Instead, we got through a few letters, and then the multitude of questions from the chat overwhelmed us and we gave up on letters for this week, just to get through all the chat questions. Which ended up being great! Around the 55 minutes in,  ThePayneTrayn asks a question in the chat about brewing beer, which is a topic Paul has a lot of experience and knowledge on. Paul describes an all-rye ale that he has brewed, which was met with demands for the recipe. Here is that recipe, from Paul himself! 6lb malted rye 1lb medium crystal malt Starch conversion with 2.25gal h2o at 148F for 2 hours Mash out at 170F. Sparge with 3 gal h2o Bring to a boil. Add 1oz Holdings hops. Boil 45 min. Add 0.5oz Bramling hops. Boil 15 minutes. Add 0.5oz Bramling hops. Ferment with Wyeast 1968 London ESB yeast Finally, we mentioned that next Publishers' Note will be a great time to ask Paul questions about his involvement in Spirit Island lore. New opening to the show this time through. Let's see how you like it (let us know!) In the pub, we stop by and take about brewery charities and one in particular for Denny's area. We talk about one previous guest's new "kid" rules and the response, before we tackle the big Wicked news of the week and the really insidious piece that virtually no one is talking about behind the scenes. We stop in the brewery to talk the latest malt report from our good friend Teri Fahrendorf and Denny reminices about the good old cow and hog reports of his youth. In the lab, we announce our latest experiment - the IGORs are taking a stab at the Brulosophy gang's Biotransformation ale - aka can you tell a difference between a beer dry hopped at high krausen and one dry hopped in secondary. Of course, we're adding an extra special twist to the whole thing because we're required to by law. Twist one, testing two different strains with some IGORs pulling out Wyeast 1318 and some pulling Wyeast 1056. Twist two - we're going to have some visually blind trials vs visual trials. Woo... Then in the Lounge, Denny talks to Jessica Davis of the Bruery about what it means to do QA work for a brewery with as many on going projects as they have. It's seriously interesting to learn what it means to work in the beer world and be tasked with keeping an eye on things Finally we tackle questions we can answer. Season 2, Episode 33 – This week, homebrew from Nagel and special guest Natalie DeNicholas. Friend and fellow homebrewer, Natalie DeNicholas, joins us on the show this week with homebrew in hand. She’s been brewing for a few years now, and is a member of the famous southern California homebrew club, Maltose Falcons.  Natalie DeNicholas (via Instagram) First up are two saisons that Natalie brewed early in her homebrewing career. While she doesn’t remember the details of the recipes, she does remember the basics of each of the beers. The first saison we try poured brilliantly clear in the glass and smelled wonderful. This beer was pretty basic as saison recipes go, and was fermented with a French farmhouse yeast strain (assumably Wyeast 3711). The carbonation and flavor on this beer was great and served as a perfect opener for the show. The second saison was more in line with a tradition Belgian saison, made with belgian malts and fermented with a Belgian White Labs yeast strain (WLP565, more than likely). Next up is Natalie’s anti-oatmeal stout. The recipe originally called for oats to be used in the mash but Natalie, well, forgot to add them. Whoops. It happens to us all at one point or another. This beer had a big chocolate aroma, and even though it didn’t have oats to beef up the body, it maintained a nice mouthfeel with a pleasantly sweet body. Great stuff, indeed. We finish up with a kölsch from Mr. Nagel. Prior to the show, Greg thought about filtering this beer to see how much it would affect certain aspects of it, but he ultimately couldn’t find the time to get it done. Since this brew was version 1.0, he thought he’d bring it by anyway to get our feedback on how it could be improved. Temperature during fermentation can have a big impact on the yeast character of a beer, especially a kölsch. We all conclude that the ester profile is a bit much in this beer and fermenting at a cooler temperature might help reduce it to an acceptable level. Season 1, Episode 14 - This week, a show four years in the making. Matt shares four different sours that he brewed in 2010, along with a final blend of the four beers. This week on the show, we’re going “back in time”, so to speak. We recorded this episode back in June with Denise Ratfield, but it never made it to the interwebs. Well, it’s finally here, and it’s pretty great. We kick the show off with two stellar beers from Jester King Brewery out Austin, Texas. The first beer on deck is a farmhouse ale called El Cedro, made with Citra hops, aged on Spanish cedar spirals, and bottle conditioned with brettanomyces. Jester King Beers The next beer on deck was brought to us by Andrew Bell, Matt’s co-worker at The Bruery, who purchased it at Jester King during one of his recent trips to Texas. Nocturn Chrysalis is an oak-aged sour ale made with Marion blackberries from the state of Oregon. This is a rather remarkable beer—almost akin to eating fresh pie. Even though it’s made with blackberries, dark cherry notes are present in the beer, and they blend nicely with the tart and sweet characteristics. Feature: Homebrew – Matt’s Sours The last half of the show was very exciting for us. Back in 2010, Matt made 10 gallons of wort and split it up into 2.5 gallon carboys, all of which were destined to become different sour ales that were to be blended to make one final sour. Doing something like this is quite ambitious, and takes time and patience. These beer are evidence that time and patience really do payoff when it comes to homebrewing. Matt Becker Three of the four ales were soured with different strains and blends of bacteria from different yeast providers, White Labs, Wyeast, and East Coast Yeast. The fourth (and best of the bunch) ale was inoculated with dregs from different bottles of commercial sour ales that were all pitched into a yeast starter. Matt talks about the entire process from brewing to blending while we discuss the different qualities in each of the beers, and then share our thoughts on the final blend. See you next week!
