In this episode of The Remarkable Project Jay talks to well-travelled chef and local food delivery business owner Kelly Eastwood about being resourceful in the face of adversity, why personal connection is the ground zero of community and organisational culture, and how care is key to making customers feel crucial.After 14 years of working as a Private Chef to Royalty, Russian Oligarchs and many more on the Forbes list, Kelly Eastwood left the high seas and transferred her skills to Television. Working as a Home Economist and TV Food Producer for shows such as Masterchef, MKR, Better Homes and Gardens and The Great Australian Bake Off. The River Cottage Australia first brought Kelly to the Far South Coast of NSW, and it was there that she started her own business, Eastwood's Deli and Cooking School in picturesque Bermagui, hosting cooking lessons, pop-up dinners and coastal private catering events.During the 2020 bushfires Eastwood's was converted into a Disaster Relief Kitchen for a not-for-profit organisation called World Central Kitchen, where Kelly and a team of 270 volunteers output almost 50,000 meals over a seven week period, feeding firefighters, evacuees and displaced locals in surrounding communities. Soon after the fires were done along came COVID-19 restrictions, forcing Eastwood's to rethink their business model. I absolutely love when my nearest and dearest have a career story that was made for the pod, as it means I selfishly get to hang out with them and call it ‘work’. Today’s beautiful guest is my old mate Lucy and her career is right up the ‘So I Quit...’ alley. Lucy was a TV publicist for many years at Channel 9 and then later at Foxtel, working on many top rating shows and with an array of incredible talent. A dream job indeed. However Lucy’s true passion (actually since she was in junior school) was food and the wonderful way creating recipes and cooking made her feel - and as a recipient of some of Lucy’s creations I also loved the way her food made me feel! But it was using food as medicine that would lead to her big career change.Just before falling pregnant and while working on some incredible Lifestyle TV shows (River Cottage Australia for one) she decided to start studying to become a Nutritionist. Now a fully qualified paediatric & childhood Nutritionist. Lucy shares a wealth of ideas and recipes and help when it comes to all things little people and food. A wonderful career pivot made even more magnificent as both Lucy and photographer husband Matt both quit their jobs and city life to travel around Australia in an RV with son Otis. In fact, the three of them made it around Oz one and a half times and Lucy jokes living with a tiny pantry for so long certainly stood her in good stead for lock down. Fans of the show will be pleased to learn that West’s scene-stealing border collie Digger has also made the journey and is busy learning how to behave around busy city roads and make the most of a suburban backyard. “I don’t think he’s super happy but I still get him out and give him plenty of walks,” West says. “And we’re lucky, we live near Merri Creek, so there are plenty of places where he can get off lead.”Since River Cottage Australia finished filming in 2015, the 36-year-old advocate of sustainable farming has been dabbling with television and radio jobs, as well as doing cooking demonstrations and tells Linda he is in the process of writing a book. West says living sustainably begins with cooking at home. Start by eliminating processed and packaged foods and prepare fresh meals from scratch. Then, try growing your own vegetables – start small with some herbs or salad greens in a pot.Ultimately, though, the move to Melbourne is a temporary one with the family planning to move back to their house in Bermagui, NSW, when Otto starts primary school.Paul will be a special guest at the Queensland Garden Show 13-15th July 2018 on the Sunshine Coast (http://www.qldgardenexpo.com.au) where he will be on stage talking about his sustainable life goals.
