Vic has his ear to the ground, or maybe his lips to the whisky, and through a whisky event was introduced to Thomson whisky out of Auckland. This was through Jimmy Shore from The Whisky List so Jimmy has come on the podcast to introduce us to Mat Thomson founder and distiller of these amazing liquid. Mat takes us through the back story and what a journey it has been for him and his wife Rach. There's a little island off the North East tip of Tasmania call Flinders Island and that beautiful secluded island is home to an amazing Whisky Distillery called Furneaux Distillery.This episode we get to Talk to Tom Ambroz who is part owner and Head distiller there. Welcome to Season 4! we thought it best to start season 4 with an episode on 2024 in review. We each go through our favorite dram of the year and our favorite whisky event or experience. The ground rule being that the dram needs to be one that we have a bottle of, so not an incredibly old whisky we tried while at an old and rare event. Was a really difficult decision in the end as we have had some amazing whiskies over the year and some of the experiences were incredible and unique. One day in 2017 Tim Polmear asked his brother Rob: “If you could make whisky your way, using the best equipment in the perfect location, how would you do it?” That was the catalyst for Waubs Harbour Whisky. We asked the guys if they saw Waubs Harbour Whisky as Successful. Of course they were surprised by this question as they feel they have only just begun, but considering their original vision of creating a Maritime whisky, they have to acknowledge that they have. So we get stable temperatures in our bond stores, and that allows for longer, more stable maturation. And for us that's a style of maritime, kind of provenance on whiskey in Tasmania. So yes, we've kind of achieved that, I guess, because we've been doing those things. We've been maturing whiskey in those States or in that Providence in Tasmania for 5 or 6 years now and releasing whiskey in that condition. We're really proud of the whisky itself and what was yeah, our vision. What they have achieved in this short amount of time is incredible and we think this humble attitude and desire to understand and innovate while staying authentic is the recipe for their current and ongoing success. We find out just what goes into running a whisky event like these and just how many there are. The association looks to promote the industry in all forms by strengthening the community through education and training both internal and external, along with being the advocates for improvements to standards and policies that have an impact on the industry. What a pleasure to sit down and chat with Paul Burnett from 23rd Street Distillery. 23rd street is not unknown to me but gee haven't they been flying under the radar. It was very refreshing to learn about the history and the achievements of this distillery with a massive range of products and what appears to be a focus on quality throughout the process. He and his Partner Ro are deemed the dreamers of the venture, but they have already turned a lot into reality. A what's in your glass with very different whiskies.... mostly.. John takes us through a Talisker Port Ruighe NAS, and seems pleasantly surprised at how much it has opened up in the bottle. Brad shares a Port Charlotte with Adrian and while it is always a crowd pleaser we find out it was Adrian's gateway into peat. Adrian has an indie Caol Ila that is significantly different to your standard Caol Ila. Lastly Vic has a Glenfiddich that has a nose and initial palate like a Brandy with loads of pear. Definitely worth having a look for these drams and if you can pick them up do it!
