If you stop into most breweries and nearly any bar or restaurant in New England today, you're going to see an IPA on the menu, and it will almost certainly be hazy. New England has one of the most distinctive beer cultures in the US. It wasn't always like this, however. In fact, until about fifteen years ago, most New Englanders had never really encountered a hop.The Alchemist's Heady Topper, the subject of today's episode of One Iconic Beer. John Kimmich started The Alchemist in 2003 with his wife Jen, and within months was making a beer that many people credit as the first hazy New England IPA. It's a funny thing about firsts, though. As we'll hear in the interview, Kimmich is uneasy with this description. Heady Topper may have sparked a region-wide culture shift, but it doesn't really resemble the beers that follow. Today we'll hear the story of Heady Topper, why its fans think it's so good, why it was the right beer at the right time, and how serendipity played a starring role in the form of a hurricane, a flood, and a new canning line. In addition to John Kimmich, we'll hear from Jason Alstrom, one of the co-founders of Boston-based BeerAdvocate. In the early days of the internet, the site became a nexus of discussion and organization and helped create the excitement that led to, among other things, the haze craze that would engulf New England. Happy Thanksgiving and welcome to another edition of the Flavors of Northwest Arkansas podcast. Appreciate you being here. Today, we catch up with Julie Sill. You know her from owning and operating a few legendary Dickson Street spots from back in the day, Common Grounds and the Hog Haus Brewery in Fayetteville. She's back and opening a new spot. More on that in a second. A few quick things first. If you're in need of a free Thanksgiving meal on Thursday, I've posted a list of places that are serving them on Instagram and Facebook. Just look for the Flavors of Northwest Arkansas. Secondly, some very important dates were announced yesterday (Tuesday, November 26th) for any and all beer nerds out there. The good folks at the Ozark Beer Company announced that they'll be releasing their vaunted BDCS during the last week of the year! For those that don't know, that is the Bourbon Double Cream Stout. People come in from out of state for this release. It's been rated World Class by Beer Advocate, it's and it's right here in our own back yard! We'll get a history lesson on it from Lacie Bray and Marty Shutter of Ozark Beer Company. Hear what you'll be able to get and when! Also, head to Ozark Beer Company's social media to see the message from owners Lacie and Andy about the release. Now. Back to the Feral Pig... Julie Sill came to the UofA on a soccer scholarship. A knee injury ended her soccer career, and she needed to figure out what to do next. While she was doing that, she waited tables. She worked her way up. She found a correlation between the restaurant business and soccer, and that's what sucked her in. She'll tell you what that is. She worked her way into management and was soon running a restaurant for someone else. It didn't take long before she had her own restaurant at the age of 21! She'll tell that story and how she got Common Grounds off the ground. Later, she'd own and run the Hog Haus Brewery and wait until you hear the sweetheart deal that she got! Health would force her to get out of the business and head home to Maryland, but Fayetteville pulled her back, and now she's launching a new spot. Sidenote- there are a few spots in here where adult language is used, so beware! We'll hear from Julie Sill, next here on the Flavors of Northwest Arkansas.

Jonathan Buford is the CEO and founder of Arizona Wilderness Brewing Company. He grew up in Ohio and moved to Arizona in 2002, when he drove his rusted-out 1988 Chevy Nova out West to explore the vast Arizona landscapes. He launched his first business, a window cleaning company, out of his garage in 2006. In 2010, while backpacking through the Arizona wilderness, Jonathan was inspired to take his interest in craft brewing to the next level to start his own brewpub. He orchestrated a successful Kickstarter campaign to obtain the necessary capital and opened the Arizona Wilderness Brewpub in Gilbert, Arizona, in 2013 as the very first brewery in Gilbert. Starting with just nine employees, Arizona Wilderness found quick success, growing rapidly and securing rave reviews from the likes of Esquire Magazine, The Phoenix New Times, Phoenix Magazine, Draft, Beer Advocate, and Sunset. Arizona Wilderness was even named “The Best New Brewery in the World” in 2013 by Ratebeer.com. Today, Arizona Wilderness has more than 160 employees and operates the original Gilbert brewpub, a European-inspired beer garden in downtown Phoenix, and a warehouse production and barrel-aging facility. Arizona Wilderness continues to celebrate hand-crafted, artisanal beers that are inspired by the beautiful and diverse state of Arizona and is consistently rated the best brewery in Arizona and among the top 100 breweries worldwide (out of nearly 20,000 total breweries). Arizona Wilderness also receives regular acclaim for its food, including being recently named one of the top 100 restaurants in Phoenix by AZcentral.com. In addition to providing world-class food and drink, Jonathan and his business partner, Patrick Ware, use their passion for the wilderness to continually drive improvements in Arizona Wilderness' impact on its community. Jonathan and Patrick have driven initiatives to: (1) save huge amounts of water from the Verde River (more than 320 million gallons) by transitioning the brewery's base malt to Sinagua Malt (which replaces heavy water use crops such as corn and alfalfa with barley in the Verde River Valley); (2) drastically reduce landfill usage by utilizing recyclable and compostable materials wherever possible; and (3) support local farmers and vendors by consistently seeking out local partners for all menu items, including exclusively offering 100% Arizona grass-raised and finished beef at the beer garden. Jonathan is also pursuing a career in capturing Arizona landscape photography. He embarked on a project documenting all 90 Arizona Wilderness areas which will be published by Arizona Highways Magazine. He also frequently contributes to the magazine. Toppling Goliath Brewing Co. makes big beer in small batches What do you talk about when you get one of America's most legendary breweries on your show.  Mushroom hunting, of course.  As we chatted with Toppling Goliath Brewing Co.'s founder Clark Lewey and brewmaster Mike Saboe before the show we discovered we shared a love of mushrooms.  We want to hunt morels, and they're experienced morel hunters.  They love them so much they even brewed a beer in honor of morels, Scorpius Morchella.  We promise the whole show isn't mushroom talk, but for a beer show there is a hell of a lot.  Hang in there with us, we'll get to the beer soon enough. Toppling Goliath has some pretty major accolades.  They're the 2021 US Beer Open Grand National Champions and Beer Advocate ranked them the #2 brewery in the world.  Their Kentucky Brunch Brand Stout has held the #1 highest rated beer spot on Untappd since 2015.   Clark and Mike say the high praise keeps them on their toes and they always strive to keep up their high standards. We sampled a couple of their brews, including Strawberry Shortcake Fandango, which is stellar.  This leads us into lactose talk (there's no lactose in the Fandango) and ponder if it's the MSG of beer, as well as discussing another MSG-like contender, Phantasm powder. Stouts and Stouts and Stouts With beastly stouts like Assassin, Mornin' Delight, and the sought after Kentucky Brunch Brand Stout we talk... stouts.  What goes into making a beer like this?  Brewing, aging, blending.  We talk secondary beer market, where a 2014 bottle of KBBS can cost up to $1,300.  If you want the more affordable version get your name in the hat for a ticket to the release, where a single 12 oz. bottle will cost you $100.  Not all Toppling Goliath stouts will cost you a C-note.  Their Rover Truck is an easy-drinking Oatmeal Stout that you can grab for around $10 for a 16 oz. 4-pack.  Now that's a deal. We haven't tried the KBBS yet, but we've got plans to get back on with the TG Brews crew for an online tasting.  Until then, I'll keep trying to invite myself to bottle shares for a taste. Tree House Brewing Company is located in Charlton, Massachusetts. It is considered to be amongst the best breweries in the United States, including public beer-rating sites like Untappd and Beer Advocate, as well as sites including Forbes, the Boston Globe, and Thrillist. Founded in 2011, the brewery was originally located in Brimfield, Massachusetts, then moved on to Monson, Massachusetts in 2013, before a multimillion dollar project landed them at their current site in 2017. Tree House is a non-distributing brewery—it is only available to buy on site—but given its popularity, lines at the brewery can run an hour or more on certain days. Charlton MA/Deerfield MA/Sandwich MA/Woodstock CT Restless- Weizenbock Expertly crafted, restless is rich, traditional, and delicious. To make it we combine wheat, a complex assortment of German speciality malts, and noble hops before fermenting it at the hands of a traditional top-fermenting Weiss yeast. It is then refermented in the can to produce a velvety texture that would otherwise be impossible to achieve. Combing the best elements of a traditional doppelbock and weissbier, it carries rich malt complexity and character with notes of brown bread, molten toffee, dark fruit, and mild yeasty phenols. *Pairs with chicken & dumplings or banana bread* All I Want for Christmas is Juice- DIPA All I Want For Christmas Is Juice is an American Double IPA brewed with a fruit-forward blend of American hops along with authentic Japanese sobacha tea paired with vanilla chamomile tea. Whether or not you're a fan of craft beer (and if you weren't a fan before 2020, honestly...what else will it take?), we can all acknowledge that the growth of the craft beer industry was unquestionably one of the defining food and beverage trends of the 2010s. The number of craft breweries in the US skyrocketed from around 1,500 to north of 8,000, and - in the process - Americans learned that beers could come in different colors beside "dehydrated urine yellow." We learned that bars could be built around things besides sports games and local cover bands. We learned not only how to pronounce gose, but also what they taste like. (Editor's Note: they're disgusting.) Our guest on the podcast this week was there for all of it. After starting as the weekend bartender in Half Acre Beer Company's taproom, Lee McComb did just about every job in the brewery before eventually becoming the Specialty Beer Manager overseeing Half Acre's program of award winning small batch and limited release beers. Lakefront IPA has been a staple for us for many years. That said, it is one of my personal favorites and if you can every get a draught of the “Cask-conditioned” version I’d encourage you to have one as I consider that one of the best beers I’ve had the pleasure to drink! My love of letterpress printing is no secret, and in this episode, I speak to two designers who devote parts of their working lives to modern letterpress. This episode was taped live at Ada's Technical Books and Café in Seattle on January 23. Printing didn't change much from about 1450 to 1950. It became faster, motorized, and blew up to industrial scale, but it was only when the “relief” (or letterpress) method of printing—putting ink on a surface and then pressing paper onto it—was replaced with offset lithography, which relies on flat printing plates and thin films of ink, that everything changed for good. Letterpress printing has remained as a craft, though, and it has thrived in the last 20 years as it's been rediscovered and taught fresh to new generations. Two Seattle practitioners have deep ties to this great resurgence of letterpress. We talk about how they got sucked into an old-school printing method and how the medium affects their design and vice-versa. Sarah Kulfan is a visual designer, illustrator, and letterpress printer. She is the proprietrix of Gallo Pinto Press and Beans n' Rice where she respectively prints limited edition prints and runs her freelance graphic design business. Demian Johnston is the Designer and Pressman at Annie's Art & Press, a letterpress shop in Ballard. At SVC, he teaches both introductory and advanced classes in the letterpress program. Show notes: We talk about a lot of concepts and old tech in this show, so the notes are a little more extensive to help you understand some of the things we mentioned just in passing: SVC is the School of Visual Concepts in Seattle, where Jenny Wilkson runs the letterpress program. It's a for-profit analog and digital design school, teaching letterpress, UI/UX, graphic design, copywriting and more. It's where I had my 2017 design residency, too! Demian has a 10x15 Chandler and Price (C&P), which is a workhorse press, manufactured from 1884 to 1964. Stern & Faye: Jules Remedios Faye and Chris Stern ran this press together for decades. Jules continues to print and bind, and handbound my book, Not To Put Too Fine a Point on It (copies still available). The C.C. Stern Type Foundry, a working museum in Portland, Oregon, is named for Chris and features a lot of Jules and Chris's casting equipment. “dissed type”: Type distribution is an incredibly tedious part of hand setting type. Each character you pull out of a type case has to be “distributed” back into its original compartment in the case when you're done with a printing job. Ruling pens: These pens were used for making lines, or “rules,” and hold ink in a reservoir between two jaws. The gap of the jaws can be adjusted to create lines of different thickness. Plates: Printing plates are solid sheets of metal or plastic made from source material and intended to be printed as a full sheet, sometimes including dozens of pages. Starting in the 1800s, printers would cast metal plates (called “stereotypes”); in more recent decades, printers rely on a rubbery plastic called photopolymer that's light sensitive. Digital files can be output to high-contrast film and exposed to the plastic plastic, and make a letterpress-printable plate. Carl Montford: a local renowned wood block engraver, who has taught thousands of people how to carve linoleum blocks and hundreds how to carve in wood. Linoleum blocks: These are really just pieces of linoleum glued to a wood base. A designer carves the linoleum to leave high areas to receive ink. Type high: The exact height needed for type and other material on the “bed” of a press to be inked by rollers and press exactly at the right distance into paper. It's 0.918 inches in America and England. Touche plate: This may have been a regionalism, but a “touche” (French, pronounced toosh) is a touch-up plate used to fix an error in offset printing. Reduction cut: On a block, you engrave a starting image that prints in the lightest color, carve away details, print the next-lightest color, and so forth. The block is creatively destroyed in the process. A “kiss” impression Vandercook cylinder presses are the hot thing in letterpress today, originally designed largely as a “proof press”: to pull a copy of a section of text for proofreading, layout, and evenness, before it went on a real press. Printing the Oxford English Dictionary (YouTube) “Farewell, Etaoin Shrdlu”: The last day of hot-metal Linotype typesetting at the New York Times The quote I was trying to recall was from A Short History of the Printed Word, written by Warren Chappell and, in a second edition, updated and extended by Robert Bringhurst. Bringhurst wrote the following devastating sentence about the entire era following relief printing: In the 1970s and 1980s, the practitioners of photocomposition and offset printing were, like Gutenberg, engaged in a simultaneously innovative and imitative act. But they were not imitating writing; they were imitating printing—and were doing so in a world where reading had become, for most, a passive, cerebral act, unconnected with any physical sense of the making of letters, and unconnected with any sense of the intellectual urgency of publishing.

If you produced what many view as the best beer in the world, with a 100% rating by Beer Advocate, you'd probably expect to be living a life of fame. But that's not the case for John and Jen Kimmich —founders of The Alchemist Brewery and the folks behind the world renowned Heady Topper. With the crazy demand for the highly rated double IPA, it'd be easy for the Kimmich's to find a few investors and triple the size of their 9,000-barrel, Waterbury, VT facility. But instead, they chose the unconventional route — staying small. They'd rather be in control of every decision and not have to answer to a board of directors, even if that means not living large. In this episode, host Mike O'Toole visits the Kimmich's at The Alchemist. They discuss why they “don't want to be gigantic for the sake of being gigantic” and why getting big is not the only way to make an impact. For the Alchemist, success is about making great beer, contributing to a growing craft beer movement, and building a company to last in their Vermont community.
