A Kiwi classic with added convenience. Rotorua has its first hot pie vending machine, stocked with the famous Maketū Pies. All ten varieties are on offer in the machine, which sits just outside the I-site and besides the Redwoods Treewalk. General Manager Craig Williams told Heather du Plessis-Allan the site was selected for visibility, with around 700,000 tourists passing through per day. He says a lot of international tourists are looking for a hot pie as part of their Kiwi experience, and the novelty of the machine will capture attention. Whether you love to use butter, shortening, or even lard, the important thing is to leave your fat a little chunky to create those flaky layers in your pie crust. If you prefer a rustic look and feel, a galette might be more your style. Hot tip: bake it in a cast iron skillet to avoid the mess if the filling leaks out of the pastry. When it comes to decorating the top of your pies and tarts, prepare your toppings in advance but wait to finish it off just before you serve it. Try adding cookies, fruit, caramel sauce or piped whipped cream to design your beautiful creations. We made Laura's recipe for a Raspberry Linzer Tart. Some might argue that pie is the quintessential American dessert. Certainly Stacey Mei Yan Fong makes that argument in her cookbook.
