To make the best ever stovetop quesadillas, skip the traditional flour tortillas, and try the more delicious corn tortillas. A little oil in a pan set on medium heat. Put a corn tortillas in the pan, top it with grated cheese, maybe diced vegetables, shredded meat if you like, chopped scallions, canned green chilies, chopped olives. Put a corn tortilla on top and cook for a couple of minutes, until the cheese starts melting. Flip it over and let it cook for two more minutes, until golden brown on each side. Cut it in four pieces and serve it with salsa, sour cream, guacamole, or enjoy them just as they are. Another advantage, the super delicious corn version is gluten-free.
