The restaurant business was tough even before COVID-19, but Dave Saylor, owner of Acadiana Café in San Antonio, Texas, believes two crucial ingredients make up the recipe for success.“What's let us prosper and stay in business for 34 years are our employees and our community involvement,” he says.Dave was once an Acadiana employee himself: he started as an assistant manager. Then about seven or eight years ago, he bought out one owner and then the other.Speaking about his employees, Dave is typically no-nonsense. “A lot of times, they bring me tremendous joy. Sometimes they just bring me a lot of frustration,” he says. He credits empathy for leading to Acadiana’s impressively low turnover rate.“Have a little more empathy for employees and understand what they're going through,” Dave says. “A lot of people have personal issues or health issues. If we can find a way to work around those and keep them working, it benefits us and they really appreciate it.”Dave also regularly serves up sizable portions of his second key ingredient for restaurant longevity: community service. Besides working with local churches, he’s put in manual labor for Habitat for Humanity and sat on several local boards, including the local restaurant association.Dave has also served as a go-between for the civilian community and Lackland Air Force Base, becoming an Honorary Commander of the 433rd Airlift Wing and the 37th Training Wing.“There are always opportunities for service — you just have to be open to them,” Dave says. “They'll come find you, or you go look for them.”The COVID-19 pandemic required Dave to tap into another set of skills that he thinks all small business owners need: “flexibility, innovation, and being adaptable.”Dave pivoted as best he could, setting up two new drive-thru lanes. But the situation was still tenuous. When Dave’s bank of 30 years put him on a waiting list just to apply for a Paycheck Protection Program (PPP) loan from the Small Business Administration (SBA), he turned to Lendio.“If we hadn't gotten the Lendio loan, we wouldn't be here right now. When we actually got funded, it was like, ‘Oh my God, we're good. We're safe.’ So thank you.”Featured Entrepreneur
Chief Master Sergeant Stefan Blazier "Blaze" is currently the Command Chief Master Sergeant for the 37th Training Wing, Joint Base San Antonio-Lackland, Texas. He is the primary advisor to the commander on all matters affecting training, performance, discipline, safety, readiness, and health of more than 18,000 students and permanent party Airmen. The Wing encompasses 9 wing staff agencies, three groups, and one Inter-American academy that operates from 10 geographically separated locations. Ready For Takeoff - Turn Your Aviation Passion Into A Career
Having the desire to fly fighter jets since seeing the movie “Top Gun,” Chandra Beckman became part of the elite group of women who have flown United States Air Force fighter jets. Chandra started her AF career in ROTC in 1993, the same year the Department of Defense lifted the ban on women flying combat missions, which opened the door for women to fly fighter jets. She graduated with a Bachelor’s Degree in Mathematics from Arizona State University in 1998. After a delay due to an unexpected pregnancy, she attended USAF Pilot Training where she earned an assignment to fly the F-15C Eagle, and was the first woman to fly that aircraft as a mother. During her time flying the F-15C, Chandra supported the defense of the homeland through Operation NOBLE EAGLE and flew combat missions during the opening weeks of Operation IRAQI FREEDOM. Following three years flying the F-15C, she was one of only 3 women assigned to fly the first stealth fighter aircraft, the F-117A Nighthawk. During her time flying that aircraft, she deployed in support of security operations to the Korean peninsula, coordinated with media groups to showcase the final F-117 RED FLAG, and mentored school children and Airmen of all ranks. Taking a break from flying, Chandra was stationed in the Republic of Korea where she was assigned to the Combined Air Operations Center. While there she developed and implemented the first Operations Center training program for new personnel and worked jobs in both offensive and defensive combat training roles. Chandra then went on to be an Instructor Pilot at the Euro-NATO Joint Jet Pilot Training Program. However, health challenges that had begun while she was stationed in the Republic of Korea finally grounded her from flying. From 2009-2017, she earned a Master’s Degree in Aeronautical Science and held multiple jobs which included: Director of Staff for the 82 Training Wing, an organization with a permanent staff of over 3,000 people worldwide serving a student population of almost 80,000 annually; and Director of Operations for RED FLAG, the organization responsible for establishing the framework to train US and coalition nation members in the world’s most realistic air combat scenarios. Retired from active duty, Chandra enjoys having the freedom to travel the world with her husband and be available for her children whenever and wherever they need her to be. She is a member of the Veteran Advisory Team for the National Foundation for Integrative Medicine and looks forward to helping others in that capacity.

Kayshel Trudell, a public affairs officer currently at the 37th Training Wing at Joint Base San Antonio-Lackland. In this episode, Trudell sits down with Lt. Col. Isaac Davidson, the IAAFA commandant, and Staff Sgt. Hugo Garza Salas, a Classroom of the Future cyber instructor at IAAFA. They talk about how the Classroom of the Future provides the tools and technology to optimize and streamline learning. the Classroom of the Future pushes Force development along the Continuum of Learning by flipping the teaching model to a learner-focus approach that dramatically shortens students’ learning curve and allows for hands-on experimental learning that is focused on solving real-world problems in a classroom setting that can immediately be implemented in the field. They also talk about how the relationships built at IAAFA span the Americas, making the U.S. a partner of choice and giving students the advantage of a connected environment and collaboration workspace from anywhere in the world.

This week our podcast features retired United States Air Force Brigadier General Ron Shoopman. In 2004, Ron assumed the role of president of the Southern Arizona Leadership Council, and continues to serve in the capacity as CEO of that organization. His diverse career accomplishments include serving as the wing commander of the 162nd Fighter Wing where he commanded the International F-16 Training Wing for the USAF. On the civilian side, Ron has worked for Gates Learjet Corporation, flew for Continental Airlines, and served as an instructor pilot and manager for Flight Safety International.
