Pie is a classic finale to a holiday feast, comforting and distinctly American. Do you like pumpkin or sweet potato? Pecan or apple?   Many people discovered baking during the pandemic. But turning out that flaky pie crust can intimidate new bakers.  Host Angela Davis got tips from pie experts and listeners and explored why eating and making pies nourish our family and cultural traditions. Guests:  Rachel Swan is co-owner and chief pie baker at Pie & Mighty in Minneapolis. After years working in the restaurant industry she started selling pies by subscription in 2016 and opened the brick-and-mortar shop in 2020.    Ken Haedrich is founder of the online pie-making community thepieacademy.com and author of 16 cookbooks, including a comprehensive guide to pies for new and experienced bakers published last year, “Pie Academy: Master the Perfect Crust and 255 Amazing Fillings, with Fruits, Nuts, Creams, Custards, Ice Cream, and More.”  Lachelle Cunningham runs Chelle's Kitchen, a catering and food education business based in Minneapolis. She was previously founding executive chef at Breaking Bread Cafe, which opened in 2015 in north Minneapolis and still serves a variation of her uncle's sweet potato pie recipe.  Use the audio player above to listen to the full conversation. We also asked listeners to tell us about their favorite pie recipes. Check them out below and tell us about your favorite here. Pumpkin Pie (with a kick!) Mix these 8 dry ingredients together in small bowl: 1 cup sugar1 tbsp. flour1/2 tsp. salt1 tsp. ginger1 tsp. cinnamon 1/2 tsp. nutmeg1/8 tsp. ground black pepper1/8 tsp. cloves In large bowl mix: 3 large eggs1 1/2 cups pumpkin scant 1 cup light cream Add dry ingredients to wet ingredients stir well, pour into a 9” unbaked pie crust. Bake 45-55 minutes at 400 degrees in the oven. Let cool, serve with whipped cream and grated nutmeg on top or with vanilla ice cream. Karen's Pie Crust Mix together until pea sized pieces:3 cups flour1 1/4 cups butter 1 tsp. salt In one cup measure, mix: 1/4 cup cold waterI beaten egg1 tbsp. white vinegar Pour liquids into dry ingredients, mix to form a ball.Put flour onto board, divide dough into four equal pieces. Each ball is enough for 1 crust. The unbaked dough can stay in refrigerator for up to a week or freeze dough in small piece or in a rolled out pie crust. Penny's 5 ingredient Last Minute Pie I bring this when invited last minute. I stop at the store to pick up the items. When I arrive, I ask for a spatula and a mixing bowl. (I offer to do dishes in trade for my friends letting me in the kitchen for a few moments. ;-) ) 10" Graham cracker crust1 can sweetened condensed milk1 package Lemonade drink mix1 regular size Cool Whip1 can blueberry pie filling Put condensed milk in bowl, add lemonade drink mix. Stir until it starts to thicken. Add Cool Whip. Stir until completely mixed. Pour in crust. Top with berries. Put in refrigerator until after meal. Don't forget to do the dishes! (I use other drink mixes and pie fillings, too.) Festal Golden Pumpkin Pie Recipe by Marian Biersdorf, aka The Pumpkin Pie Lady! 1/4 (or 1/2) tsp. salt1 tsp. cinnamon1/4 tsp. cloves1/4 tsp. nutmeg1/4 tsp. ginger3 eggs, slightly beaten1 cup granulated or light brown sugar1 15 oz. can pumpkin puree1 cup evaporated (or regular) milk1 9-inch deep-dish pie crust, unbaked Preheat oven to 450 degrees. In a large bowl, combine salt, cinnamon, cloves, nutmeg and ginger, and mix. Add eggs and sugar. Mix well. Stir in pumpkin. Add milk and beat well.Pour pumpkin filling into crust. Bake for 10 minutes at 450. Reduce heat to 350 degrees, and bake additional 40 to 45 minutes. Test for doneness by inserting knife into pie center. The pie is done when the knife comes out clean. Garnish with choice of topping. (Marian reduces the salt to 1/4 teaspoon. She also says it's fine to replace the evaporated milk with skim milk, to reduce the calorie and fat content.) Mixed Fruit Pie A 9 inch pie — double crust. 1 and 1/4 of blueberries, raspberries, rhubarb of any variation.1/2 tsp. of almond flavoring1 and 1/4 cup of sugar — or less1/4 cup of quick tapioca1/4 tsp. of nutmeg1/4 tsp. of salt1 tbsp. lemon juice Bake at 450 degrees for 10 minutes, then at 375 degrees for 45-50 minutes. Variation on the ‘Stir-N-Roll' crust Submitted by Louise DiCesare. I use a completely different way to make the crust from Betty Crocker's original cookbook called Stir-N-Roll. Mix 2 cups sifted flour and 1 1/2 tsp. salt (I don't use any salt) Next, pour 1/2 cup cooking oil (I use Canola) and 1/4 cup of milk into the flour all at once. Stir with a fork. Wet countertop and put a piece of wax paper so the wax paper won't move. Put half the dough on the wax paper and put another piece of wax paper on top of the dough. Roll it out with a rolling pin. Lift off top sheet of wax paper and pick up bottom sheet with crust and flip onto the baking dish. Repeat with top crust. Make any filling and you can use a form to make the top crust to make it a lattice or separate top crust with a knife. It's too early to tell but signs are good. The Rams are in a hole and the Pats could be the best team going round. In Soccer we've got the International weekend and World Cup Qualifiers. By the time you listen to this Australia will have played China in Sharjah. EPL is back this week and we give out tips. Arsenal have gone from the cellar to the hottest team in football in the space of 2 months. Australia beat New Zealand comfortably in the T20 World Cup Final in Dubai. New Zealand have played the final of all three forms of the game in the last couple of years taking out the test championship but losing both forms of limited overs finals. Our friend Erik may have coined the phrase DSC So Big. SVG is close to wrapping up the Supercars title with one more round at Eastern Creek before Bathurst. And in the F1 Lewis Hamilton kept the title alive with a stunning victory in Brazil. Meanwhile in other sport, Pies is loving the NBA season because it actually looks like Basketball again. Josh Giddey and Patty Mills are doing some good things too. Australia and England are heading to Brisbane to prepare for The Ashes. A preview will be out shortly. Sherry Latour, the owner of Tops Appliances and Cabinetry, joins Discover Lafayette to discuss her career journey and how she came to offer a Business Accelerator and resources to many small business owners. Sherry Latour bought Top's 12 years ago, after retiring in a sound fiscal position. She had previously worked as the CEO of a $100 million oilfield service company owned by entrepreneur Eddie Soileau, who also built one of his companies, Sunland Construction, into the largest merit (non-union) pipeline contractor in the U.S. Sherry's business acumen has been gained on the job. She entered the workforce right after graduating from high school with a 4.0. While she took accounting classes in high school, she took a few courses thereafter but did not pursue a degree. "I just didn't think I could pull off college, wanting to focus on family and having children." It was Eddie Soileau of Sunland who ended up mentoring Sherry and hired her as CEO of one of his companies. She had the opportunity to "dive deep, evaluate every system, and make it as clean and efficient as possible, adding value to its selling price.  Once the company was sold to a private equity company, I worked to help merge with other companies the equity firm owned, got it compliant to go public, while growing.  After we went public, I remained a few more years." She was 45 years old when she moved on. While she considered retirement, Soileau counseled her, "You're not the type of person to retire." So she looked for a company to buy and Tops fit the bill as it had all the elements she was looking for: "solid employee and customer base, good products to sell." Many people know Tops as the store on Johnston Street that sells appliances and cabinetry. TOPS has been in business for over 70 years. Tops Appliances and Cabinetry has been in business for over 70 years. Located at 5826 Johnston Street in Lafayette LA, the store specializes in top-end appliances such as Sub Zero, Wolf, and Cove. Our interview focuses on what is going on both within and outside of the Tops building. Sherry not only sells high-end appliances but houses fifteen growing businesses. She has formed a business and mentoring community at TOPS to help small businesses thrive as they navigate start-up challenges or are looking for a more meaningful space to conduct business. When Sherry purchased Tops, her immediate thought was business and not the sheer size of the property (64,000 square feet downstairs and 18,000 in the mezzanine) situated on 3.6 acres. One business that had previously been housed in Tops didn't survive the economic downturn after the BP oil spill and the drilling moratorium. So she looked for other businesses that might want to utilize the space. Today, inside Tops are construction-related businesses such as Architectural Windows & Doors and Brian S. Guidry Builders. Also found at TOPS are April Guillory Designs, and The Unconventional Dietician, Daphne Olivier, who holds cooking classes in TOPS' live showroom. Cajun Crate, an eCommerce business that ships Louisiana non-perishable food products and Cousins Smokehouse is also housed in TOPS. You will also smell the heavenly waft of products created by Charlie and the Peanut Butter Factory as you walk in the store, along with the delicious Pies created by Acadian Slice! In another turn of unfortunate events, rappers Oschino & Freeway lost sons this past week in Philadelphia. We expressed our sympathy. Last but not least, we remember Black Lives Matter, right? No? They raised a bunch of money for families who lost loved ones to gun violence and liberated African Americans from the oppression of the militarized police force. Only part of this explanation is factual. Money was raised. But we ain't heard about a family helped or seen a police department disassembled on account of BLM yet. Halloween is one of the most long-awaited holidays of the year. We're used to seeing peoples' creativity around this time of year from the spooky decorations to the spooky costumes and makeup, people go all out when it comes to this spooky holiday. What comes to your mind, when you think of Halloween? Scary movies to watch? Getting dressed up and acting the part of your favorite scary character? Or maybe it's trick-or-treating? Seeing kids and even sometimes adults walk around the neighborhood with their buckets of candy going from house to house, ringing the doorbell or knocking on the front door of some stranger's house. Then, when the door opens hearing their little voices yelling out, "TRICK-OR-TREAT!!!!" Then just like that each child is awarded some candy to put in their buckets of ever-growing candy stashes. Now, imagine that same scene being played out slightly different, instead of candy being handed out, freshly baked pies and cakes decorated with Halloween quotes, phrases and witty scary themes. I think parents and adults a like would certainly get into the Halloween spirit even more than some already do! No more flimsy candy bags, kids and trick-or-treaters would have to pull around wagons to carry all of their baked goods from one house to the next.

When Bryant made her way to Indiana less than two weeks later for a rally, gay activists welcomed her not with a pie in the face, but with Hoosier kindness. Lindsay is a mother of two daughters (her favorite sous chefs) and her watercolor and gouache illustrations have appeared not only in cookbooks and other editorial projects, but advertising campaigns, and stationery and interior design collaborations as well. Lindsay's wide-ranging artistic sensibility makes her a gentle interrogator of the world around her. Her food art has appeared in the Cookie Advent Cookbook, Pies, Fries & Ice Cream, and The Rituals, as well as Uppercase Magazine, Architectural Digest, StyleCarrot, Decorist, Vogue, among others. Originally from Grand Rapids, Michigan, she's been fortunate to live in the beautiful and vibrant locales of Oakland and San Francisco, CA, Chicago, IL, New York, NY and Middlebury, VT, and recently moved to northern Michigan.
