Why do constraints so often lead to better results? In this conversation, Ravi chats with bestselling author David Epstein, who explains how limitations can spark creativity, improve focus, strengthen decision-making, and drive innovation across writing, business, sports, and technology. Drawing on stories from Haruki Murakami, David Chang, Pixar, Amazon, and NASA, David argues that success comes from balancing exploration with focused execution. The lesson is counterintuitive but powerful: having fewer options is often what unlocks our greatest potential. ––––– Leave us a voicemail with your thoughts on the show! 201-305-0084 Subscribe to our YouTube channel: https://www.youtube.com/@LostDebate Follow Ravi at @RaviMGupta Notes from this episode are also available on Substack: https://thelostdebate.substack.com/ Read more from Ravi on Substack: https://realravigupta.substack.com Follow The Branch at @thebranchmedia Listen to more episodes of Lost Debate on Apple: https://podcasts.apple.com/us/podcast/the-lost-debate/id1591300785 Listen to more episodes of Lost Debate on Spotify: https://open.spotify.com/show/7xR9pch9DrQDiZfGB5oF0F Listen to Where the Schools Went: https://thebranchmedia.org/show/where-the-schools-went/
David Chang, Chris Ying, and The Ringer's Sean Fennessey sit down over steak and spaghetti to discuss some of the most emotionally loaded beef in film history: the "overcooked" steak in 'Raging Bull,' a life-changing meal in 'Moonstruck,' class warfare on a plate in 'Snowpiercer,' Miranda Priestly's steak order in 'The Devil Wears Prada,' and more. What does it look like to spend 25 years covering a story you wish you could stop covering — and still refuse to despair? Gustavo Arellano is an LA Times columnist, Pulitzer Prize finalist, and the son of two Mexican immigrants. In this conversation he covers the Trump deportation machine, Rancho Libertarianism, why Americans hate Mexicans but love Mexican food, and what it actually looks like to stay in relationship across political difference. Calls to Action ✅ If this conversation resonates, consider sharing it with someone who believes connection across difference still matters. ✅ Subscribe to Corey's Substack: coreysnathan.substack.com ✅ Leave a review on Apple Podcasts, Spotify, or wherever you listen: ratethispodcast.com/goodfaithpolitics ✅ Subscribe to Talkin' Politics & Religion Without Killin' Each Other on your favorite podcast platform. ✅ Watch the full conversation and subscribe on YouTube: youtube.com/@politicsandreligion Key Takeaways The Deportation Leviathan: This isn't about policy logic or net fiscal impact. It's demonization as strategy, funded for decades, borrowed from California's Prop 187 playbook. Agents of Their Own Lives: Undocumented people are not a pitiful mass. They are individuals who make this country better. Framing them as victims does them a disservice. Rancho Libertarianism: The political identity Gustavo coined for Mexican hill-country values: bootstrap mentality, community pride, distrust of government, refusal to be used by either party. It explains a lot about 2024. Latinos Are Not a Monolith: Every community on his 3,000-mile pre-election road trip had its own story. None of it reducible to a single bloc. You Eat Their Food, You Start to See Them: Mexican food as cultural bridge. The problem with Chipotle is that it's a burrito gentrifier, displacing local traditions it doesn't care about. Stay in the Friendships: A Trump-supporting friend promised to take up guns for Gustavo if ICE came for him. Gustavo told him to start carrying his passport, “because you're darker than me.” The friend responded with a thumbs up. That, Gustavo says, was a victory. These Are Also the Best of Times: During Operation Wetback in the 1950s, the only people fighting back were communists. Today the resistance is broader than anything this country has seen on this issue. About Our Guest Gustavo Arellano is a columnist for the Los Angeles Times and the author of Taco USA: How Mexican Food Conquered America. He was a finalist for the 2025 Pulitzer Prize in commentary and part of the team that won the 2023 Pulitzer Prize in breaking news. The son of two Mexican immigrants, he has covered immigration, Latino politics, and the American Southwest for 25 years. #121Josh, Matt, and Mike are back for another trio episode, and things heat up right from the cold open as Mike unleashes a spicy critique of Danny Meyer's restaurant empire. Comparing Meyer's concepts to "safe, VH1-style" dining, Mike questions his public persona compared to boundary-pushing restaurateurs like Keith McNally and Stephen Starr. After the fiery start, the guys settle into discussing the intricacies of project management, prioritizing ideas using tools like ClickUp, the nuances of developing a burger blend over seven months, and Mike's past life as a bedroom musician. The temperature rises again when Matt dives into a heated debate about professional titles: What makes someone a Sommelier? If you step off the restaurant floor, are you a "former" Somm, or is it a lifelong title just like being a Chef? The trio wraps up the episode by exploring the anti-chef-driven restaurant movement, celebrating the brilliance of the original Momofuku Ssäm Bar, and Mike's full, unfiltered take on Meyer and the Eleven Madison Park buyout.Timestamps04:05 Parenting reflections and having a 10-year-old08:29 Using ClickUp and Replet for restaurant project management16:45 Wine blending, barrels, and case yields22:30 Why did it take 7 months to develop a burger blend?25:52 Mike's past life as a musician35:36 The Great Sommelier Debate: What defines an active Somm?42:26 Are TV personalities like David Chang still considered Chefs?56:23 The brilliance and innovation of the original Momofuku Ssäm Bar01:00:51 The anti-chef-driven restaurant movement01:07:18 Retirement, career transitions, and leaving the restaurant floorLinks and resources

Milk Bar founder Christina Tosi didn't set out to become a dessert icon. She just knew that if there was one thing she'd like to do every day for the rest of her life, it was baking cookies. That instinct led her from the world of New York City fine dining to the early days of Momofuku, where David Chang pushed Christina to pursue her passion for baking. Since then, Milk Bar has become synonymous with cereal milk ice cream and compost cookies, and Christina herself has won two James Beard awards, written numerous cookbooks, and turned Milk Bar into a cultural phenomenon. In this episode, recorded live at the Charter Workplace Summit in NYC, Christina shares the ingredients behind Milk Bar's success: a strong work ethic inherited from her parents, a sense of childlike wonder that she's never lost sight of, and a soundtrack – from Bob Marley to LCD Soundsystem – that reminds her to lose herself, find herself, and keep creating. Here are her songs: The Beatles, “A Hard Day's Night” Alanis Morissette, “You Oughta Know” Bob Marley and the Wailers, “Waiting in Vain” LCD Soundsystem, “Daft Punk Is Playing at My House” Listen to Christina Tosi's full playlist on Spotify. My guest today is Chef David Chang. He founded Momofuku Noodle Bar in 2004. That was just the start of his incredible career – he's opened several restaurants, winning awards and Michelin stars along the way, and becoming a fixture in the upper echelon of food. He's the host of the Netflix shows Ugly Delicious and Dinner Time Live, as well as his own podcast, The Dave Chang Show. For this episode, I talked to Dave about the song “I See a Darkness.” It's the title track on the album by Bonnie “Prince” Billy, aka Will Oldham, which came out in 1999. Later, Johnny Cash would cover “I See a Darkness” in 2000, as a duet with Will Oldham, as part of Johnny Cash's acclaimed American series. You can get Bonnie "Prince" Billy's "I See a Darkness" on vinyl or digital here. For more info, visit songexploder.net/david-chang.
