In this episode of the Tick Boot Camp Podcast, host Matt Sabatello and special guest co-host Khalil Fuller sit down with Alan Bergo, a James Beard Award-winning chef, professional forager, and author, to discuss his personal battle with Lyme disease. Alan shares how his love for wild food shaped his culinary career, the hardships he faced after contracting Lyme, and how he found healing through foraging and alternative therapies. His story is one of resilience, transformation, and the powerful connection between nature and wellness. Key Takeaways: Alan's Culinary and Foraging Journey: Growing up in Minnesota, Alan worked his way up in the culinary world, eventually becoming an executive chef and a renowned expert in wild food. The Moment Lyme Changed Everything: While leading foraging tours, Alan unknowingly contracted Lyme disease, which led to a cascade of debilitating symptoms, including Bell's palsy, cluster headaches, and extreme sensitivity to light and sound. Struggles with Diagnosis and Treatment: Despite recognizing his symptoms early, Alan faced challenges in getting proper medical care, receiving only a short round of doxycycline. The Aftermath of Lyme: Chronic neurological issues forced Alan to reevaluate his career, leading him to explore alternative treatments and lifestyle changes, including foraging as a form of therapy. The Role of Alternative Medicine: Alan discusses how eliminating gluten and alcohol, along with the use of psilocybin, helped him manage his chronic headaches. Advice for Lyme Warriors and Nature Enthusiasts: Alan emphasizes the importance of early Lyme detection, tick prevention (such as permethrin-treated clothing), and seeking community support. From Tragedy to Triumph: After Lyme forced him to step away from the restaurant industry, Alan channeled his passion into writing, public speaking, and hosting The Wild Harvest Show, which earned him two Taste Awards and a James Beard Award. Why You Should Listen: If you're interested in Lyme disease recovery, the healing power of wild food, or how nature can transform one's life, Alan's story is both inspiring and educational. Whether you're battling Lyme, curious about foraging, or seeking motivation to overcome challenges, this episode is packed with insights that will resonate deeply.

Kitchen Chat Host and Founder Margaret McSweeney is joind by Executive Pastry Chef Riccardo Menicucci for "A Taste of Luxury, History and Hospitality at Beverly Wilshire, A Four Seasons Hotel". The Beverly Wilshire is a sweet destination, especially during Oscars Week. This year's amenities included a film projector made of Valrhona Manjari, a luxury chocolate, in addition to a thoughtfully designed and braided croissant representing the team of talented people required to create a film. And of course it was topped with gold! Beverly Wilshire, a Four Seasons Hotel, has a long history within the entertainment industry. This luxury hotel opened in Beverly Hills in January of 1928. The Beatles even held their first press conference in the Champagne Room. Here are Chef Meniccui's three top tips for the home pastry chef: When you make pastry cream, you don't need to boil your milk. It's very important. Otherwise you cook the proteins of your milk and it tastes different. Always mix your dry ingredients with a whisk so you don't have chunks of flour in your mix. Don't ever feel afraid to leave your comfort zone. There is no losing or winning, only trying. Beverly Wilshire is one of my favorite hotels in the Los Angeles area to stay and to host events. This historic place provides a taste of luxury at every turn, and their staff is professional and always willing to accommodate and personalize your experience. The BLVD staff even printed customized keepsake menus just hours before a pre-Taste Awards party that I hosed to honor my friend, Lisa-Renee Ramirez, Emmy-Award winning executive producer, director and creator for Allen Media Group. Thank you, Beverly Wilshire and Chef Menicucci for this Kitchen Chat along with the photos you provided. Thank you, foodie friends! What are some of your favorite destinations? Savor the day! What a joy it was to take Kitchen Chat on the road recently to New York's famed Becco and sit down with Lidia Bastianich in celebration of the publication of her sixteenth cookbook! Time with Lidia, a multiple Emmy and James Beard Award winning public television host, author, entrepreneur and fellow member of Les Dames d'Escoffier is always inspiring. Her most recent book is called Lidia : From Our Family Table to Yours published by Alfred A. Knopf, a division of Penguin Random House and features "More than 100 Recipes Made with Love for All Occasions." Lidia's family is at the essential heart of this beautiful book which is a tribute to her Mother Erminia, who passed away two years ago at the age of 100. One of her mother's favorite dishes that Lidia made for her was Eggplant Rollatini. That recipe is in the new cookbook. Lidia and I first met through Barbara Lazaroff at Eataly Chicago during the James Beard Awards in 2015. Eight years later, I had the honor of introducing Lidia onstage as the 2023 recipient of The Andrew Zimmern Discovery Award at The Taste Awards ceremony in Los Angeles.

. Joanne Weir is a James Beard Award-winning cookbook author, international cooking teacher, restaurateur and renowned chef. Joanne's passion for cooking was stoked by a legacy of life in the kitchen. A fourth-generation professional chef, Joanne's great-grandmother operated a restaurant in Boston at the turn of the century called Pilgrim's Pantry. This enthusiasm for food was passed down to her grandfather and then to her mother, a professional chef and caterer who worked with the legendary cookbook author, Charlotte Turgeon. Joanne continues that same tradition. After receiving a Bachelor of Fine Arts Degree from the University of Massachusetts, Joanne went on to teach Fine Arts in Boston. She then found her way back to the kitchen. Joanne spent five years cooking with Alice Waters at Chez Panisse in Berkeley, California and studied with Madeleine Kamman in France, where she was awarded a Master Chef Diploma with honors. Her ultimate calling is teaching others to cook in the United States and throughout the world -- Europe, Australia, New Zealand, Asia, UK, South America, Mexico and Canada. In 2013, Joanne won the Tour Operator of the Year Award from the International Association of Culinary Professionals for her highly acclaimed Culinary Journeys. She spends several months of the year touring the globe sharing her extensive cooking background with regard to nutrition, food theory and technique, in particular Mediterranean cuisine and the regional foods of the U.S. Joanne has a twenty-five-year history as a host for her cooking shows, which air nationally on Public Television and CreateTV. In her award-winning television series, Joanne Weir's Cooking Class and Joanne Weir Gets Fresh, Joanne's love of teaching students how to cook is shared with a national TV audience. Her current television series, “Joanne Weir Plates and Places” won Best New Series from Taste Awards in 2019. Fifty-two new episodes feature segments filmed throughout the Mediterranean, the Rhine and Danube Rivers, Washington and California, as well as in her kitchen studio in San Francisco. Joanne's talents were brought to life in the PBS series "Weir Cooking in the Wine Country," shot on location in Napa Valley. Her companion book, Weir's More Cooking in the Wine Country (Simon & Schuster, 2001) garnered a James Beard Award nomination and an IACP Cookbook Award nomination. Joanne's adopted hometown, San Francisco, is the culinary setting for "Weir Cooking in the City," her 26-part PBS series and companion book (Simon & Schuster, 2004) for which she received a James Beard Award. She is also the author of Wine Country Cooking (Ten Speed Press, 2008), Tequila: A Guide to Types, Flights, Cocktails and Bites (Ten Speed Press, 2009), and Cooking Confidence (Taunton, 2012). Well, it's been quite an interesting year. When it first happened, we were like every other business in this country, we had no idea. It felt, I described it a lot as going over Niagara Falls in a barrel, that's the Americans analogy. It felt at that point as it were that we had been shot off the lip of the waterfall, and we were in mid-air and had no idea how hard we were going to hit the water, and whether we're going to break into a million pieces. ~ Dan Szor, Founder The Cotswolds Distillery So in this episode we’re going on a whisky and gin adventure with the founder of the multi award-winning distillery, The Cotswolds Distillery. To add into the mix, he’s a New Yorker making Scottish whisky in the Cotswolds. An intriguing combo don’t you think? He and his team clearly know what they’re up to as their whisky and gin have notched up Golds, Double Golds (I had no idea Double Golds existed until now), 3* star Taste Awards and stocked in near to 40 countries (UK stores include: Fortnum & Mason, Waitrose, Majestic and a host of fab independents). His distillery and visitor centre, opened by Prue Leith, have received the ‘Hidden Gem’ award from Visit England, and hold the Trip Advisor Certificate of Excellence. We talk about how and why Dan made the shift from running a hedge fund to risking it all and going into whisky including his 'barley epiphany' and why buying a barrel of Bruichladdich whisky on a holiday visit helped cement his new chapter. You will discover how Dan and his team balance the concept of laying down stock (whisky takes 3 years before it can be called whisky which means a massive investment in stock), how gin became their 'love child' which was immediately picked up by Fortnum & Mason, Majestic and Harvey Nicols, the life their stills Lorelei & Dolly, the influence of his parents - his dad who survived life in a concentration camp -, the difference of working in the financial industry to running his own business, how they have survived the pandemic to date, how they support sustainability and climate change, what he does to keep fit and loads more.My recommendation: My Octopus Teacher ~ NetflixDan's book recommendation: Notes from a Small Island ~ Bill BrysonDan's book about his journey: Spirit Guide - In search of an authentic life (Available on their website and amazon). It's a brilliant read - trust me.Chocolate: Fortnum & Mason whisky trufflesQuote: 'My heart is at ease knowing that what was meant for me will never miss me and that what misses me was never meant for me.' ~ Imam al-Shafi'iThe Cotswold Distillery Insta: @cotswoldsdistilleryPhoto credit: Lorenz GullachsenSUBSCRIBE TO OUR NEWSLETTER WITH A CHANCE TO WIN OUR H&P CHOCOLATE BAR.If you have enjoyed this episode do have a listen to S2 E12 and hear from one of the UK's leading winemakers, Dermot Sugrue, Founder of the award winning Sugrue South Downs. Losing your mind with Chris Cosentino

Talking about the hard stuff There are people who say they are there, and there are people that are there. When Andrew and I meet years ago we realized that we would be friends for life, so many similarities, love of food family but most of all our consistent honesty with each other and support has created an unbelievable friendship and support. There is so many things I can say abut Andrew but most of all I want to say “Thank You” for your consistent friendship & support threw thick and thin we always have each others back to get threw the hard stuff. I love You AZ my brother of another mother!! follow him: @chefaz A Taste of the Good—and Bad— LifeThanks to his parents who had him traveling around the world mouth first, Andrew knew from a young age he wanted a career in food. After attending The Dalton School and then Vassar College, Andrew was on the fast track to success, cooking in New York City restaurants helmed by Anne Rosenzweig, Joachim Splichal and Thomas Keller. He helped open and run a dozen restaurants, but was also an addict spiraling out of control. Crashed and burnt, he spent a year living on the streets, stealing to support his addiction. Ultimately, one last intervention by close friends brought him to the renowned Hazelden Foundation in Minnesota. Transforming his life around sobriety, Andrew began washing dishes at the Minneapolis outpost of New York’s Café Un Deux Trois in 1992. When a line cook fortuitously didn’t show up for his shift, Andrew took over his station, and in seven weeks was named executive chef. He turned Un Deux Trois into a successful gastro-bistro during his six-year tenure.Making Moves in the MediaAndrew’s revamped menu of French dishes shot through a Vietnamese and Chinese prism drew the attention of media. Local news appearances led to regular TV work as the ‘in-house chef’ on HGTV’s early slate of programming produced in Minnesota. Rebecca’s Garden and TIPical Mary Ellen proved to be extraordinary springboards. Eventually he found a regular job as a features reporter doing live local news, became Mpls.St.Paul Magazine’s dining critic and restaurant columnist, and hosted his own drive time radio show. In 2003, Andrew filmed a test pilot for the show that ultimately became Bizarre Foods, targeting Travel Channel as a potential home. Since Bizarre Foods first aired in 2006, he’s created the spin offs Bizarre World, Bizarre Foods America and Bizarre Foods: Delicious Destinations.Andrew founded the Minneapolis-based, multi-media company Food Works in 1997. A full-service operation that develops and manages content, Food Works oversees production and distribution for all of Andrew’s media endeavors, including his former podcast Go Fork Yourself, a 2012 Stitcher award-winner for Best Food/Cooking podcast, his website AndrewZimmern.com, which was nominated as the best food blog by the James Beard Foundation in 2016, and AZ Cooks, a digital cooking series. In AZ Cooks, Andrew shares cooking techniques and recipes inspired by his travels and experiences in the professional kitchen. He demystifies essential dishes from cultures around the world in pursuit of culinary literacy. AZ Cooks has won Taste Awards for “Best Food Program Online” (2018 and 2019), as well as “Best Instructional Series” (2019) and “Best Chef in a Series” (2019). The series was also recognized as a Webby Honoree in 2019.Beyond his success as an on-camera host, Andrew’s background as a journalist has led him seamlessly into the world of publishing. Giving a behind-the-scenes look at the cultures he found in his favorite destinations, The Bizarre Truth (Broadway, 2009), inspired readers to travel, explore and eat the unconventional. Andrew Zimmern’s Bizarre World of Food: Brains, Bugs and Blood Sausage (Delacorte, 2011) gave younger fans a backstage look at his culinary adventures. A book for young adults, Andrew Zimmern’s Field Guide to Exceptionally Weird, Wild, Wonderful Foods: An Intrepid Eater’s Digest (Feiwel & Friends, 2012) is a pop culture-influenced look at funny, fantastic and occasionally bizarre ingredients. His latest offering, a grade level series called Alliance of World Explorers, Volume 1: AZ and the Lost City of Ophir was released in February 2019 and recently won a Gold IPPY in Juvenile Fiction. Additionally, Andrew is a contributor at Food & Wine magazine and a contributing editor at Delta Sky Magazine, where he pens the column “Fork and The Road.”Innovative Culinary Concepts and PartnershipsIn 2012, he launched Andrew Zimmern’s Canteen, a quick service concept licensed at U.S. Bank Stadium and Target Field in Minneapolis. Andrew Zimmern’s Canteen is now a property of Passport Hospitality, a restaurant concept and design company Andrew founded in 2015. Through Passport Hospitality, Andrew and his culinary team provide consulting services to various restaurant and retail projects.Andrew recently collaborated with Minneapolis chef Gavin Kaysen to create KZ ProVisioning, a unique catering company for professional athletes. KZ ProVisioning works with sports teams like the National Hockey League’s Minnesota Wild, to provide healthy meals to the team’s players, coaches and locker room staff. Andrew has also partnered with Robert Montwaid to develop an experiential food hall in the historic Dayton’s building in downtown Minneapolis and in Atlanta’s Chattahoochee Food Works.Creating Compelling and Impactful ContentIn 2014, Andrew introduced Intuitive Content, a full-service production company that develops and produces dynamic original television and broadcast specials, while partnering with companies to create brand-driven series and web content. Intuitive Content’s first television series, Andrew Zimmern’s Driven by Food, premiered on Travel Channel in August 2016. In Driven by Food, Andrew takes viewers on a behind-the-scenes adventure, exploring food and culture from a whole new perspective with a local guide. In their second series, The Zimmern List, Andrew reveals his favorite food experiences in cities across the globe. Season two of The Zimmern List premiered in December 2018 and in 2019 won a Taste Award for “Best Food Travel Series” as well as a Silver Telly Award. In their latest series, Andrew traveled the U.S. in search of passionate food truck entrepreneurs on Big Food Truck Tip, which aired on Food Network last fall.Beyond television, Intuitive Content works with clients on branded entertainment, including a partnership with Renaissance Hotels to create The Navigator’s Table and with Caribou Coffee to film Behind the ‘Bou, which profiles their commitment to high quality beans and sustainable Rainforest Alliance Certification. Intuitive Content’s recent digital work includes Andrew in the Kitchen, a companion cooking series to Bizarre Foods that was nominated for a James Beard Award in 2018, and Bravo TV’s Beats + Bites with the Potash Twins, which explores the intersection of music and food, and the creative process that all artists share. In 2019, Beats + Bites was awarded the “Great Taste Prize: Hollywood Tastemakers” by the Taste Awards and a Bronze Telly Award.Andrew has been nominated for 12 James Beard Awards and has won awards for “TV Food Personality” (2010), “TV Program on Location” (2012), and “Outstanding Personality/Host” (2013 and 2017). In 2016, Andrew was named one of “America’s 50 Most Powerful People in Food” by The Daily Meal, one of the “30 Most Influential People in Food” by Adweek and as one of Fast Company’s “Most Creative People in Business.” In 2017, Andrew won the award for Best Host at the Cynopsis TV Awards. According to Eater, “Zimmern knows more about the foods of the world and the history of modern gastronomy than anyone else in our solar system. He’s a walking, talking food encyclopedia, and a true omnivore.” Andrew has appeared as a guest judge on Chopped and Top Chef, and was chosen as a mentor for Season 2 of Food Network’s All-Star Academy.Delicious LifeWhen he’s not sampling unusual dishes at home and abroad, Andrew teaches entrepreneurship and offers insights on food issues to the students of The Lewis Institute for Social Innovation at Babson College. Through the James Beard Foundation he funds Andrew Zimmern’s Second Chances Scholarship, which offers a student faced with extreme challenges an opportunity to overcome these hardships and follow a culinary path. Andrew sits on the board of directors of Services for the UnderServed, Soigne Hospitality and Taste of the NFL, and is the International Rescue Committee’s Voice for Nutrition. Other charities Andrew works with include Lovin’ Spoonfuls, ONE, Food Policy Action Committee and No Kid Hungry. I've enjoyed having a garden for many years, and recently it's taken on deeper significance in my life. So I loved this conversation with this week's guest Joe Lamp'l, the Joe behind Joe Gardener®, as we discussed the many benefits of gardening. Physical exercise and fresh produce are obvious advantages, and we also explored the mental, emotional, and even spiritual benefits of being in your garden. Topics we touched on included: Gardening as a way to combat perfectionistic tendencies The easy connection and camaraderie among gardeners Seeing gardening “mistakes” as opportunities to learn Applications of a fixed vs. growth mindset Practicing trust and acceptance in the garden Joe’s aha! moment that drew him into gardening Why we have such an emotional connection to food taken directly from the ground Being a steward of the earth The advantages of natural gardening (here's a link to the effects of exposure to the chemical pesticide diazinon, which I experienced as a teen) The role of gardeners in helping our planet to heal Nurturing a relationship with our gardens The therapeutic effects of gardening The layout of Joe’s beautiful garden farm Common mistakes among new gardeners The network of life beneath the soil’s surface Joe shared with me his photo of the first monarch that returned to his garden, which I've posted here. Here's the link to Joe's excellent (and free) Complete Guide to Home Composting where you can also sign up for his newsletter. We discussed a couple episodes of Joe's Growing a Greener World television series: Stone Barns Center & Blue Hill: The Best of Food and Agriculture in which the man had an epiphany simply by pulling a carrot from the ground. Waking Up the Garden Farm™ which chronicles Joe's collaboration with his daughter in developing a tomato seedling operation. Joe Lamp’l (aka joe gardener®) has been hooked on horticulture since childhood. He is one of the country’s most recognized and trusted personalities in gardening and sustainability, with a passion for living a greener life. That passion is evident to a nationwide audience who turns to him for gardening advice through his new joe gardener Online Gardening Academy™ and watches him in his current role as Creator, Executive Producer, and Host of the Emmy-award-winning PBS series, Growing a Greener World® and, previously, as host of Fresh from the Garden on DIY Network (and more). Joe also shares his know-how on NBC’s TODAY SHOW, ABC’s Good Morning America, The Weather Channel and through his popular books, podcast series, and more. Joe’s past awards include The American Horticultural Society’s B.Y. Morrison Communication Award, which recognizes effective and inspirational communication—through print, radio, television, and online media, t Best On-Air Talent for Television by The Garden Writers Association, and the Taste Awards for Best Branded Television Series, Best Environmental Television, Series, Film or Video, and Breakout Storyteller of the Year for a television series, and 2018 Daytime Emmy Award for Best Lifestyle Program. Joe is also the founder and “Joe” behind joegardener.com – a gardening-intensive website with a focus is on how-to videos, podcasts, online courses, and blog posts around the most popular topics gardeners want to know. When not talking or writing about green living, Joe can likely be found in and around his organic garden and spending time with his family on their Atlanta, GA farm. Find Joe online at his website, and on Facebook, Twitter, and Instagram. And if you're interested in enrolling in his highly acclaimed online gardening academy, check that out here.

Listen as Joe shares his passion for gardening, ways we can help improve the environment and why we should care about where our food comes from. Joe Lamp’l’s (aka joe gardener®) infatuation with gardening and nature began as a child. After a run-in with his parents’ favorite shrub, he panicked and jammed the broken branch into the ground.
