In celebration of Single Cask Nation's 15th anniversary, Joshua and Jason revisit a conversation they had with Anthony Wills, Owner and Managing Director of Kilchoman Distillery. When Single Cask Nation launched, the first three casks of whisky bottled were from Arran, BenRiach, and Kilchoman. We here at SCN HQ consider ourselves incredibly lucky to have been the only independent bottlers to have legally bottled a cask of Kilchoman independently. The boys discuss this and other things as a new introduction to this older episode, one of their favorite conversations to date. Joshua and Jason consider themselves incredibly lucky to have the opportunity to travel all over the world to interview some of the most interesting people within the whisky-making industry (and each guest is as interesting as the next). Few, however, are able answer things as candidly as the good Anthony Wills does in this episode. It's his distillery so he gets to do things and talk the way he likes. We like this. Adam went out to the shop and heard birds. Which would be fine — except the shop has closed-cell spray foam insulation. Thick stuff. Solid. Apparently it doesn't matter, because the birds had been pecking through it anyway, six spots deep, living inside the walls like they owned the place. He grabbed a can of expanding foam, took his six-year-old Leo out to help seal the gaps, and watched Leo immediately stick his hand in the wet foam. It went everywhere. On Leo. On the shop doors. On a previous car that is now long gone. If you've ever tried to wipe expanding foam off anything, you know how the rest of that goes.He opened the show with that story. Then Jim Spencer showed up — back after a long hiatus, cowboy hat on, ready to weigh in — and they cracked a bottle of Kilchoman's 14th Edition, an Islay scotch that doesn't get the attention of a Laphroaig or Ardbeg but probably deserves it. A $110 bottle. Jim put it at a 3.91 on the yummy scale (it was a prime number recording day, so that's out of 7 — work it out yourself). They all agreed it was legitimately good.Before getting into the main topic, Dave gave an update on Baby Mary. She's been on a paralytic to help her grow, and they're trying to wean her off it. She tolerated the second attempt better than the first, but not well enough. They'll try again Monday or Tuesday. Pray for her blood pressure to stay stable when she comes off, and for her heart and lungs to stop fighting the ventilator. Dave said it directly and without dramatics, and that's the right way to hear it.The episode is about the dinner table. Not as a feel-good idea — as a liturgy.Adam had done a piece on this for his Substack: what makes a good day? Not an emotional high. A good day. He landed on three things: early morning prayer and reading, honing his craft in some way, and making it to the dinner table. They spent the hour unpacking why that third one carries so much weight.Dave brought in the biblical thread — Abraham hosting God and the angels, Moses eating with the elders on the mountain, the Passover meal, the Last Supper, Christ asking for fish in his glorified body just to show the disciples he wasn't a ghost, the Road to Emmaus where he revealed himself in the breaking of bread. The pattern is not subtle. God keeps showing up at tables. There might be something to that.Adam made the distinction between communication and communion. A lecture is communicative. The dinner table — done right — is a place of communion. The giving and the receiving. The statement and the response. That's not an accident. It's what the table is for.They got into the practical mechanics: one conversation at a time, husband and wife starting the conversation before the kids are brought in, ending dinner with prayer for the souls in purgatory, the escalating formality through the day (breakfast is just survival, lunch gets the flowers on the table, dinner gets the candles). Dave's daughters were wearing hoop skirts on the grass at the contra dance they hosted the night before. He mentioned a Clear Creek inspiration — the monks don't even sit at breakfast. He's pondering it. Adam is not.The story that landed hardest was from Alabama. He and Dave were on their way to EWTN — they recorded an episode in Mother Angelica's office, and Adam has video of Dave in makeup, which is apparently a treasure. They had dinner at the home of a man named Charlie Remore, a friend of a friend they'd never met. Large family. Long dinner table. Every child had a job, and they knew it cold. One managed silverware, one managed plates. When dinner ended, one stood up and cleared. Adam tried to stack the plates to help, and Charlie's kid corrected him — politely, but clearly. Don't stack the plates. We have to wash both sides. That's my job.That's disinterested service. The Catechism (CCC 2223) actually names it. Charlie's household had made it habitual. No one was waiting for a thank-you. The family is the mission.The picky eater section was, as promised, a hot take. Adam doesn't tolerate it. Eat what's served or it goes in the fridge and that's what you're eating next time. He said it, Dave agreed, and they both acknowledged it's hard — the chicken nuggets are right there, it's easier, you're tired — but the long-term cost of caving is worse than the short-term cost of holding the line. Your kid spreading butter with their fingers in your presence, knowing the rule, is an event that requires a response. Even when it happens to be this morning.After dinner prayer. Pray it. For the faithful departed. It's been jettisoned by most Catholic families, including strong ones, and it shouldn't be. You're feeding those who can no longer feed themselves. Geese, Barley, and Peat At The First New Islay Distillery in 124 Years In this brand new episode of the Whiskey Ring Podcast, I had the pleasure of speaking with James Wills, son of founder Anthony Wills and a worldwide face of Kilchoman Distillery on Islay. This episode marks a significant milestone as it is my first interview with an Islay distillery (I was surprised too!), and I was excited to delve into the unique aspects of Kilchoman and the challenges of distilling on this iconic island. We start off where any good whisky podcast starts: with geese. Yes, geese. They're kind of a big deal there. I'm not known for going with the grain (yeah I said it) so why not there. Kilchoman has a lot more going for it, though, as it enters its 20th year in 2025. As the first new Islay distillery in 124 years, Kilchoman needed to be different. They couldn't just be peaty, they had to be unique - and thus they became the first farm-to-glass distillery on the island. We chat about all the nerdy stuff you'd expect, like barley experimentation and yeast and fermentation, plus a dive into how their bourbon barrel sourcing and full-term maturation (note: not finishing!) work. There's also plenty to explore about the "whys" and inflection points in the distillery's two-decade evolution. Anthony Wills is the founder and creator of Kilchoman Single Malt Scotch Whisky, the first new distillery to be built on Islay since 1908. His previous career in wine sales led him to delve into independent whisky bottling ventures. And with deep roots to Islay through his wife's family, the grand idea to open a new distillery actualized in 2005. The unique profile of Kilchoman is textured, rich, and elegant. Steve sends his apologies!!Names of Internets got a little time which represents the point about style that the team use for the project. The Style, tone of voice, graphics, and word choice helps set the style of the project, training, look and feel etc. So often the name chosen will drive the style.Some thoughts on how the project is linked to the corporate brand, but the best advice is to have a feel of the corporate branding in whatever style you decide on for the communications and adoption of the project.Navigation gets a good minute or two both on style and importance before taxonomy has a few sarcastic comments that ensures it is not forgotten and an indication that it is important and something that needs to be taken seriously.Returning to the link to the company branding needs to be considered but the intranet and project communications should be aligned to the company style. Steve and not sure about how a company ethos is defined and by who and gets very deep on this wondering who makes the decisions.... Marijn is right in that M365 project needs to work alongside the way the company operates.We do agree on the fact that different companies need a different personality to the project and intranet, we know banks are more serious than a software house etc. Steve does need to let it go... companies find their own level it is not decided by ‘John' or any team.Marijn hits on the important point that whatever style/vibe/feel you decided on it should be consistent from beginning to the end and a strategy of style that everyone signs up forDon't let the style take away the main priority that M365 projects are about changing and improving communications and collaborationYou should not forget that you need to balance the audience needs and the company style. Legal people have a different mindset to engineers and marketing and the content is very different ranging from Serious to stories to data sheets. I was able to get my hands on a collaborative vatting done by the Whisk(e)y Soaked Souls and I have to say I had my doubts that there would be a noticeable difference from the standard Machir Bay. I really should know better. It is just enough that it makes the Machir Bay more approachable, dare I say softer? The additional Sherry just brings the right amount of fruit up into the peat that now it feels balanced. It literally made my mouth water, and I am not sure I have ever said that about an Islay Whisky before. A wonderful dram! Cheers!
This absolutely delicious PX finished whisky is the stuff dreams are made of. From the delightful sherried nose to its impeccably balanced palate, the warm finish just wraps this one up perfectly. Kilchoman has earned its place among the greats on Islay, and they are all great. I am astonished that my single bottle of Machir Bay has 8 brothers and sisters next to it now. That didn't take too long.
Episode 11! Today, we're going across the pond to the North of England and Spirit of Yorkshire Distillery. I'm joined by founder and Managing Director, David Thompson. Dave is a farmer at heart, and Yorkshire is his garden. Yorkshire is the largest county in England by far and has ample space to grow grain and everything you need for distilling. And yet, like much of the rest of England, distilleries are few and far between compared to its Northern and Western neighbors. I ask Dave why this is, what constitutes a “Yorkshire” style of whisky, if there is one, and what he and Spirit of Yorkshire bring to the table. The core answer and the most fascinating one is that they are, again, farmers at heart. Spirit of Yorkshire isn't meant to be a global, shelf-filling enterprise – it's meant to showcase what can be made with the local product and share it with those who will enjoy it. As their acreage grows, so will they, and not a second sooner. Spirit of Yorkshire is a field-to-bottle operation, distilling their own home-grown barley. Keep in mind that this is the same barley that could be going to Scottish or Irish distillers – much of what's distilled to the North and West is barley grown in mainland England, and yet there are conspicuously few distilleries where the barley is actually grown. I love talking to distillers and producers right on the cusp of something big, and that's exactly where Spirit of Yorkshire is. As we speak, new agreements with distributors in the US are being signed for their Filey Bay line to get to the US. I'd also be remiss in not mentioning that Spirit of Yorkshire is a Jim Swan-connected project. The late Dr. Jim Swan, who passed away in 2017, was prolific. If you're an American whiskey drinker, the most apt comparison might be Dave Pickerell, but with all due respect to the late Mr. Pickerell, Jim Swan's influence reached as far as one possibly could in whiskey. Dr. Swan's fingerprints remain on some of the most exciting distilleries around the world, from Yorkshire to Kavalan in Taiwan to Penderyn in Wales, India's Amrut, and Kilchoman on Islay. He had influence in every major whiskey-producing country and many of the up-and-comers, too, with a signature style that was less about him and more about what the local style was or could be like. So, does it make a difference to distill where the barley is grown? Well…to be honest, I'll have to wait to find out. Not a long time, but just a little until distribution hits New York. I am very excited to do so and will be posting my tasting notes as soon as I can grab a bottle (or three). Took some time to discuss this delicious dram after some wonderful correspondence with Kilchoman on Instagram lately and I felt it warranted an early episode as I was going to stay off of Islay for a bit. I wasn't disappointed by this decision. It was delicious, more so than I remember as it had been awhile. Yum!
