This week Nicola and Di chat with the wonderful Callan Boys. Callan is the Good Foods National Restaurant Editor for The Sydney Morning Herald and The Age and the NSW restaurant critic for The Good Weekend. If you like to eat out and discover new culinary adventures, including in regional areas of Australia, this is the episode for you. In this episode we chat to Callan about how he got his start as a food critic and landed his dream job. We hear the funny ways that Callan uses his family members to make fake bookings in other people’s names so that restaurants don’t know he’s coming ahead of time. He talks us through the Good Food Guide and the rating system, giving us the inside scoop on how they give out the hats. Callan also gives us his best of the best when it comes to restaurants in Sydney, Melbourne, Brisbane, WA and Tassie and we go through some of his latest finds in regional NSW. You’ll want to stay tuned to hear the restaurants to put on your list for your next special occasion. We also go through some cheap eats, including the best burger Callan’s ever found in Australia! We also chat about where we met Callan, at the incredible Qualia lunch put on by Will Cowper in Hamilton Island and some of the highlights from that day. And we finish up with some foods that are on trend that you won’t want to miss!! We had so much fun chatting all things food and wine with Callan and we hope you find this episode as delicious as we did. The comeback from a frightening crash in South Australia and the moment he realized it was time to get back on the horse. Hustling a two wheel drive on the way to the Australian title in 2014 and a little sentimental attachment to that Renault Clio which is still in the garage. Challenging himself on the world stage in a Ford Fiesta R5 machine and why Scott is rightly proud of the performance in Finland including an insane jump that wowed the crowd! Plus the incredible Pedder’s suspension story from his Grandfather channeling skills he learned working on planes in WWII to his father’s early adoption of franchise formulas not all that long after McDonalds. And a managerial change in a milestone year for the company. There some breaking news too around Scott’s immediate future after a crash in Queensland ended his chances of adding another Australian title to the rally CV. How he plans to be in the moment and enjoy the beauty and pure exhilaration of competing in Tassie in November. And the ‘Trading Places’ story you may not have heard. Letting Will Brown and Brodie Kostecki drive his Skoda Rally car before Erebus let Scott loose in the Supercar on a wet and wild day at Calder Park. When did having twin basins and three toilets become the norm? As an architect who bucks the idea of bigger-is-better Jane Hilliard uses the principle of “Enoughness” as a design principle for the built environment. Its better for both the natural environment and the people around us. It allows us to be rich in ways that matter instead of buying into the idea that grandeur will make us happy. For her 'enough' looks like going out into her backyard supermarket garden picking something and cooking it. Its also having outdoor space & quiet, unstructured time to think. Guided by the principle of “enoughness,” she manages her work load to keep her energy output within her own capacity while meeting her modest need for resources to sustain her family and business. Join me on the second segment of my ecotourism trip to Tasmania, Australia (my unscientific, amateur, American, vegan, wombat-obsessed perspective) with all my own audio recordings from my June 2025 trip. This 58-minute (part 2) segment of the trip takes you along with me to my favorite part -- Maria Island National Park and its wombats, kangaroos and wallabies, stingrays, and ruby red anemones, and the culling issue of marsupial "overpopulation" -- through to Port Arthur Historic Convict Site, then on to the city of Hobart, with insights from my Conference on Communication and Environment #COCE2025 (at Univ of Tasmania), including compelling audio clips from Tassie Green Party pioneers who spoke to us -- Bob Brown and Christine Milne. As retired Members of Parliament, and forest/river and gender activists, Christine and Bob have refreshingly candid political advice for activists that also gives listeners insights into current Australian politics. Plus you get to hear their cool Aussie accents (much better than my one attempt early on to do an Aussie accent). "Bad Weather" pronounced "Beed Weeth-uh." (side note: I loved the cool weather there in their winter and the sunny days on the coast). If you like my ecotourist ramblings and low-tech audio, make sure you've listened to Tassie podcast part 1 in the previous podcast posting. And see photos and videos from my trip at https://www.facebook.com/InTunetoNature Idea: You can do a drinking game every time I talk about wombat poop, the ferry, and how adorable any marsupial is. Note: All the animal audio and photos here are of free-living/wild animals (no one was captive in a zoo or sanctuary), which did limit the number of other animal species I interacted with (no Tasmanian Devils or platypuses this time), but I felt it was a more natural and respectful way to interact (it was the animal individual's choice to get near me or allow me nearer to them). And I had an amazing time, and was elated for every wild animal I saw (like fairy wrens or swamp hens at outdoor bistro tables eating my chia pudding cup). As part of me compensating for the greenhouse gas emitted from my international trip, I made some donations to the Tasmanian Land Conservancy and the Aboriginal Land Council of Tasmania and the Friends of Bonorong Wildlife Sanctuary. "In Tune to Nature" is a weekly radio show airing Wednesdays at 6pm Eastern Time on 89.3FM-Atlanta radio and streaming worldwide on wrfg.org (Radio Free Georgia, a nonprofit indie station) hosted by me, Carrie Freeman, or Melody Paris. The show's website and my contact info can be found at https://wrfg.org/intunetonature/ Tell me about wildlife experiences YOU have had in Australia or any comments on my Tasmania trip, and I might mention it on a future show. Thank you, friends! Take care of yourself and others, including other species, like wombats! If you've ever felt stuck between wanting more for your business and the fear of actually going after it, you're not alone (and you're not broken.) The friction you're feeling might be the very sign that you're on the right path. On this week's Joycast, I'm joined by photographer Tassie Winters for a real talk about self-doubt, imposter syndrome, and how fear shows up when we're stepping into something bigger. In this new episode, you'll understand: Why fear and resistance are normal when you're growing The surprising way journaling can help break through a lifetime of self-doubt How pushing past “I'm not good enough” led Tassie to a six-figure studio (without burning out) Plus, Tassie shares how she ditched hustle culture, moved into full-time photography, and created a business that's both profitable and peaceful. If you're craving more purpose and confidence in your photography journey, this one's for you. RESOURCES: Show Notes: Click here. Episode Transcript: Click here.
