“People who visit the space, they understand and get that there's this intimate quality to the beer,” says Aaron Kleidon. “I don't think we've ever had a desire to add weird things to a beer just for the sake of adding weird things.” Scratch (https://www.scratchbeer.com) is decidedly weird. For Fair Isle Brewing (https://www.fairislebrewing.com) in Seattle, Washington, the founding concept was simple—focus on a narrow niche of the beer world, and do it really, really well. It’s one thing to state an audacious goal, and it’s another to actually deliver on it, but the tightly executed saisons they’ve produced over the past year exude a confidence and class that belie their young age. In this episode of the podcast, cofounder Andrew Pogue and head brewer Nick Pauley walk through the brewery’s creation and their thoughtful approach to developing and corralling the house culture that the brewery uses to ferment every one of its beers. They discuss how to manage the cultural drift toward acid production, creating different environments that push the culture in different flavor directions, and the ways that initial fermentation flavors and aromas change and develop over the 90-day fermentation schedule. Grain plays a big role in the brewery’s experimentation, and they discuss using heirloom barley varieties such as Purple Egyptian, as well as newly developed perennial grain Salish Blue. Wolves and People (https://www.wolvesandpeople.com) founder Christian DeBenedetti wrote about beer for years as a journalist before taking the leap and founding the brewery on the family farm where he grew up in Oregon’s Willamette Valley. While the brewery is small—they produced fewer than 400 barrels of beer in 2019—they’ve focused on beers that reflect place from the very start. One of their most active focuses is yeast, and they’ve captured and developed multiple yeast strains from the property—first from a plum tree, and later from the hive of bees that DeBenedetti brought to the farm for honey and pollination as well as yeast cultivation. Here, he discusses the process of capturing then testing and isolating the strains, one of which is now available as a beta yeast from The Yeast Bay. The next big project underway now involves estate-grown barley, to be planted next year on a plot next to the brewery. The guys venture into the woods of Newcastle, ME to talk with Mike Fava, head brewer of Oxbow Brewing. The conversation - held inside a literal farmhouse next to the brewery - makes a great case for the podcast's best so far. Uma das coisas que mais gosto ao viajar é conhecer os ingredientes típicos da região e como eles são aplicados na gastronomia local. Aproveitei a visita à Boa Vista para a inauguração da loja Mestre-Cervejeiro.com Boa Vista, a primeira unidade da rede no hemisfério Norte, para provar a Fantôme Tonka. Esta cerveja é uma Farmhouse Ale colaborativa da Morada Cia. Etílica com a belga Fantôme e conta com diversos insumos amazônicos em sua receita como o Jambu, Iquiriba e Cumaru – este último chamado de Tonka Bean em inglês, por isso o nome. Uma curiosidade sobre ela é que foram produzidos apenas 1.200 Litros, sendo que uma parte ficou na Bélgica, uma parte foi para os EUA e outra veio pra cá. E foi uma produção limitada, ou seja, não será feita novamente. Então aproveitem enquanto podem, pois a Fantôme Tonka é uma cerveja surpreendente que vale muito a pena conhecer.
