Since 2015, Mundell, with his unbridled enthusiasm and unmistakable burr, has taken on an unlikely endeavor: pushing Japanese whisky. Living in Southern California and representing much of that region, Mundell recalls a time in the not-so-distant past when casual consumers expressed little interest in the intricacies of scotch malt. Desperate retailers were eager to bring in a Scotsman, as basic brand messaging can be surprisingly captivating when couched in a native accent.But Mundell proved to be much more than a gimmick. “The rise of the craft cocktail community at that time was changing the way bartenders pursued education,” he says. “So I made the choice to educate bartenders on the category. I brought to life Scotland and whisky production through history, geography, and production.”

Episode 2 of our Interview Series! This time we get to chat with the former CEO & Director of the Institute of Brewing & Distilling, Douglas Murray. If you want to have the best technical knowledge of whisky production and spirits production in general, the institute is where you MUST go. I had to sit down and interview them so us folks in the USA could learn all about this UK-based program. Charles and I also have a lot to discuss before we get into the interview though. He just got back from two weeks in Japan and has a lot to share. We also talk about some new bottles in the shop since he's been away and he blind tastes me on something that he got while in Japan. But, is it Japanese Whisky?? This episode was such a blast for me and I feel honored that Douglas took an hour out of his day to chat with me. Not only do we talk about the IBD (Institute of Brewing & Distilling) and all of the courses they offer but we also chat about Talisker, Dalwhinnie, and some of the other Diageo distilleries he's worked at. He was a part of creating the Talisker Storm release and was also one of the folks who realized they needed to put the worm tubs back in at Dalwhinnie when they were renovating and changed to shell & tube! Oh and we take over ten minutes to go over worms versus shell & tube condensers. Jota Tanaka has worked for Kirin Brewery Company for 34 years, leading its whisky business as master blender since 2017.He's had a really interesting career path through the Kirin business to arrive at his current role, including stints in winemaking, wine marketing and leading product development for Four Roses Distillery in Kentucky.We'll get into some of that in this interview with Jota, who was inducted into the Whisky Magazine Hall of Fame in 2022, one of many career accolades he's received in recent years.Today, Jota is pouring his passion, skills and experience into Kirin's flagship whisky brand Fuji, which is produced at the Fuji-Gotemba distillery at the foot of Mount Fuji.Established in 1973, Fuji-Gotemba is one of very few distilleries producing both malt and grain whisky at the same site, which explains the unusual labelling – Single Blended – on the newest Fuji Whisky expression.This is a special episode of Drinks Adventures, produced in partnership with Fuji Whisky.Coming up, Jota and I explore the many different facets that make Fuji unique, including its unwavering commitment to releasing whisky when all the component parts have reached peak maturity, rather than at a certain age.He shares his experience working at the distillery when Japanese whisky was at its lowest ebb, versus the boom times of today.As Jota explains, it's quite remarkable that Fuji-Gotemba survived the downturn at all, with another distillery, Karuizawa, famously shuttered during this period.Jota has also been actively involved in Japanese whisky industry activities to protect the integrity and reputation of Japanese whisky by assisting in the setting of labelling standards. Created by Sazerac Master Blender Drew Mayville, a founding member of The Last Drop Assembly's panel of spirits industry experts, this bespoke spirit comprises a blend of vintage straight bourbon and rye whiskeys. Impossible to replicate, 1,458 bottles will be released worldwide and available in the U.S. as of October 2022 at a suggested retail price of $3,999 (750ml/121.4 proof). Since becoming Sazerac's Master Blender in 2004, Drew has cultivated a dream of creating an ultra-rare whiskey for the most discerning of connoisseurs. To achieve this, he began preserving extremely small quantities of his favorite whiskeys at Buffalo Trace Distillery to fulfill this vision. He was confident that using his lifetime of expertise, knowledge and his masterful palate, combined with the incredible liquids available to him, he could make a unique and unparalleled blend. To bring his vision for The Last Drop to life Drew blended vintage whiskeys that he had been saving since he joined the Buffalo Trace Distillery team. He tasted more than 40 different vintage bourbon and rye whiskeys, creating multiple combinations of these spirits before arriving at the final masterpiece that bears his signature. Bottled at 121.4 proof, Drew left this high-proof blend uncut and unfiltered to maximize its flavor and complexity. The resulting liquid is a celebration of the art of blending, allowing the individual components to shine while creating a majestic whole that is truly remarkable and impossible to replicate. Drew uses the analogy of an orchestra to explain his intention: “As a master blender, I wholeheartedly believe that one can take individual components that are already exceptional to create an extraordinarily-beautiful end product,” says Drew. “As with music, a clarinet can be beautiful in its own right. However, when you combine it with other instruments in an orchestra you create a symphony – a masterpiece. This blend fully epitomizes this notion, and it's been a dream come true to create this truly one-of-a-kind spirit for my friends at The Last Drop.” Drew's Blend follows The Last Drop Distillers first Signature Blend: a 50 Year Old Blended Scotch Whisky created by Master Blender Colin J.P. The high proof can be seen in the long legs which linger on the glass. NOSE: This reminds me of walking into one of Buffalo Trace's most famous warehouses, built all those years ago: the atmosphere, the history and the provenance – it packs an evocative punch. Deep, dark fruit, figs, and dates on the nose, some raisins, and an aromatic spiciness, with citrus zest. There is some spiciness from the straight rye, and a creamy, vanilla from the bourbons, yielding a complex and layered flavor. PALATE: To begin with, there are dark fruits, candy and orange peel upfront. From there, we begin a journey through a veritable spice merchant's storeroom, and into a saddle room full of worn leather and wax. The ages of the whiskeys in this blend, and the magnificent impact of the American oak are here in perfect balance with the individual elements of the blend. A crescendo of rich and raw spiciness transitions across your palate: that balance is pure magic. CONCLUSIONS: The spiciness is challenging the dark fruit, the chocolate notes, and the sweet vanilla. This is the balance and sophistication that arises only rarely when the tangy spice of the rye and the creamy chocolate of the bourbon whiskeys - combined with the sublime influence of the oak - all collide in perfect harmony. Each bottle of The Last Drop Signature Blend of Kentucky Straight Whiskeys is individually numbered and bears Drew's physical signature. Our guest is Tomo Matsushita who is the spirit sommelier at Copper & Oak in the Lower East Side, New York. Spirits are very popular in the U.S. If you look at the alcohol beverage market in 2021, beer was the most popular, which accounted for 43% of the market. Spirits were almost as popular as beer and their market share was 41%, and the remaining was mostly wine. Spirits are delicious but if you don't know much about them, it is hard to choose what to drink. Our guest is Marcin Miller who is the founding partner of the Kyoto Distillery in Japan. The distillery is the maker of the award-winning beautiful Japanese-style craft gin called KI NO BI. Before he co-founded the Kyoto Distillery in 2014, Marcin has been in the spirits industry for a long time as a writer, importer, distributor and consultant. Until very recently, no one would have expected that Japanese-made gin would become popular nationally as well as globally, but the Kyoto Distillery initiated the current Japanese gin boom. Marcin and his business partners David and Noriko Croll launched KI NO BI in October 2016 and popular brands like Roku, Sui, Nikka Coffey and other craft labels quickly followed.
