This week's episode is a repost from my friend Jenna Knapp and her Dear Self With Love Substack. Note: This was not supposed to be a podcast. Jenna originally sent me a Google Form asking me to share my experience as a Dear Self With Love planner user. My intuition instantly wanted to respond to these questions, but instead of typing the answers out; I connected my computer to my microphone, put my headphones on, and hit record (and let's be honest, did a few practice sessions). I knew I wanted to use my voice, in a big and bright way that shows you who I am, imperfections and all. Visibility is not always easy for me despite being on two cooking TV shows including Chopped! on the Food Network. My comfort zone lies in interviewing others. This time, I decided to try the other side of the mic and answer Jenna's questions. As you will hear, this is more than just a planner. She boasts extensive experience as a food and prop stylist, with a vast array of clients. Her journey began as a young ballet dancer and was a creative child who eventually landed a career as a dental hygienist—a role she continues to fulfill today. Jody delves into her interpretation of beautification, which Tommy links to her involvement withvisual, performing arts, and design. As longtime member of Aging but Dangerous Women, “a movement focused on healthy aging and living dangerously through fun, spirit and style”, she was a part of a select group ranging in age from 50-80, who modeled for large charity events.Her career in the film industry included various positions on feature films, cable television shows, commercials, high end corporate videos, catalogue and print media advertising.  After being hired as a food stylist for an informercial for Ron Popiel's Rotisserie 2000, Jody narrowed her scope of work to food and prop styling. For several months in 2006, she worked as an in-house producer for Andrew Zimmern, coordinating with his radio show and television segment producers, and doing research in support of his columns and written publications. She shares insights into the techniques and props employed in food photography, such as those seen in the "Got Milk"; campaign where yogurt was used. Questions arise about the financial prospects, competitiveness, and outlook of this profession.Jody's contributions extend beyond her career, as she  served for many years on theboard of Minnesota Women in Film & Television and being involved with Women WhoReally Cook, an organization of professional women in the food industry. Since graduating from Culinary School in NYC in 2010 Jo Keohane freelanced as a Recipe Developer and Food Stylist in test kitchens of many America's best known publications, like Bon Appetit Magazine, Epicurious and Saveur. She has also worked with a variety of household brands like William Sonoma, Weightwatchers, Staub Cookware, Danone, Kraft and more. She started off life as a BBC journalist and then worked in PR in London. But a love of cooking and a desire to find a fulfilling career which would allow her to spend more time with her 3 kids took her back to school to study cooking. After moving to the USA in she was lucky enough to attend the Institute of Culinary Education in New York City. Now she runs her own food blog - The Family Food Kitchen - helping other busy families to eat well even when time is short! her blog focusses on easy, delicious and do-able recipes - and contains lots of one pot, sheet pan and easy meal ideas. In this episode, you'll learn about what to consider before you start shooting your recipe, including how to layer and pick ingredients, backdrops, props and garnishes. - Food Styling is a Problem Solving Exercise: During recipe development, plan ahead to make sure your ingredients will help you make your dish look appealing. - Don't Hold Back on Good-Quality Ingredients: Better quality ingredients will have more vibrancy and make your photos pop more. - Create Depth and Movement in Food Photography: Use layering to create depth in your photos and take photos of movement (e.g. pouring a sauce). - Balance Perfection and Authenticity: While it's important to make your photos look appealing and create intrigue avoid overly perfect photos - crumbs and spills in small quantities add character. - Proper Ingredient Storage: Store ingredients to maintain freshness and quality. For example improper storage of herbs can lead to wilting and might detract from your photos. - Adjust Cooking Times for Food Photography: There's a difference between cooking to eat food and cooking for photography. Adjust cooking times to ensure that the food looks its best on camera. - Use Props and Tools for Food Styling: Jo discusses the importance of having a set tray with essential tools and props for food styling, such as sharp knives, tweezers, Q-tips, paper towels, toothpicks, spritz bottles, squeeze bottles, spatulas, and brushes to aid in food styling. - Layering Garnishes to Enhance the Dish: Use different garnishing techniques to elevate the appearance of dishes for photography. Burger King's landed in court over its marketing for the Whopper burger; central to the dispute is whether the chain's instore menu boards are so misleading in their depiction of the burger that it's a breach of contract. Customers in the proposed class action claim Burger King portrays its burgers with ingredients that "overflow over the bun," making it look at least a third bigger than it is, with more than double the meat. In today's episode, we talk with Rachel Lewis, who checks several boxes in the land of creative.  At the beginning of season 3, Catherine and Steve wondered aloud about bringing in not only chef, foodie type people, as we have consistently thought that being a chef required a combination of what we think is the more traditional create spirit coupled with the more precise measuring and scientific mindset. We were looking to take it a but further though, as we wanted to talk with a chef who abides by additional rules and guidelines, and expressively mentioned a vegan chef. Enter Rachel Lewis. As you will hear early in the interview, she answered and ad Steve put out seeking a lead singer for his band, Butterfield Creek.   Before she even auditioned, it was learned that she's the co-owner of Sunshine Kitchen a vegan and gluten free food truck south of Chicago, that she's been a personal chef for several families with similar food restrictions, and as a bonus, she's also a food stylist who's worked on many huge contracts and campaigns. Chef Charity grew up in Southern California, as the oldest of 6 children. She started performing in musical theater when she was just 4 years old. Charity damaged not one, but 2 Easy Bake Ovens as a child before her mother decided to teach her how to use the “big” oven. By age 12 she had tapped out her mother and grandmother's cooking knowledge and hit the books as she wanted to know more. As A 6th grader, she entered her first cake competition/auction. When she was 16 she went to work for a local custom cake shop called Flour Power in a nearby town. After her first year at University, where she was majoring in International business and minoring in Voice and French, she went to culinary school in Paris, France at Le Ritz Escoffier, although she didn't finish her degree there. After working in various industries; computer, graphics, radio, entertainment, restaurant and grocery, commercial food production, she finished her degree at Grossmont College in Pastry Arts. Chef Charity is the Pastry Chef and Cake Artist for Nailed it! On Netflix. She's the magic hands that makes all the cakes and other treats the contestants attempt to copy in the Emmy Nominated comedy baking show on Netflix. Charity specializes in chocolate and sugar art particularly with regards to wedding, specialty and extreme cakes. She has also specialized in baking and cooking for those with food allergies and sensitivities, which she terms “Free Baking”. Charity owns d'Zrt Cake Studio, and resides with her 3 children in San Diego, CA. Charity is also President of the Board of Directors for Icing Smiles. Icing Smiles is a non-profit organization that provides custom celebration cakes and other treats to families impacted by the critical illness or medical crisis of a child. As a medical mom (2 of her 3 children have medical challenges, Leukemia, Spondylo Arthritis & Crohn's disease) and a cake artist, Chef Charity is an excellent fit as a member of the board for Icing Smiles. www.icingsmiles.org Although she's had a 30+ year career in food, for the last 16 years she has worked exclusively with cakes, pastry, sugar and chocolate. In March 2013 Craftsy.com released it's first Isomalt (sugar art) class, taught by Chef Charity. The educational site, YummyArts.com has a catalog of Chef Charity's classes. She's also a judge at numerous cake shows/contests and teaches sugar and cake arts across the country. Television appearances; Charity's been a contestant on TLC's Ultimate Cake Off twice in season 2, was featured on TLC's Fabulous Cakes and the Niecy Nash Wedding Bash. On Food Network Charity has appeared on Cake Wars and Halloween Wars (season 2, 5 & 7). She was then a special guest Chocolatier on the Valentines episode of Cake Wars in 2016. Charity was featured on the pilot episode of SugarDome that aired as a special of Cupcake Wars called Cake Wars. The pilot episode of Caketastrophe was based on an Icing Smiles story, and Charity was also a part of that show. Charity has appeared on numerous cooking segments for news stations and news magazine shows in San Diego and Los Angeles. Since production began in 2017, Charity has been the “Secret Chef” = Cake Artist and Food Stylist for the entire Nailed it! series (Mexico included) on Netflix which originally released early 2018. Nailed it! Has filmed 49 episodes as of early 2020 and was nominated for an Emmy Award in 2019 and 2 Emmy Awards in 2020. Charity was featured in the Icing Smiles episode on season 2 of Making Good on BYUtv. Charity has been featured on podcasts with Pastry Arts Magazine, and About to Break. She's written columns for magazines, Edible Artists Magazine, and done tutorial spreads in American Cake Decorating Magazine. She's been featured in Bake Magazine, Dessert Professional and others. She was one of the top 10 Cake Artists in 2014 in Dessert Professional Magazine.
