    What is in season is something we should be asking ourselves every season. Here's the recipe for Jerusalem Artichoke Soup: 2 tablespoons of olive oil 1 shallot or leek peeled and chopped 1 medium carrot grated 2 stalks of celery grated 1 tablespoon of Confit Garlic (check out my Youtube on how to make it) 900 grams of Jerusalem artichokes peeled and sliced 900 grams of vegetable stock, remember when you blanche your vegetables to keep the water the minerals are in that water, place it in an airtight container and date it so you know when you made it. 60 ml of coconut cream 30 grams of chives washed and roughly chopped Celtic salt and cayenne pepper to taste. Instructions: Heat the oil in a large saucepan add the shallots or leeks, celery, carrots and garlic and gently saute when the soffrito has softened after about 5 minutes, add the jerusalem artichokes and stock bring to boil, reduce the heat and simmer gently for about 20 minutes or until the soft. Blend the soup into a food processor then place into the saucepan add the cream and season to taste this is a great super soup!     Hi there, in this episode I share with you my friend Cathy who runs a local radio broadcast called the Daily Mirror Heres the recipe for the croquette: Large knife Cutting board large pot for frying Colander to strain potatoes Potato ricer Medium bowl with egg wash 2 Large bowls one for potato mixture, one for breadcrumbs Large baking sheet with baking paper Slotted spoon 1 kg Desire Potatoes  1/2 cup of Parsley Chopped 3 tbsp Pecorino cheese or Parmesan cheese Proscuitto Crudo, about 4 slices, if you want you don't have to put it in. Mozzarella cheese 2 Eggs 1 for mix, 1 for egg wash 1 tsp Nutmeg optional Bread crumbs Fresh is best or Panko Breadcrumbs Salt & Pepper Sunflower oil or Canola Oil, for frying Wash your potatoes, then cut them in half—no need to peel them for this recipe. Add the potatoes to a large pot with water and boil on medium-high heat for 20 minutes. While the potatoes are cooking, dice the prosciutto crudo and mozzarella. This helps the cheese melt inside the potato croquettes. Cool the potatoes slightly; they need to be warm for mashing. Then using the potato ricer, mash them into a bowl and let them cool for another five minutes. Add the parsley, pecorino cheese, salt, a generous amount of pepper, and one egg into the cooled mashed potatoes. Don't be afraid to add more pecorino if you want! Mix the potato mixture using one hand until well combined. It's time to shape and add the filling into the potato croquettes. Wet your hands, have a side dish with water this will help you to dip your hands into it and then scoop up a portion of potato and flatten it, leaving a dent for the mozzarella and ham filling. Once filled, close the croquette and roll it into a log shape, ensuring the edges are square. Set aside on a tray lined with baking paper. Repeat until all the potato croquettes are formed. Add oil to a large pot and have your stove on medium-high heat. Cover the potato croquettes with beaten eggs and breadcrumbs one by one, making sure they're completely covered. Set aside once you have done this step so they can rest and firm up. Place croquettes (depending on your pan, make sure that they are loose so that they have room to fry) into your hot oil and gently stir as they cook for three minutes or until golden brown. When each one is ready, remove the croquettes with a slotted spoon. Drain each batch on a plate with paper towels and repeat until all the potato croquettes are cooked. These croquettes are street food in Sicily, you can place them into a roll and mangia enjoy!     Well once again we chat about food. There are so many ways of cooking swordfish, grill, bbq, meatballs (polpetti) fried, oven, skewers (involtini) my memories are rich, the side salad of caponata- fried eggplants, celery, onions, olives, capers, pine nuts, red peppers in a sweet and sour dressing made up from white wine vinegar and sugar makes this summer salad delectable! And then I wander and chat with you about my second son Mathew who is homeless. Oh dear life certainly isn't easy, I could have crawled into a hole and dug myself a deep pit and stayed there, but no I am grateful that I have been able to see this situation with different lenses, it took years for me to see it this way. You will need: 4 artichokes cleaned and quartered placed in a bowl with lemon and ice water Virgin Olive Oil 1/2 a spanish onion diced 1 glove of garlic crushed 300 grams of broad beans pealed 200 grams of fresh peas or frozen 1/2 cup of mint leaves pecorino cheese lemon zest white wine vinegar of homemade white wine vinegar serve with lemon wedges, grated pecorino cheese and fresh mint leaves, eat with fresh bread, a glass of wine and enjoy! The memories that I share with you are priceless every time I remember it brings back much joy, happiness, and great wealth my way, in return I want to share with you, hoping that you feel that connection that food brings to us.     What is the recipe for happiness? Believe me there really is a recipe for happiness. We search our entire life, it is there always within us it is about unlocking it, discovering it within. choice, make it a contract with yourself. implement it into your life, make room, for the seed to grow. Create a place where you feel happy and build from there. Build the bricks, like? what makes you happy? find your happy place, stop looking as you will exhaust yourself, everything you need is within. Surround yourself with friends and people who are like minded. Make it a daily ritual where you live happy. Happiness is a state of mind, spirit and body. Continue to make it a choice. Eat happy food. Happiness is weaving the moments of joy and making a tapestry of life in them. Happiness can also be found through people, spending time, with them, be mindful of what it is about them that makes you happy.  Listen to your inner self, and ask the questions to yourself.  Like:  Why do I feel happy when I am with them?  What is it about them that makes me happy?  How can I take these treasures of happiness and bring them home with me?  Build from these moments.   Finding purpose in happiness becomes your service to the universe, this is what you came here for. Happiness unlocks the door to gratitude, joy, love, kindness meekness and it becomes your natural state of living. Happiness has a partner called JOY. When we experience joy, we can actually remain in this state, regardless of our circumstances it becomes our choice. Gratefulness is a way of living.     It's similar to braising but refers to food that has been cut into smaller pieces in stewing the meat it is usually browned over a higher heat, then returned to the pot with other ingredients, such as vegetables, and the liquid to cover the ingredients. When stewing any kind of older meat that is tougher than younger meat, it is important that we remember that this will require time a lot of slow time that is why it's called slow cooked. We will need to blanche it in the pan with some diced carrots, celery onions and oil, then add some red wine, and after our stock, we can use water if we don't have anything else, because the stock is already in the pan and this will create like a gravy its own natural gravy, then we can add our vegetables potatoes, carrots, turnips, etc. Cooking for this is around 2 1/2 hours or more on a low heat. or a slow cooker this is around 8 to 9 hours.     How to sear your meat is to put it into a skillet cast iron pan that is at high temperature. There is a few things to know before you do this, first heat your pan then when it is almost hot not burning add your oil then add your meat this is the technique called searing it is not sautéing. As they are two different things we can almost distinguish the two that are like a tree with different branches in cooking. Its important that we try to do this and learn the difference when we do it a few times we will learn this technique and master it!     In this episode I share with you a french cooking technique called Sauté'. It means to jump in French. The french are the benchmark of most culinary techniques. Sautéing is about adding the meat into a hot pan and almost searing the meat and the juices together so that when you are going to roast or stew, all the juices remain.
