When I was recently reaching out to unique non-profits across the US I came across Icing Smiles, and I was so excited when they said "yes"! Icing Smiles is an organization that bakes cakes for families who have a child battling a critical illness. They found that one simple way to make a child smile when they are going through something so difficult is to bake them a cake. And it works! Chef Charity grew up in Southern California, as the oldest of 6 children. She started performing in musical theater when she was just 4 years old. Charity damaged not one, but 2 Easy Bake Ovens as a child before her mother decided to teach her how to use the “big” oven. By age 12 she had tapped out her mother and grandmother's cooking knowledge and hit the books as she wanted to know more. As A 6th grader, she entered her first cake competition/auction. When she was 16 she went to work for a local custom cake shop called Flour Power in a nearby town. After her first year at University, where she was majoring in International business and minoring in Voice and French, she went to culinary school in Paris, France at Le Ritz Escoffier, although she didn't finish her degree there. After working in various industries; computer, graphics, radio, entertainment, restaurant and grocery, commercial food production, she finished her degree at Grossmont College in Pastry Arts. Chef Charity is the Pastry Chef and Cake Artist for Nailed it! On Netflix. She's the magic hands that makes all the cakes and other treats the contestants attempt to copy in the Emmy Nominated comedy baking show on Netflix. Charity specializes in chocolate and sugar art particularly with regards to wedding, specialty and extreme cakes. She has also specialized in baking and cooking for those with food allergies and sensitivities, which she terms “Free Baking”. Charity owns d'Zrt Cake Studio, and resides with her 3 children in San Diego, CA. Charity is also President of the Board of Directors for Icing Smiles. Icing Smiles is a non-profit organization that provides custom celebration cakes and other treats to families impacted by the critical illness or medical crisis of a child. As a medical mom (2 of her 3 children have medical challenges, Leukemia, Spondylo Arthritis & Crohn's disease) and a cake artist, Chef Charity is an excellent fit as a member of the board for Icing Smiles. www.icingsmiles.org Although she's had a 30+ year career in food, for the last 16 years she has worked exclusively with cakes, pastry, sugar and chocolate. In March 2013 Craftsy.com released it's first Isomalt (sugar art) class, taught by Chef Charity. The educational site, YummyArts.com has a catalog of Chef Charity's classes. She's also a judge at numerous cake shows/contests and teaches sugar and cake arts across the country. Television appearances; Charity's been a contestant on TLC's Ultimate Cake Off twice in season 2, was featured on TLC's Fabulous Cakes and the Niecy Nash Wedding Bash. On Food Network Charity has appeared on Cake Wars and Halloween Wars (season 2, 5 & 7). She was then a special guest Chocolatier on the Valentines episode of Cake Wars in 2016. Charity was featured on the pilot episode of SugarDome that aired as a special of Cupcake Wars called Cake Wars. The pilot episode of Caketastrophe was based on an Icing Smiles story, and Charity was also a part of that show. Charity has appeared on numerous cooking segments for news stations and news magazine shows in San Diego and Los Angeles. Since production began in 2017, Charity has been the “Secret Chef” = Cake Artist and Food Stylist for the entire Nailed it! series (Mexico included) on Netflix which originally released early 2018. Nailed it! Has filmed 49 episodes as of early 2020 and was nominated for an Emmy Award in 2019 and 2 Emmy Awards in 2020. Charity was featured in the Icing Smiles episode on season 2 of Making Good on BYUtv. Charity has been featured on podcasts with Pastry Arts Magazine, and About to Break. She's written columns for magazines, Edible Artists Magazine, and done tutorial spreads in American Cake Decorating Magazine. She's been featured in Bake Magazine, Dessert Professional and others. She was one of the top 10 Cake Artists in 2014 in Dessert Professional Magazine.
Tracy's expertise is in the field of accounting and tax, with more than two decades of experience as an international tax specialist in both the public and private sectors. A licensed CPA with a master's degree in taxation, prior to founding Icing Smiles, her experience in the baking industry was limited to watching the TV challenges and absorbing as many techniques as possible to create cakes for her two children. Little did she know that Icing Smiles would be embraced by the baking community on an international level, and she would find herself in the most challenging role of her career. Tracy is mom to Emily (18) and Justin (16). In addition to Icing Smiles, she also works as a Senior International Tax Manager for Echostar Corporation in Germantown, MD. She credits her ability to “juggle” her passion and her profession to the talented team at Icing Smiles, a partner who has embraced this insane journey and kids who fully understand the value of serving others….and to the belief that where God guides, God provides. Tracy Quisenberry is the mother of two premature babies and saw firsthand the hardships families face in similar situations. While on medical leave with her son, she fell in love with the craft of cake decorating—little did she know where that would lead. Since 2011, this self-taught baker/decorator and aspiring bakery boutique owner has perfected a variety of techniques with her fresh homemade cakes as the foundation. For many years Michele balanced a career as an "educator by day, baker by night", however, the pandemic encouraged a pivot. After 10 years, she officially transitioned out of public education. She has now combined her love for cake and education by solely operating Skye Confections LLC as an online bakery and Skye Confections Academy for virtual Cakin' classes. Michele's passion for excellence is evident as she strives to create modern desserts which taste just as good as they look and develops classes to help youth and adults learn to do the same. This week on the podcast my husband joins and we catch you guys up on Ollie’s end of oral treatment and how we celebrated with family far and near! We rave about Icing Smiles and how they made his 4th birthday party EXTRA special! And we touch upon some positive improvements now that our son is finished with his treatment. We hope you laugh with us as we navigate parenthood despite being sleep deprived, our love for online shopping, and how as a family we’re adjusting to life after our son’s treatment and all the emotions that go with it while keeping our sense of humor in the process. I felt it was important to document this part in our journey because I often flash back to the early days in our son’s treatment and the deep, dark feeling of hopelessness. This is the episode that I wish I had access to back then. My wish is that someone, somewhere finds this and it’s able to restore a glimmer of hope in their darkest hour. Elisa Strauss founded Confetti Cakes in 2000. She is a graduate of Vassar College and The Institute of Culinary Education, where she received a degree in pastry and baking arts. Elisa also spent one semester studying at the Art Institute of Chicago. Prior to culinary school, she worked as a designer for Ralph Lauren. In fact, it was a cake she made for Ralph (in the shape of a Bugatti, his favorite sports car) and the heaps of praise it received from fashion industry notables that inspired her to bring her design talents to the kitchen full-time. Her creations have appeared on the Today show (one of her cakes was selected as the winner of the “Today Throws a Wedding” series), Sex and the City (she made Charlotte and Harry’s wedding cake during Season Six), The View and Martha. Elisa has also been featured on The View, and has appeared over ten times on the Food Network, including the “Extreme Cake Challenge” where she won the grand prize. Confetti Cakes has also been featured in InStyle, Martha Stewart Weddings, Marie Claire, Seventeen, Elle, Vogue, Modern Bride, New York, BRIDES, Elegant Bride, and The Knot. And in 2008 was selected as one of America’s Top Ten Pastry Chef’s in Pastry Art and Design. Elisa’s first book, The Confetti Cakes Cookbook: Spectacular Cookies, Cakes and Cupcakes from New York City’s Famed Bakery, was released in Spring 2007 and is in its sixth printing, while her second book entitled Confetti Cakes for Kids was released in the Fall of 2008. In 2010, Elisa stopped making cakes for clients to focus her business on online tutorials, teaching, product design and special consulting projects. She’s busier than ever working with manufacturers, culinary schools, and television producers. In addition to her work in the kitchen she is an active board member and supporter of Icing Smiles, an organization that provides critically ill children with custom cakes. She also serves on the advisory council at The Institute of Culinary Education. Whether it's putting a smile on an ill child's face, delivering a stunning floral wedding cake, or contacting state legislators to change the law, Kathy Cherie is always baking a difference in her community. Kathy lives in Elk Grove Village, IL and has operated her cottage food business, Cake Du Jour, for nearly 40 years. Her business is somewhat under-the-table, except that her health department has known about it for decades. Kathy would love to help the next generation of bakers in Illinois do what she could not: run a home bakery legally. Her county (Cook) still doesn't allow home kitchen operations, so she continues to advocate for a statewide law. Although she loves baking for all occasions, she especially loves donating "dream cakes" through the charity Icing Smiles, where she gets to support families with a critically ill child. She has made over 20 dream cakes so far. Icing Smiles is a national nonprofit that provides celebration cakes to critically ill children and their siblings. The organization will celebrate its 10th birthday and honor the memory of one of its Columbus recipients from 7-9 p.m. on Friday at the Columbus Ronald McDonald House.
