Today I am speaking with food historian Peter Gilchrist and food writer Ross Clarke, who specialise in writing about and rediscovering the traditional foods of Scotland and Wales, respectively.Peter is a returning guest who goes under the name Tenement Kitchen and is the co-host of The Scottish Food History Podcast. Ross is a food and travel writer and author of The Welsh Kitchen on Substack.They both use a bakestone or griddle (or whatever you call yours – there are quite a few names for the usually round, usually iron piece of iron we bake our crumpets, drop scones, muffins and Welsh cakes upon) and I thought we should discuss using them and some of the best of British bakestone bakes. We talk about the place of bakestones and griddles in British food culture, Welsh cakes, bannocks and pikelets, classic writers such as Bobby Freeman and F. Recipe Custard Cream 225 ml milk 2 egg yolks 75 g caster sugar 10 g plain flour, sieved 10g cornflour 250ml double cream Simmer the milk. Whisk the egg yolks, sugar, cornflour and flour and then pour over milk. Whisk well and return to pan over low heat. Stir constantly until custard is thick. Pour into a bowl and cover surface with cling, cool and chill. Whip the cream to stiff peaks and fold in the custard.Poached rhubarb 4 thin sticks rhubarb, cut into 2cm pieces 75g castor sugar 150ml water Place the sugar and water in a saucepan and simmer until sugar has dissolved. Add the rhubarb and grenadine and gently simmer until just done – keep an eye to make sure it doesn't over cook. Cool. Pastry Crisp 1 pack ready rolled puff pastry Icing sugar for dusting Line a baking tray with parchment paper and set oven to 180oc. Dust over the top with icing sugar evenly with a sieve. Place another sheet of parchment on top and then top with a baking tray. Bake for about 15 minutes or until pastry is crisp and golden. Divide into 8 rectangles with a serrated knife. To assemble 250ml double cream whipped Fold the custard into the cream. Spoon a quarter onto 4 of the pastry crisps. Top with rhubarb Top with another crisp and dust with icing sugar

   Our theme today at KKHI is a whole bunch of messes people are cleaning up.  Hawaiian Bros is a fast food chain that originated in KC and their Royals promotion of giving away free lunch when the Royals score 6 or more was just crushing their business.  So they've changed it.  It reminds me of the historic, high scoring Chiefs of 2002 and 2003 when I started the "Custard's Last Stand" Club that featured our radio sponsors giving percentage discounts equal to the points the Chiefs scored the day before.  Get this:  We even sold brand new cars for half price.  It was chaos.    Fresh off is appearance as fill in White House Press Secretary, Marco Rubio is now the odds on favorite to be president according to prediction site Kalshi.    A family gets a free pool and you won't believe how this happened.  A college women's soccer team gets beaten by a 13 year old boys team.   Golden Tempo won't run in the Preakness and that's a lame as it gets and the NY Times isn't going away any time soon.
