Noel is famous for his amazing time as Master Distiller at Cooley Distillery, where he became responsible for releasing alot of the amazing Irish whiskeys that we all love today. His Cooley malts and single grains are still being released by different brands and bottlers to this day, to massive plaudits. Right now, one of Noel's focuses is on his blended whiskey from his collaboration with the famous dancer Michael Flatley called...... Flatley Whiskey. He was at the Cork on a Fork festival in Cork in August 2024, where we sat down for a Live audience chat, as one of the many events at the festival. Join me for My Distillery Chat with Sarah Dowling, Cooley Distillery's Head Blender. I have wanted to see beyond the gates of the iconic Cooley Distillery for years. I finally got the opportunity and Head Blender and ex Distillery Manager Sarah Dowling showed me around. To say it was amazing is an understatement. It turns out that Cooley is a little bit boutiquey..... not the behemoth that everyone thinks it is. It is medium craft distillery that has left a very large footprint on Irish Whiskey and it was an honour to be shown around by Sarah. Full disclosure: I had microphone issues for this podcast, but with a sprinling of magic and wizardry, I managed to isolate the voices and save the podcast. The revival of Irish whiskey is real - I have seen it first hand. And after traveling the entire island of Ireland and Northern Ireland, I can see first hand the results of a country's passion for its lost heritage. One of the men who was at the forefront of the new breed of Irish distillery owners is Jack Teeling. And Jack has been a part of two different phases of Irish whiskey's expansion beyond the one time monopoly of Irish Distillers, Ltd - first with his father John Teeling at Cooley Distillery and the second time as one of the new young guns of Irish whiskey when he opened Teeling Distillery in Dublin with his brother in 2015. Hear his story.

In episode 13 we talk to Alex Chasko Master Distiller and Blender at the Teeling Whiskey Company. Alex has been in charge of the distilling and maturation programme at Teeling since the company was founded in 2012 and the distillery was commissioned in 2015. He started off as a brewer in Portland Oregon and went on to study distilling at Herriot Watt before joining The Kilbeggan Distilling Company (aka Cooley Distillery). It is his work at Teeling that has been most noticeable and in many ways he has helped lead the revival in Irish distilling with some pioneering work on unconventional grains, wood types and barrel finished. As always he was great to talk to, unfortunately zoom caused us some technical problems and the sound quality suffered a bit. Alex Chasko isn't your typical Irish Whiskey master distiller and blender. For one, he isn't Irish. He grew up in Portland, Oregon and found his way to Ireland by falling in love - not with Irish Whiskey, but with the Irish-born woman who became his wife. Alex started out at Cooley Distillery, and when the Teeling family sold it at the end of 2011, he moved on with Jack and Stephen Teeling to start the Teeling Whiskey Company in Dublin. Four years after they fired up the stills for the first time in their Newmarket Square distillery, Teeling Pot Still Whiskey is on the market in Ireland and will soon be available in the United States, while one of their 24-year-old single casks won the World Whiskies Award for "Best Single Malt Whiskey" earlier this year. Even though his last name isn't Teeling, he's become part of the family...as you'll hear on WhiskyCast In-Depth. We'll also have details on this week's record-shattering whisky auction in London and the rest of the week's whisky news, along with some distillery ghost stories to get you in the mood for Halloween!

John Teeling is widely regarded as the father of the Irish whiskey renaissance. As a doctoral student at Harvard in 1970 he examined the collapse of Irish whiskey from having about 60% of world sales in 1850 and hundreds of distilleries, to becoming a monopoly in 1973 with less than 2% of Scotch sales. He made the decision to set up a new distillery. It took 16 years to get the resources to do so. In the meantime he lectured in Business Administration at University College Dublin and developed a series of mining and oil exploration companies. In 1986 he set up Cooley Distillery followed 19 years later with the re-opening the long closed Locke’s Distillery in Kilbeggan. The key element in Cooley was to have both column stills and pot stills. This enabled Cooley to distil and supply a full range of whiskies from heavily peated to single grain. Over the years a range of Irish whiskies appeared on shelves around the world. The venture took 11 years to make a profit and 15 years to payback but changing tastes in the early 2000s favoured Irish whiskey and sales boomed. Cooley was bought by Beam/Suntory in early 2012.In 2013 John re-entered the business by acquiring the Harp brewery in Dundalk and setting up the Great Northern Distillery. Two large distilleries came on stream in 2015, pot stills and column stills. Once again, The Great Northern is now supplying a wide range of new make malt, pot still and grain whiskey to small distillers, Private Label and Retail Own Label customers.John is married for 45 years to Deirdre with 3 children. Jack and Stephen have built the Teeling Whiskey Distillery in Dublin, the only operating distillery in the capital. Emma is a Professor of Science.John holds degrees from University College Dublin (B Comm., M Econ. Sc.), the Wharton School at the University of Pennsylvania (MBA) and a doctorate from Harvard Business School.Patrick Dalywww.albalogistics.com Author of the book International Supply Chain Relationships:Creating Competitive Advantage in a Globalized Economy See acast.com/privacy for privacy and opt-out information.

Oliver Hughes and his partners in Ireland's Porterhouse Group opened Dingle Distillery in late 2012, just as the Irish craft distilling boom was beginning. Dingle was Ireland's first new distillery in 25 years since the opening of Cooley Distillery in 1987, but Hughes barely got to see the first early bottlings of Dingle Whiskey before his death in 2016. Today, his family and colleagues have taken Oliver Hughes's dream and are building on it, with the first exports of Dingle's single malt whisky to the United States coming later this year. We'll visit the distillery and talk with some of the people carrying on that mission on this week's WhiskyCast In-Depth.
