Jim is back from his worldly travels, and he's not just returning to work—he's returning to bourbon after a two-week hiatus filled with Belgian beers and French wine. He recounts his trip through Amsterdam, Brussels, Germany, and Paris with original Bourbon Road co-host Randy, from backpacking and train travel to attending the World Belgian Beer Festival. He's joined by Todd and longtime friend of the show, Amsey Winning, for a full-fledged tasting. The main event features a lineup from Oaklore Distilling Company, a North Carolina-based producer founded by two neighbors, Matt Simpkins and Tom Bogan. In a twist, the distillery was scheduled to join the show but had to cancel at the last minute, leaving the guys to explore their whiskey on their own. They start with Oaklore's flagship 4-Grain Bourbon, a 92-proof blend of 4-to-6-year-old North Carolina and Kentucky whiskeys, noting its fresh, light nose with sweet cream, oak, and light spice cake. Next, they try the North Carolina Straight Rye, a 6+ year-old, 92-proof grain-to-glass expression. It proves to be a complex “chameleon,” evolving in the glass with unique notes of blackberry jam, black tea, and a surprising roasted coffee or dark chocolate finish. The trio from Oaklore is rounded out with a Port Cask Finish Rye, aged for several years before a lengthy 12-to-18-month finish. It presents a fruit-forward profile with a nose of berry pie and a palate reminiscent of grape skins and tawny port. In the second half, the tasting gets experimental with two unique distillery exclusives. First up is a Sagamore Spirit Rye finished for an incredible four years in Albarino white wine casks from Maryland's Boordy Vineyard. The 103-proof whiskey delivers a stunningly floral and perfumey nose, leading to a complex palate that had the hosts pausing to contemplate. Tasting notes of wildflower honey, vanilla, lavender, and a savory rye spice made this a truly standout pour. To finish the night, they sample a special release from Ben Holladay's Ancient Cave Collection: a 7-year, 100-proof bourbon finished in hickory-smoked American oak barrels. Rather than being overwhelmingly smoky, the whiskey offers a delicate, integrated smoke with notes of smoked apple butter and apple cobbler cooked over an open fire. Smoked chocolate crème brûlée Cook time: 35 minutes Prep time: 10 minutes Serves: 6 400ml cream 4 tbsp caster sugar 100g good quality dark chocolate 1/2 tsp vanilla paste 5 egg yolks 1 whole egg 6 tbsp caster sugar (for the caramel top) Preheat oven to 140*C (NOT fan-forced). If you have a cold smoker, place the cream into a roasting tray and cold smoke for 1 hour. (if you don't have a cold smoker, just skip this) Place cream, sugar, chocolate and vanilla in a saucepan over medium heat. Cook, stirring constantly, for 5 minutes or until hot (do not allow to boil). Remove saucepan from heat. Whisk egg yolks, vanilla paste and whole egg in a heatproof bowl until well combined. Pour hot milk mixture over egg yolk mixture, stirring constantly. Skim all bubbles off the surface then pour into 6 small ovenproof bowls. Place bowls in a deep roasting dish, then pour boiling water into the bottom of the dish until it reaches halfway up the bowls. Very carefully place the roasting dish in the oven and cook for 35 minutes. Remove the crème brûlée form the oven and allow to cool before placing into your fridge to chill. To finish, sprinkle 1 tbsp of sugar over each brûlée and burn with a brûlée torch to finish. See omnystudio.com/listener for privacy information.

Flatbread dough 200g plain flour 200g spelt flour or medium wholemeal 7g instant dried yeast ½ teaspoon salt 25ml good local rapeseed oil or olive oil 75ml buttermilk 150ml lukewarm water Mix the flours with the yeast and the salt and make a well in the middle. Add the oil, buttermilk and water and mix to a dough – add a little more water if necessary. Turn onto a floured surface and knead for 5 minutes. Place in a lightly oiled bowl and cover for an hour.Chorizo and onion topping with scarmorza cheese 100g sliced chorizo 1 tablespoon oil + more for cooking the flatbreads 4 onions, finely sliced 125g coarsely grated scarmorza cheese or substitute cheddar Heat the oil in a pan and add the chorizo. Cook for a minute then add the onions. Cook gently until golden and soft. Divide the dough into 4 and roll each piece into a thin circle. Add a tablespoon of oil to a large frying pan and when hot add the flatbread. When bubbles appear flip over, lower the heat and spoon over a quarter of the chorizo mix and scatter over a quarter of the cheese. Place a pan on top and cook for about 4 minutes or until cheese has melted and bottom is cooked. Smoked paprika dressing 150ml sour cream 1 teaspoon sweet smoked paprika Salt and pepper to taste Whisk together and drizzle over the hot flatbreads.

Or was this just a random patrol who had seen me out walking and done what any cop would do and investigate. I froze in panic, all my excitement undone in an instant. I knew I was breaking the law. Public nudity is illegal in my state. Yet here I was, stark naked on a public street, with no clothes nearby. I was potentially in real trouble. In a flash I considered my options. I'm a fit guy, and I briefly wondered about running. I wasn't a million miles from the house now. But it wasn't like I had access to the house any more, the keys were with the realtor. The only reason I was going back to the house was for me to put my clothes back on, get in my car and go. And could I really outrun a police cruiser? Or was it more likely that I'd just make more trouble for myself (or even; worst case scenario; end up in a car chase if the police assumed I was intoxicated and then saw me get behind the wheel)? I could pretend I was drunk, or high; or even that I was freaking out. But those weren't sensible suggestions. Being drunk or high and naked in public would probably go down worse than being straight sober and nude; and if they thought I was crazy I might find myself getting a tazer to the balls; or even a gun pointed in my face. Even at best I'd probably end up in a hospital getting checked out when I needed to be on my way back to college. I decided that really, the only option I had was to co-operate with the cops and tell them the truth (well, a version of the truth; if at all possible I intended to leave out the part where I had masturbated publicly in front of people!). I turned and faced the cruiser. I had my hands by my sides, palms out; I didn't want the cops to think I meant trouble. It was a lone officer driving, and he got out of the car. "Then, son, do you mind telling me what you're doing out here at this time of day in a public place without a stitch of clothing on you?" I chose my words carefully. "Well, officer," I began, "it's my last day in town. I'm moving away and I'm leaving tonight. And, well, I just got this idea in me that before I went I would do a little streak, just my way of seeing the town off. It seems real dumb now to say it to you but it just made me laugh at the time to think it, so I sorta dared myself to take my clothes off and run about a bit. You know, the way sometimes people do at football games and the like?" Well, it wasn't a lie. I wasn't sure if the sort of prolonged public nudity I had engaged in counted as 'streaking' exactly; but it came I think from the same motivation; that compulsion to exhibit oneself, to show my naked body to the world. The cop said nothing for a minute. I could tell he was turning my explanation over in his mind, looking to see if it held up. I had no idea if he was responding to a complaint; if he was, my story might unravel, especially if it showed I had been naked for about 90 minutes now and travelled quite far. "You know, son, that running around in public view in the altogether is against the law?" "I know, officer," I replied, trying to sound suitably contrite. "I'm sorry for this. I meant no harm, I was just having a little fun before I leave town. But I should have thought about it more. I guess I'm in real trouble now, huh?" The cop looked thoughtful. "Well now," he said after a while, "I wouldn't say that." He opened the door to his cruiser and made to lean inside, but stopped and turned back to me. "Now," he continued, "I really should write you up with a citation, at least give you a ticket and give you a ride back home. But, you seem like a good kid. I know your folks, know of them anyway, and when you say you're leaving town tonight I know that's true. I think you're a smart kid who decided to do something dumb on a goof and, well, it isn't in me to punish you for that. How old are you, son? 18, 19?" "20," I replied. He nodded. "I got a son around your age and he's a smart kid too but he says and does the dumbest stuff sometimes. Not 'run around the street in your birthday suit' dumb but still pretty dumb. I wouldn't want to see him get into trouble for that and I doubt your daddy would want the same for you.
