Pollard is the author of the popular new guidebook on health, climate change, and chronic disease around the world: Eating Does It: Healing Ourselves and Our Planet with Food, published in October 2023. She is a plant-based nutritionist and one of the first nutrition instructors who taught for the renowned T. Colin Campbell plant-based nutrition certification course. Eating Does It asserts that the most effective action any person can take to address the world's biggest problems is through diet. A whole-food, plant-based diet combats both climate change and rampant chronic diseases, including obesity, diabetes, cardiovascular diseases, and some cancers, without waiting for big policy changes, international cooperation, or costly drugs or medical procedures—and it's free. This healthy diet emits the least greenhouse gases, uses the least of our limited resources, and is our most accessible tool to heal and maintain health, inside and out. This comprehensive guide has many resources, including Kathy's Four Food Rules, simple tables, for instance, one showing the clear Indicators of a changing climate alongside one showing some of the many drivers of chronic disease; also a critical thinking checklist to analyze anything you come across in the news or social media, and of course, recipes: dishes inspired by the tastes and cuisines found around the world. Nutritionist Kathryn Pollard and her climatologist collaborators dish up the simple science and health information that people need to make transformative food choices for their well-being and the future of our warming planet. She empowers readers to make big improvements, one bite at a time. Just eating can do that! Kathy is the Research Projects Manager for the American College of Lifestyle Medicine (ACLM) and the administrating officer of the ACLM Global Sustainability Committee.
