As we approach our 500th episode, we are bringing back two memorable episodes from 2018, our first year of the podcast. Samin Nosrat is a chef and the author of the legendary cookbook Salt Fat Acid Heat. This episode was our very first, and it was recorded at Books Are Magic in Brooklyn on July 12, 2018. We talked to Samin about “too-mami” (cooking with too much umami), angry letters, and the differences between brands of kosher salt—that is, not all kosher salt is the same. Also on the show is a great conversation with Flynn McGarry. He's the chef-owner of Gem Wine and Gem Home in New York City. In this episode, we discuss his time working at Los Angeles restaurant Alma at age 13, while being homeschooled, and his famous pop-ups even earlier in his career. The journey is all documented in the great film Chef Flynn, and we get into Flynn's many travels and eventual business opening in NYC—the most competitive and cutthroat restaurant city in America.Do you enjoy This Is TASTE? Culinary wunderkind Flynn McGarry's memoir demonstrates passion, discipline and maturity — and he's only 24. Zee Husain cultivates laksa leaves, huacatay, sambar cucumbers and kadipatta (curry leaf) plants. Halva, a popular sweet throughout Armenia, the Middle East and India, has a deeper significance for Liana Aghajanian. Caleigh Wells breaks down everything you need to know about composting in your kitchen. Valerie Gordon explains what makes a superior custard pie, just in time for this year's Pie Contest. Bill Addison reviews Azizam, where the spring menu is filled with creative uses of fresh produce.

Some people never know what they want to do when they grow up. Some people find out along the way. Some people, like the subject of the documentary CHEF FLYNN, knew from the beginning. Did he really know, though? Either way, Chef Flynn McGarry knew what he wanted to quite early on. Watch this documentary either before or after listening. No spoilers to be had, but it's definitely an interesting look at this young artist.

How do we ensure dignity for people experiencing food insecurity? City Harvest Senior Director of Programs Kate MacKenzie and Gem chef Flynn McGarry sit down with Billy Shore in New York City to discuss how their passion for food drives their commitment to creating social change. “Through City Harvest, I’m able to work on making large-scale change, while also making sure people have food on their tables tonight,” says MacKenzie. A prodigy chef and restaurateur since age 11, McGarry understands the power of his celebrity to influence. “We’re going to do the restaurant, but in tandem we need to give back and try to be bigger than the space we’re confined in,” he explains. “ Both guests are passionate about solving food insecurity. “It’s not just about distributing more and more food to people who need it… it’s making sure it gets into their stomachs in a way that’s appropriate and desirable for them,” says MacKenzie about how City Harvest will help feed 1.2M food insecure New Yorkers this year. “Cooking for yourself is such an important skill. I know so many people in their 20s and 30s who don’t know how to make themselves dinner, which relates to this dependency on fast food,” says McGarry. Share in this conversation that highlights how a passion for food motivates these guests to make an impact.
Let’s just not dwell on the fact that Flynn McGarry is only 20. He’s young. The end. This is because McGarry, the chef and owner of the ambitious and well-reviewed New York City tasting-menu restaurant Gem, is an incredibly talented dude. Period. This is a really fascinating conversation, one that surprised us in many ways. We go over his time working in Los Angeles restaurant Alma at age 13—while being homeschooled—and his famous pop-ups even earlier in his career. “My formative years were spent in some of the most stressful environments,” McGarry admits. The journey is all documented in a new film, Chef Flynn, and we get into McGarry’s many travels and eventual opening in NYC—the most competitive and ruthlessly cutthroat restaurant city in America. There’s a fearlessness in McGarry that’s extraordinary. Also on this episode, we get to catch up with Steven Hall, a longtime NYC restaurant publicist and consultant. He tells some old war stories about NYC dining in the 1980s (he almost poisoned Mike Nichols) and details his work with many of the city’s best Japanese restaurants. We also rate the current roster of New York City restaurant critics: Pete Wells, Hannah Goldfield, Adam Platt, Ligaya Mishan. This episode is sponsored by Joule by ChefSteps.

After his parents divorced, 10-year-old Flynn McGarry wanted to feel useful, and maybe to reassert some control over his environment, too. So he started cooking for his mom, Meg. A passion was born. Meg began homeschooling him, allowed him to turn his bedroom into a high-end kitchen, and hosted Flynn's pop-up restaurants at their suburban California home. Massive publicity followed, and, this being the internet age, cruel online backlash. Soon, documentary filmmaker Cameron Yates got interested, and embedded with Flynn as he rose and rose over six years, to the threshold of realizing his most lofty culinary dreams -- at age 19. Cameron and Flynn joined Alec for a live event at the Hamptons International Film Festival, and the three talk candidly about life under the microscope, about the mixed blessings of precocity, and, most importantly, about the complicated relationship between Flynn and a mother who sees herself as having given up dreams of success as a filmmaker and writer to nurture her family. Cameron's film, Chef Flynn, will be in theaters November 9.
Our guest Flynn McGarry is a chef whose career started at the tender age of 11 in Los Angeles. Heralded as the "Justin Bieber of food" McGarry's pop-up dinners in his parents' house regularly sold out and garnered tons of press. Now 19, McGarry has opened Gem, his first restaurant in New York City, and he’s the subject of Chef Flynn, a documentary chronicling his unique upbringing, which premiered at Sundance earlier this year. During our chat, we peel back the layers to discuss all the big topics: dating, leftovers, being younger than your employees, and the cocaine side of the industry. We end with a blockbuster music quiz that focuses on the year 1998. Show page: http://publicannouncement.org/episode/very-advanced-flynn-mcgarry/

Flynn McGarry is still a teen chef, but three years after he came onto the scene as a 15-year-old fine dining wunderkind, he is no longer, technically, a kid. McGarry has spent time in some of the world’s most renowned kitchens, including Geranium in Copenhagen, Alinea in Chicago, Eleven Madison Park in New York, and at the Modernist Cuisine lab in Seattle. More recently, the teen chef (who expects that label to stick long after his teens) has hosted his tasting menu pop-up, Eureka, in Los Angeles and New York City, with plans to take it abroad. Three months into his eight-seat tasting counter in New York, McGarry joined hosts Helen and Greg in the Eater Upsell studio to discuss the particular weirdness of high-end counter service, why he’s so done with pop-ups, and why he’s so not done with The Bachelor.
