What's in Store for the Pawpaw Patch?

Gravy

In “What's in Store for the Pawpaw Patch?” Gravy producer Anya Groner examines the pawpaw, a long-overlooked fruit that's now being domesticated, making its way into farmers' markets, restaurants, and even beer. What plant has leaves that smell like green pepper, fruit that can taste like pineapple or turpentine, and bark that can be woven into baskets? Enter the poor man's banana, also known as the pawpaw. Two decades ago, you'd be hard-pressed to find a nursery with a pawpaw tree for sale, but these days the mid-sized tree and its fruit has a near cult following. Though indigenous to the eastern United States, pawpaw trees fell out of popular consciousness for almost a century. The reason is at least in part economic. The fruit ripens and rots so quickly that it's never been commercially viable. But, in recent years the northern-most variety of “custard apple,” a family of trees that includes the soursop and cherimoya, has had a remarkable comeback. Over two decades ago, horticulturalist Neal Peterson sparked a renewed interest in the fruit after patenting seven pawpaw cultivars, which he bred for flavor, low seed count, and perishability. Yet not everyone lauds the growing popularity of pawpaws. Dr. Troy Wiipongwii, Director of Innovation and Entrepreneurship in Conservation at the College of William and Mary, says this surge of interest could backfire, causing an overproduction of the fruit that ultimately hurts the ecosystem. And Sean Wilson, who uses pawpaws to flavor seasonal beers at FullSteam Brewery in Durham, North Carolina, worries that too much cultivation might result in a bland fruit.  So what's next? Will pawpaws become the next “it” fruit, destined to flavor everything from soap to cocktails? Or will oversupply collapse the market and leave us with a flavorless fruit? In this episode, Groner takes us to a festival in Paw Paw, West Virginia, to explore what we lose and what we gain as America's largest indigenous fruit, the pawpaw, is bred for market. In 2016 Dave was brought on to develop and lead brewing operations at Mason Jar Lager Company.  He is now leading brewing ops at Lonerider Brewing in Raleigh and co-brewing with the team at Fortnight Brewing in Cary. This week, I'm delighted to be joined by Diane Flynt, the author of the recently published Wild, Tamed, Lost, Revived: The Surprising Story of Apples in the South. This is a story of history, diversity, and the future. For those who say social media is a bad thing, I get it. But occasionally it can provide gems. For example, last week I was scrolling through Facebook when I saw Sean Lilly Wilson, the founder of North Carolina's Fullsteam Brewery post about a new book he was reading: Wild, Tamed, Lost, Revived: The Surprising Story of Apples in the South.  I was immediately intrigued and reached out to the author, Diane Flynt, to come on the show.  She and her husband Chuck live in the Virginia Blue Ridge Mountains, where she is an apple grower and cidermaker. She says above all else she is an insatiable learner, which led to the concept and writing of this book. Flynt is a multiple-time James Beard Award finalist for Outstanding Wine, Spirits, or Beer Professional and founded Foggy Ridge Cider in 1997 after leaving her corporate career and produced cider until 2018. There aren't nearly enough books on apples in the world, especially engaging and well thought out ones, but this book stands among the top, in my mind and based on what I've read, for not only the rich history and passion it provides, but also the personal narrative weaved throughout, and the easy to understand approach, which helps put the subject in our hands. Press materials provided in advance give this description: Flynt "shows how southern apples, ranging from northern varieties that found fame on southern soil to hyper-local apples grown by a single family, have a history beyond the region, from Queen Victoria's court to the Oregon Trail. Flynt also tells us the darker side of the story, detailing how apples were entwined with slavery and the theft of Indigenous land. She relates the ways southerners lost their rich apple culture in less than the lifetime of a tree and offers a tentatively hopeful future." This Episode is Sponsored By:ShopifyShopify's already taken the cash register online, helping millions sell billions around the world. Show notes from host John Holl:"You'll hear how I first met Sean Lilly Wilson a little later in the show, but what I didn't know back then and what I've come to experience over the course of nearly a decade, is his commitment to food, drink, hospitality, creativity, culture, and community.   Outside of Fullsteam, the brewery he launched in 2010, much of the growth of North Carolina as a premiere beer state has to do with the efforts he mounted – with a dedicated group of others – to change the then byzantine beer laws and restrictions.  It was an effort called Pop the Cap, and its impact is still felt today. His efforts haven't stopped with the laws, but have moved onto the land. Through the brewery, work within the state guild, and conversation with other brewing professionals he wants to help southern agriculture grow and thrive. He's called it "plow to pint" and the beers he and the brewing team have produced bear the fruit of that hard work.  Nationally, he's been recognized four times by the James Beard Foundation as a semi-finalist in the outstanding Wine, Spirits, or Beer Producer category. Personally, he's a nice guy to talk to. He's thoughtful and earnest and an incredibly hard worker.  At the brewery he goes by CEO – Chief Executive Optimist – and works to bring forward thinking to both the original brewery in Durham as well as a new location – which opened on the day this was recorded, a day before it first aired. It will focus on pizza and beer pairings, something that might sound simple, but is actually a tightrope walk. This Episode is sponsored by:NZ HopsNZ Hops, the co-operative of Master Hop Growers are a passionate collective of farms dedicated to innovation and sustainability. I’m Bryan Roth, and you’re listening to the Good Beer Hunting podcast. We talk a lot about successes in these episodes. Challenges overcome, exciting innovations, and new approaches. But it’s rare we focus on failures. In this period of worry about health and financial hardship for businesses, it’s inevitable the beer industry will be having more conversations than usual about things that go wrong. That idea is at the center of this episode. In November 2017, we published a marathon conversation with Erik Lars Myers, then the founder and CEO of Mystery Brewing in Hillsborough, North Carolina. At the time, his early-2010s model of a rapidly changing portfolio of beers and taproom-focused sales was ever-so-slightly ahead of the time. I called him a futurist, but as life would prove, the future wasn’t set to include Mystery. Myers closed the brewery in 2018 amidst a slew of equipment malfunctions, bad luck, and, as you’ll hear from him directly, some poor business decisions. His experience of losing a company he’d built—and built with people he came to love—was devastating. But as you’ll hear, those events may also have been affirming. In the strange way that life tends to weave together good and bad, the closure sent him on a new path he’s since come to appreciate. Myers is back on the podcast this time as director of brewing operations for Durham, North Carolina’s Fullsteam Brewery. We won’t be talking about beer styles and recipes, but rather reflecting on what happened to him and how his experiences are being echoed today, at a time when the coronavirus pandemic is creating daily hardships for breweries all over. As you listen to Myers and hear how things change for businesses, consider this. Failure is hard, it is unpleasant … and it hurts. But so often, in the end, it’s also tied to what we come to see as success. Or, at least, growth. I hope Myers’ story offers some context and affirmation that, even when things go wrong, and hard lessons are learned, that isn’t necessarily the end. This is Erik Lars Myers of Fullsteam Brewery. Listen in.

Sean Lilly Wilson ended up started Fullsteam Brewery not because he was an avid home brewer, but simply because he thought existing laws were silly. Or, more specifically, because those laws prevented him from drinking true-to-style craft beer. After successfully leading the charge to modernize North Carolina's brewing laws, allowing beers with higher alcohol content, he used those connections and passion to start a "plow to pint" brewery that's heavy on locally foraged ingredients, supporting local businesses and economies, and making some damn good brew. Now, he's not just growing the number of beers they brew, but also their infiltration into the local market and beyond NC's borders.
