What makes a cider a cider? Explore the fruits and chaos-inspired ingredients behind ERIS' biggest hits in this cider science deep dive. Michelle Foik, co-owner of ERIS Brewery and Cider House, shares her journey to opening her historic establishment before delving into the art and science of cidering. She starts by discussing how her career took her from Goose Island Brewery and Revolution Brewing to opening the first female-owned brewery and cider house in Illinois in a historic Masonic temple. She also discusses the history of cider in Chicago and in the United States, the cultural revival of cider post-Prohibition, and how cider is actually made. After the beer break, Michelle delves into how Amburana barrels impart a variety of spice flavors into beverages, why beer brewers aren't allowed to make cider, and how ERIS combines ciders and beers to make unique snakebites. She also shares the incredible story behind their GABF award-winning hazy IPA Foiken Haze, the unique characteristics of their Pepper Jam cider, and their barrel-aged Malort cider. ERIS Brewery and Cider House is a women-owned brewery, cider house, and restaurant in the Old Irving Park neighborhood of Chicago. Today's episode is all about the pomes! Tune in for our discussion with Matt Kaminsky, aka Gnarly Pippins, on the topic of wild/feral/seedling apples. Matt is a fruit explorer and orchardist who specializes in feral trees that kick it on the sides of highways, edges, and other forgotten places without any management from humans. Why are these trees important? Seedling apples and other pome fruits (like pears) that grow in these edge ecosystems are frequently much more resistant to the many pests and diseases that affect their cultivated cousins in commercial and organic orchards. The genetic diversity of these feral fruits is astounding. There is a movement of like minded fruit hunters who have started to champion these trees in recent years, and Matt is one of these folks. First off, I swear it wasn't my idea to put the dudes in the front seats and the women in the backseats. I knew it was going to be terrible optics. Dammit. This episode was a blast. I was joined by Mike Vinopal and Alex Subak of the bands Local Motive and Badcandy and Michelle Foik, founder of Eris Brewery and Cider House in Old Irving Park. As we ate delicious food from the Eris menu (and thought longingly about being able to enjoy Eris cider once we were out of the car), we talked about both bands (new albums on the way from both!) and Eris history (first female-owned brewery in Illinois and Chicago!). There was instant chemistry on this one. Hope you enjoy listening/watching! Now is the time to go solar! Introducing Transparent Solar. Hard ciders are a fast-growing segment of the beverage universe. Made from many different types of apples and in a multitude of styles, they are naturally gluten free which further broadens their appeal. We have tried a few over the years starting in 2010 with Samuel Smith's Organic Cider and most recently we had the Blueberry Spaceship Box from Superstition Meadery. It is a category we really enjoy that we intend on exploring more. We will make good on that intention this week as we will be trying the Prickly Pearadise Prickly Pear Cider from 2 Towns Ciderhouse. This cider is made with a fusion of NW apples and prickly pear cactus fruit. It is available year round and has an ABV of 5.3%. What do you think? We are so excited to share this episode with you! This is a story not only about innovative reshaping of a family farm to continue the legacy but also enhancing a small-town community with a new place to gather and eat and drink with friends. About Stacy and Dan: Dan Heising and Stacy Nelson-Heising are Cottonwood's orchard and cider house lead drivers and co-founders. When one is in the driver's seat, the other sits happily in the passenger chair, supporting the other. Dan is our head cider maker. Stacy is Cottonwood's head orchardist. The couple lives at Cottonwood Farm. They are parents to Ben, Kevin, Dharma and Greg. Ben is their only two-legged child who helps his mom maintain the orchard. He's their team's funnyman and is willing to do just about anything to help out his parents. In addition to Ben, Dan's sister Heather also assists them with running the business. She's a wiz with numbers and keeps Cottonwood on a straight path. Stacy's grandparents Norman and Louise, parents, Chuck and Roberta, and Dan's mother, Katie, support the couple in making Cottonwood Farm and Cottonwood Cider House a success. “We've really gotten a lot of support and help from our family and friends over the years to help us make our orchard, future cider house and goals a reality. Everyone has stepped up when necessary to help us achieve these goals. We strive to raise healthy apples, grown in the manner that is healthiest for our planet, organically and Biodynamically. We want to make amazing hard cider, have fun while doing it, and craft our brew together. Those are our goals.” In this episode, we cover: The practical steps it took to take a dream and make it a reality Why it's important to just try things The value of tapping into the experiential nature of small towns The struggle of finding a community and support system in a very rural area. What resourcefulness can look like and how that applies to starting a new business Links and Resources Mentioned: Cottonwood Ciderhouse website: https://cottonwoodciderhouse.com/ Cottonwood Ciderhouse Facebook: https://www.facebook.com/cottonwoodciderhouse

Gabby Petito was a 22-year-old who went on a road trip with her fiancé Brian Laundrie . She went missing during the trip and he returned home without her and told no one. When her family reported her missing, he was suddenly tight lipped. Then just like that, he disappeared under mysterious circumstances. Her body was found in Wyoming. His body was found shortly after. And while the world focused on them, other similar cases happened at the same time but got crickets in the media. We discussed those cases this week. Cindy prepared road trip food this week. She made some delicious Italian, turkey and roast beef wraps. In the shadow of the disused ironstone kilns of the Rosedale Valley in North Yorkshire, Ciderhouse Rebellion - fiddle player Adam Summerhayes and accordionist Murray Grainger - conjure up a soundscape of rare beauty - improvised on the spot. Then they add evocative poetry from Adam's daughter Jessie to create, in words and music, a picture of the harshness of Victorian industry in the midst of the beauty of nature. --- Access exclusive films of Ciderhouse Rebellion performing along our walk, along with over 100 other performances from dozens of artists, by signing up to Folk On Foot On Film: https://www.folkonfoot.com/watch We rely entirely on support from our listeners to make Folk on Foot. In this episode, Karthik speaks with Sid Sheth, founder of Trillium Beverages that makes Thirsty Fox - a fast-growing, award-winning, single-origin, craft cider from Maharashtra. Karthik talks to Sid about his entrepreneurial journey and how a chemical engineer who was an Amazon employee in Seattle, decided to make Ciders for the Indian market! They also talk about the uniquely Indian challenges in creating an alcohol brand in India, why Sid found it challenging to use local ingredients, and how an obsession with quality is winning them fans and awards. Summary: Mark McTavish is the founder and CEO of 101 Cider House as well as a devoted cider fan, lover of artistic beverages, and a true health nut. Quotes: "You have a responsibility to investigate what you're putting into your own body.” - Mark McTavish “We're not eating things that are good for our gut typically until our late 20s when we start to learn about our diet. When we take a more mindful approach and we start to discover these things, we cling to diets like keto, paleo, fodmap, and all these things to be more symptomatically driven. We're not really getting ahead of anything, we're thinking about how we fix ourselves. And one of the things that have messed us up the most in our 20s is drinking alcohol. In the latest episode, we had a shot of politics on draft at Eris Brewery and Cider House, discussing Chicago's mayoral race and the power of endorsements, debates, and appearance of impropriety among candidates. We talked about Lori Lightfoot's defense strategy given her seeming frontrunner status while lightly pointing out the negative perception of Preckwinkle's running out of money or having a misguided strategy. We also highlighted Willie Cochrane's felony wire fraud case, labeling it the "week in aldermanic crime". Besides politics, we savored Chicago's rise to the top in terms of the number of breweries in town.
