Amen. ***** RECIPES FROM RITA: FRIED FISH AND COLE SLAW FISH FRY FRIED FISH (Like they serve at Lenten fish fries) Ingredients 1 cup all-purpose flour 1/2 cup milk – the proteins in milk help batter adhere and helps browning 1/2 cup very cold water – helps with crispiness 2 tablespoons baking powder 1 teaspoon salt OR 1/2 teaspoon salt and 1/2 teaspoon or so of your favorite fish seasoning InstructionsWhisk flour, milk, water, baking powder, and salt/seasonings together until smooth.Heat oil in a deep fryer or deep heavy pan to 365 degrees.Pat fish fillets dry with paper towels to help ensure batter sticks – I do this on crumpled paper towels. Dip fish fillets into batter to coat and let excess drip off.Lower fillets, one at a time, into hot oil. Don’t crowd pan. Turn once, until cooked through and golden brown, about 2 minutes per side.Drain fried fish fillets on a wire rack over a paper-towel lined pan. (Don’t dry on paper towel alone – that creates steam). OLD FASHIONED COLE SLAW Ingredients 1 small cabbage shredded and chopped (about 6 cups) – can use red & green or equivalent bagged slaw mix 1 large carrot shredded 1 cup real mayonnaise 1/3 cup sugar 2 tablespoon apple cider vinegar Lemon juice to taste – not too much, a teaspoon or so Salt and pepper to taste Instructions Combine mayonnaise, sugar, vinegar, lemon juice, salt, and pepper. La ricetta della pasta al forno che Matteo ha fatto nell'ultimo festival organizzato dalla scuola di italiano Joy of languages https://joyoflanguages.com/ Ingredienti: Pasta corta 400 g / 14 once Short pasta 400 g / 14 oz Passata 1l / 4 cups Tomato purée 1 L / 4 cups Una melanzana grande o due piccole One large eggplant or two small ones Scamorza affumicata (o mozzarella) 200g / 7 once Smoked scamorza cheese (or mozzarella) 200 g / 7 oz Parmigiano 50 g / 1,7 once Parmigiano cheese 50 g / 1.7 oz Pangrattato 50 g / 1,7 once Breadcrumbs 50 g / 1.7 oz Uno spicchio di aglio One clove of garlic Sale Salt Olio Oil Strumenti: Pentola Pot Pentolino per il sugo Small saucepan for the sauce Teglia 25 cm x 17 cm Medium baking dish (about 10 × 7 inches), suitable for 4 servings Coltello Knife Tagliere Cutting board Ciotola Bowl Scolapasta Colander Cucchiaio di legno Wooden spoon Mestolo per sugo Ladle for sauce Padella Pan / Skille Ricetta: In una padella, scaldare olio e uno spicchio d'aglio schiacciato con il coltello; quando fa le bollicine, aggiungere il sugo. In a pan, heat the oil and one clove of garlic crushed with a knife; when it starts bubbling, add the sauce. Tagliare le melanzane e togliere un po' di polpa. Cut the eggplants and remove some of the flesh. Cuocere le melanzane in padella con il sale e aggiungere acqua o vino se si asciugano troppo. Cook the eggplants in the pan with salt and add water or wine if they dry out too much. Abbassare la fiamma quando le melanzane si rimpiccioliscono. Lower the heat when the eggplants shrink. Far bollire l'acqua, aggiungere il sale e cuocere la pasta. Bring the water to a boil, add salt, and cook the pasta. Accendere il forno a 180° / Gas mark 4 / 356°F. Preheat the oven to 180°C / Gas mark 4 / 356°F. Tagliare la scamorza: metà finemente e metà a fette per la parte sopra. Cut the scamorza: half finely and half into slices for the top. Scolare la pasta al dente e mescolarla in una ciotola con sugo e melanzane. Drain the pasta al dente and mix it in a bowl with the sauce and eggplants. Mettere in teglia uno strato di pasta e aggiungere la scamorza tagliata finemente. Place a layer of pasta in the baking dish and add the finely chopped scamorza. Sopra mettere scamorza, pangrattato e parmigiano. On top, add scamorza, breadcrumbs, and Parmigiano. Cuocere per 10 minuti; usare il grill se serve dorare la superficie. Bake for 10 minutes; use the grill/broiler if needed to brown the top. Mmmm... che fame

Amen. ***** RECIPES FROM RITA: GRAIN-FREE POTATO CRUST QUICHE Ingredients 1-1/2 lbs baby “creamer” or Yukon gold potatoes (if using larger potatoes, peel and cut up)1-1/2 tablespoons salt for boiling potatoes, plus ¼ tsp for sprinkling8 slices bacon, chopped1/2 cup onion, diced1-1/2 cups cheese, shredded1-1/2 cups half and half, or equal parts whole milk and heavy cream5 eggs3/4 tsp salt1/2 tsp pepper1/4 tsp smoked or regular paprika (optional but good)Handful fresh greens, shredded (optional)Chives, to garnish, optional Instructions Preheat the oven to 400.Add potatoes and enough water to cover. Add 1-1/2 tablespoons salt. Bring to boil over high heat. Reduce heat and cook until tender, about 20-30 minutes, depending on size. Drain and set aside.While potatoes cook, set a 10-inch cast iron pan (or a heavy-bottomed, oven-safe pan) over medium heat and add bacon. Cook until bacon is crisp and leave fat in pan.Remove bacon and set aside.Add onions to fat and cook, stirring often, until golden. Remove onions to plate with bacon.Add potatoes to skillet in a single layer. Sprinkle with ¼ tsp salt.Use the bottom of a glass or measuring cup to press firmly into bottom and about 1 inch up the sides, closing gaps to form a complete crust.Whisk eggs. Add half and half, ½ tsp salt, pepper and paprika. Whisk to incorporate air into mixture.Stir in cheese, onion, greens, and most of the chopped bacon (set some aside for garnish). Pour into crust.Bake 25-30 minutes, or until filling is set and cooked.Let cool on rack 15 minutes. The truth is that it's way too easy to spend without noticing how much money is actually slipping away. Many people believe they don't have enough money because they don't earn enough, but often the real issue is spending too much. Most of us don't spot wasteful spending right away. It can build up for different reasons and turn into a habit. If your habits aren't helping, they could be hurting. To make the most of your money, it helps to know where you might be wasting it. Here's a list of a few wasteful habits that tend to drain our money. The first one is throwing away food. Have you ever filled your fridge, only to toss out a lot of it a week later? This is a major way people waste money. If you want to cut waste, start here. Fix this habit by making a food plan. Choose recipes for each meal, list the ingredients you need, and buy only those. Planning ahead keeps you organized and helps you use everything you buy rather than waste it. Habit number two is spending too much on dining out. After a long day, it's tempting to order takeout or eat out if you haven't planned a meal. But eating out often adds up fast. With food, drinks, tip, and tax, you might spend more on one meal than it would cost to make several at home. What can you do? Plan your at-home meals in advance and set a budget for dining out. This way, you'll have money set aside to spend on dining and can enjoy eating out without guilt. Habit number three is impulse buying. Impulse buying often happens for emotional reasons. If you buy more than you planned, that's an impulse purchase. This can waste a lot of money, especially if you didn't budget for it. To change this, try shopping in person with cash and bring a list—only buy what's on it. If you shop online, use a debit card instead of a credit card. You'll have to pay close attention to your spending because you're limited by that account balance. Habit number four is buying brand-name items when generic products work just as well. People often spend more on brand names without noticing. Brand-name products can cost 20% to 30% more, even when generics work fine. Look at the items you usually buy and see if the price difference is worth it. Many generic products, especially food products, contain the same ingredients. Do your research and choose what makes sense. Habit number five is stocking up on too many things you don't need. The Internet is full of people showing off their hauls—candles, body scrubs, food, sneakers, clothes, and more. Many of us like to collect things, but there's a fine line between collecting and overbuying. Content creators, ads, and online messages often tempt us to buy things we think we'll use but don't really need. This can be wasteful, especially since some items, like cosmetics and beauty products, expire. If you stock too much, they may go bad before you get to use them. Avoid this habit by sticking to a budget to help avoid overspending on things you don't need. If you're considering items that have a shelf life, be intentional to use up what you have before buying more. Habit number six is paying unnoticed fees or subscriptions you don't need. How many subscriptions do you have? Can you keep track of them all? Have any gone up in price in the last six months or year? If you don't keep track, you might end up paying more than you planned. Avoid wasting money on fees and subscriptions by checking them regularly. Cancel the ones you don't use or downgrade the plan if necessary. When it comes to late fees, check your account history for any missed payments. Companies will charge a fee when a payment isn't made on time, so the best way to avoid these fees is to stay organized. Mark up a calendar or set alerts on your phone to stay on top of all payments and use auto pay tools to ensure the payment is made on time. Wasteful habit number seven is paying high interest on loans. If you think you're paying too much interest each month, you might be right. Interest rates change over time, and your rate could be higher than necessary. To avoid this, consider refinancing your loans to get a lower interest rate.
