Sam used to drive that RV around America slanging skate shoes to skateboarders, surfers, snowboarders and dirt bike racers. But when Sam lost that job in the Great Recession of 2008, he relocated to Raleigh and found a part-time job roasting cacao beans for a local chocolate maker. Sam fell in love with the art and science of making bean-to-bar chocolate from sorting to roasting, grinding and tempering. He quickly started day dreaming of opening his own chocolate factory. In 2011, Sam opened Videri Chocolate Factory in downtown Raleigh, joining the ranks of the less than two dozen bean-to-bar chocolate makers in the country at the time. Videri chocolate is made with the finest cocoa beans, cocoa butter and organic cane sugar. The company does not use artificial flavorings or fillers, such as soy lecithin, xanthan gum and emulsifiers. All ingredients are thoughtfully procured, using sustainable purchasing standards. Videri's production facility is allergy friendly and the chocolates are made without tree nuts, peanuts, eggs, soy or gluten. Since 2014, Videri has won eight Good Food Awards for its chocolate bars and confections; the awards honor superior tasting products made by companies that demonstrate social and environmental responsibility. Its 4,000 square-foot facility in Raleigh's Warehouse District is home to a small batch chocolate factory, coffee shop and chocolate shop. In 2023, Videri was named one of the 10 best chocolate shops in the country by USA Today. For five years in a row, Videri has been named Best Chocolate in the Triangle in the annual readers' poll by Indy Week. Videri has also been featured in GQ, The Wall Street Journal, The New York Times, Southern Living, Garden & Gun, Condé Nast Traveler, The Associated Press, Our State Magazine, North Carolina Weekend and many more. In 2017, the Triangle Business Journal named Ratto one of its 40 under 40 winners, which honors outstanding professionals under the age of 40 for their contributions to their organizations and to the community. In 2019, Ratto was honored by the publication in its annual CEO of the Year awards. The company has more than 20 employees and its products are available for purchase at its Raleigh location, online and at various retailers in eight states. More info: viderichocolatefactory.com. In 2024, he opened Golf Golf Golf Indoor golf lounge & club. Venturing into the golf space has always been a dream and now it is a reality for Sam Ratto. Swing on by, have a beer, high five your pals and have a blast.Connect with Sam: Videri Chocolate Factory | Golf Golf Golf | LinkedIn | Instagram Mentioned in the show:Uncommo

Water leaks come with some simple math: The longer the leak continues, the more it costs. But utility companies don't always warn customers about potential leaks in their pipes. That's the story at the heart of our latest Utility Bill of the Month. The Gulf States Newsroom's Stephan Bisaha reports on how an undetected leak led to one Alabama family owing thousands of dollars.  With Thanksgiving officially in the rearview mirror, New Orleans is kicking off the holiday season with its 12th annual Running of the Santas. Event director Steve Schulkens tells us about this music-filled bar crawl, when runners in Santa costumes parade down the streets of the Warehouse District. Earlier this month, reports emerged that Mitch Landrieu, a former mayor of New Orleans and now a senior advisor to President Biden, is expected to leave the administration at the end of the year. Most of his time in Washington has been marked by efforts to expand broadband across the country.Over the summer, NPR's Scott Detrow and Brianna Scott produced a story about Landrieu's role as Biden's “infrastructure point person." Today, we look back on that report.  Today's episode of Louisiana Considered was hosted by Diane Mack. Our managing producer is Alana Schreiber and our assistant producer is Aubry Procell. Our engineer is Garrett Pittman. NOTE: Today's discussion involves some gruesome descriptions of what happened on the night of Sunday, June 24, 1973. You may wish to listen to this one when your little ones are not around. On June 24, 1973 an arsonist set fire to a gay bar in New Orleans called the Up Stairs Lounge. Within moments fire engulfed the bar, and ultimately claimed the lives of 32 people. It was the largest massacre of LGBTQ individuals in the United States until the Pulse Nightclub shooting in 2016. My guests today are Robert “Bobby” Fieseler, and Clayton Delery. Bobby authored a new book about the fire entitled, Tinderbox, the Untold Story of the Up Stairs Lounge Fire and the Rise of Gay Liberation. Clayton Delery is a native of Metairie, LA just outside of New Orleans. Clayton's 2015 book about the fire, The Upstairs Lounge Arson: 32 Deaths in a Gay Bar, was recognized by the Louisiana Endowment for the Humanities with a Book of the Year Award. Robert Camina produced an award-winning and moving documentary about the fire called Upstairs Inferno. You can purchase it directly from his website.  Thank You I first learned about the Up Stairs Lounge massacre many years ago. Its been on my list of topics for the Beyond Bourbon Street podcast since we launched in December 2016, but I hesitated to tackle it. I wanted to make sure I had the interview skills to do it justice. I also wanted to find the right person or people to talk to. Thanks to my friend James Tardie I connected with Robert, and through Robert, with Clayton. Words cannot express how appreciative I am to Robert Fieseler and to Clayton Delery for opening up to me. While I understand they have books to promote, it is obvious how personal the story is to both of them. Our discussion was difficult, but I hope it conveys to you the listener at least a sense of the tragedy itself, as well as the times. I am also hopeful by sharing this story, it helps us all be mindful of the work we still have to do in today's world to ensure everyone is treated as equals. I also owe a word of thanks to John Price and the Old 77 Hotel. When John heard about this topic, he quickly offered a space for us to record. In season two of the "Finding Home" podcast series, Irish American Archives Society Executive Director Margaret Lynch interviews an array of Clevelanders with specialized knowledge and stories about the history of the Irish in Cleveland. Episode 3 features an interview with Bernie McCafferrty. For several decades, Bernie McCafferrty, a Business Consultant for Hewlett Packard Enterprise, has tracked elusive information about the earliest Irish immigrants to settle in Cleveland. He has traipsed cemeteries, transcribed census records and city directories, and perused early property records. For an MA Thesis in Irish Studies at John Carroll University, he focused on the 1850 census and found an early concentration of Irish immigrants in the area equivalent to today's East Flats and Warehouse District. McCafferty, who is also a singer/guitarist with the Craic Brothers, shares the high-points of his work, which can be read in full at https://collected.jcu.edu/mastersessays/62/ He has also photographed and transcribed gravestones at cemeteries surrounding Clew Bay and shard the results on the IGP Irish Genealogical Projects website at https://www.igp-web.com/IGPArchives/ire/mayo/photos/tombstones/markers.htm

If you ask anyone involved in food preparation, “What's the most important piece of equipment in your kitchen?” they'll give you the same answer. Whether it's a Japanese sushi chef slicing a single sliver of sashimi, or a French sous chef concocting complex cuisine, every person in a kitchen will tell you, the most important tool they possess is their knife. Not just “a knife,” but their own particular, favorite brand and type of knife. And many people who take food prep seriously have only one particular person they trust to sharpen their knives. In New Orleans, that person is very often Jackie Blanchard. Jackie and her partner Brandt are the owners of a business called Coutelier, on Oak Street in Uptown. And they have a second branch in Nashville Tennessee.   Coutelier is a cutlery shop that specializes in rare, hand-forged Japanese knives. Jackie and Brandt work with over 55 different Japanese knife makers. They also sell a range of other specialist, high quality kitchen tools. The tradition of knives goes back a long way in Japan. It can be traced back the forging of swords. Similarly, the tradition of fine arts and decorative pieces that beautify the interior of a house can be traced back a long way in Europe. And specifically in France. As you're well aware if you live here or have ever visited, when the French settled New Orleans they brought their architects who designed and built grand buildings. But they didn't stop there. They also brought generations of decorative style to bear on the insides of these homes. Valerie Legras is continuing that tradition today. Valerie was born and raised in France, and lives in New Orleans. She's an interior designer who specializes in importing lighting fixtures from select French designers. Valerie's company is called Swadoh. In Swadoh's  showroom on Tchoupitoulas Street in the Warehouse District you'll find what could pass for a gallery of art installations, but is actually a hand-picked collection of French lamps and lampshades. New Orleans has gone through a lot of stages in its over three hundred years of existence. We were the home of opera, jazz, and a European food and coffee culture. We had the busiest port and were the most cosmopolitan and sophisticated city in the country. Then the tide of history turned. We had years of out-immigration. Other cities, like Miami and Dallas, came along and dominated the economies we once controlled. And businesses deserted our downtown. For the last almost-two-decades we've been changing all that. Now we're seeing New Orleans return with a different, but undeniably resurgent economy. With it we're seeing the return of specialization and cosmopolitan sophistication that comes with the growth of cities. Jackie Blanchard and Valerie Legras' successful businesses are both indicators of New Orleans' economic upswing. Twenty years ago we would have had to visit New York to find a specialist knife store like Coutelier, or a French art lighting showroom like Swadoh. Today the positive direction of the city has given Jackie and Valerie the confidence to build these unique businesses in New Orleans,  Out to Lunch is recorded live over lunch at NOLA Pizza in the NOLA Brewing Taproom. You can see photos from this show by Jill Lafleur at our website. And here's more conversation about cosmopolitan direction of the New Orleans economy. The Audio Cafe: for Baristas, Coffeehouses, Coffee Lovers

2:55 If you want to know what it looks like when a New Orleans resident takes over a cafe space from a big chain that had intense colors and wornout floors, you should look up Pulp And Grind on 644 Camp St in the Warehouse District. Look them up on Yelp, or visit this episodes show notes to finout what-the-fuss is going on with those Bagel Bombs they're cooking up.   3:30 While we were there Becca made me some chai she's working on, we tried some of their juices….. Woohoo! But… (music stop) I don't exactly have a recording of that. Because. We accidentally locked our phones and bags in the back room. With the backup keys….. ooops.   4:20 Flashforward with me now past all of that and to us leaving, where you get to hear us leaving with those same keys we accidentally locked in the back room! From there we got a ride from one cafe to the next spot.   8:20 High Volt Coffee, lifted counter space. We tried 3 different drinks, (1) Bulletproof style coffee with butter and coconut oil, (2) Coke with espresso and vanilla syrup, on ice, (3) semi green banana, almond milk, espresso, cocoa nibs, ice, agave.   14:00 District Donuts location - did you hear my excitement about the Maple Sriracha doughnut?   15:45 Revelator Coffee, totally got lost on ‘637 Tchoupitoulas' before running into Brandon Paul Weaver. Very sleek space, minumalist, very limited and specific menu.   17:00 Thanks to a special barista from Spitfire Coffee   New Orleans is an old city, 1920 larger population than today, 384,000 residents. NOLA being a very traditional sport where things don't change quick, its richly STEEPED in traditions and character.    Backup and thank Byron, Spitfire Coffee off St Peter for making my list. That part of the city has buildings older than America itself.     20:00 what was that cocktail Brandon?   20:30 Freshcup Bethany PDX     No I did not visit Cafe Du Monde… Also Spitfire is awesome.
