, inspiration, and what they think matters—or maybe needs to change. To help with creating this episode, I was joined by Kate Bernot at a bottle share party hosted by the National Black Brewers Association. We partnered with two board members from the association to chat with attendees and gather their thoughts and feelings: Jon Renthrope, CEO and brewmaster of New Orleans' Cajun Fire Brewing and Alisa Bowens-Mercado, owner of New Haven, Connecticut's Rhythm Brewing. Over the course of the night, each of us took turns with the microphone, engaging with people and their strong feelings about topics that ranged from how to attract new customers to craft beer, discussing the people who represent the future of craft beer, who they admire, and more. Consider this as a beer version of speed dating. Each person picked a card at random that had a topic to talk about—which you'll hear—and then shared their response. What came of it all offers us a unique moment in time with perspectives that tell the story of craft beer in spring 2023. Along with the responses, you'll also hear the voice of Kate Bernot, who will share excerpts from a Sightlines story about the National Black Brewers Association. Combined, the live voices from the NB2A's party and Kate's reporting will give you a sense of place and importance of the organization and what it can achieve. First, we'll turn it over to some of the people from the bottle share. This is Strong Feelings, made in collaboration with Jon Renthrope, Alisa Bowens-Mercado, and the National Black Brewers Association.

Like most of my beer friends, I first met Chantel Columna on Instagram. Our online conversations eventually led to an in-person meeting when a work trip brought Chantel to Atlanta in 2021. We enjoyed beers while diving into a conversation about the beer industry and life at large. Last year, my husband and I traveled to Denver. I knew I couldn't leave the city without visiting Novel Strand Brewing Company, the brewery Chantel, along with her husband, Tamir Danon, and Ayana Coker, opened in 2018. Again, this meetup led to a deep conversation about culture and life.  With a great selection of beers and a focus on Tamir's Israeli and Chantel's Dominican culture, it's no surprise to me that last year, Hop Culture named the brewery the best in the country for those very same things and more. Novel Strand doesn't shy away from injecting their culture into thei r brewery. I was reminded of this passion when I ran into them at this year's Craft Brewers Conference, and we continued our easy flowing conversation over incredible Lagers.  After sharing great talks with Chantel, it was hard for me to keep her compassionate and endearing energy from you. In this episode, we'll talk about the business of beer with a key focus on her work as general manager for Novel Strand. How does she approach this role? What's a North Star that guides her in work and life? We also share our experiences with entrepreneurship and what we've both learned along the way.

Finding space for personality and authenticity in hazy IPA and tart fruit beer these days can pose a challenge for brewers, but for Jared Welch, Cofounder and Production Director for Nashville, Tennessee's Southern Grist, (https://www.southerngristbrewing.com) that's no reason to stop pushing. It's why their popular quick-soured fruit beers are now acidified with a locally-caught Lactobacillus strain, and why they've tweaked and increased bitterness in their hazy IPAs while eschewing active fermentation dry hopping. Southern Grist is going to make the beers that customers want from them, but they stand out by making them their way. In this episode, Welch focuses on hazy IPA and tart fruit beers, covering: First-wort hopping with Vic's Secret Whirlpooling very cool as low as 160°F Tweaking the grist for hazy IPA to ramp up oats Building the lightest color via Pilsner malt Driving London Ale III to a dozen generations through careful fermentation management Dialing in acidity for specific fruits And more. When brewers think of Czech hops, they naturally think of Saaz, whose delicate and ethereal character is nearly synonmyous with lager itself. Yet while craft brewers around the world have developed an obsession with punchy New World hops and the character of specific varieties, they often know relatively litle about the hops from this region that's been growing them for more than a millennium. In this episode, we sit down in Žatec—the home of Saaz—with Zdeněk Rosa, chairman of Bohemia Hop, the collective of all Bohemian hop growers. Here, Rosa digs into: the promising overall trajectory of Saaz growth in recent years, despite the disastrous harvest of 2022 how agronomy and growing operations differ in Bohemia compared to the Pacific Northwest the unlikely specifics of how weather impacted the 2022 harvest the development of other varieties that offer similar character to Saaz but with better yield and sustainability newer, more expressive Czech aroma varieties such as Saaz Shine and Saaz Comfort, which offer enticing possibilities for lager and other kinds of beer leaning into a Czech take on cold IPA using more characterful Czech aroma hops And more. In the trendy Karlín neighborhood of central Prague, the brewpub called Dva Kohouti (https://www.dvakohouti.cz/en/) embodies the merger of the two key elements of Czech beer culture: the brewing and—no less important—the pouring and service. The side-pull taps attached directly to the serving tanks behind the bar are only part of the story. In this episode recorded at the brewery, head brewer Lukaš Tomsa explains the ideas behind Dva Kohouti, how they brew their traditional lagers and more internationally inspired ales, and how they ensure that the service end completes the job of creating a great beer. Among other topics, he discusses: the importance of pouring and service that respects the product a brewery-taproom concept that gives production and service equal emphasis comparing single- and double-decocted pale lagers fermenting a bit warmer than traditional Czech brewers, to keep diacetyl in check getting natural carbonation by capping the tank during fermentation using decoctions for tart fruit beers and American-style pale ales and IPAs using decoction and raw barley to promote foam in a quick-soured fruit beer paying attention to glassware and draft lines to ensure perfect pours And more.
