The dust had hardly settled on Anheuser-Busch InBev's 2015 acquisition of Elysian Brewing Company when Budweiser's Super Bowl ad, “Brewed the Hard Way,” poured salt in the wound by punching down at the entire craft brewing industry on the biggest stage imaginable. Today on Taplines, we're joined by Elysian cofounder Dick Cantwell for a look back at that pivotal moment, when ABI did a little mask-off mudslinging at America's microbrewers even as it was actively buying into the segment. On this episode of The Session, Justin is joined by Dick Cantwell, Denham DSilva of Deep Liquid, and Teresa Psuty from Crooked Lane to talk about how AI can converge with craft beer and help brewers connect with consumers. Rather than let our data be used against us just as a marketing tool, Deep Liquid seeks to democratize data, and AI, and let consumers and brewers consult on beer recipes, flavor profiles and more. As a start, we gathered together five of our favorite breweries and asked them to participate in one of the first AI beer projects in the U.S. Tune in and find out how! Dick Cantwell has been brewing for around three decades, and was one of three co-founders of Elysian Brewing in 1995. He was the lone dissenter when AB InBev offered to buy the company, and left thereafter. Recently he was part of a deal by New Belgium to buy San Francisco's Magnolia Brewing, where he plans to do spontaneous and barrel-aged beers, along with the cask ales the brewery has always made. In our podcast, Dick describes his time in craft brewing, and the lessons he's learned at his various stops. The interview is packed with the kind of wisdom only experience brings. Craft Brew News – 12/07/18WE ARE RANKED # 12 IN FOOD CATEGORY ON iTUNES !!!!California ABC Uncovers Brewpub ViolationsA statewide investigation by the California Department of Alcoholic Beverage Control (ABC) into 70 brewpubs with “Type 75” licenses uncovered violations by nearly 50 of the licensees. As Brewbound reported in late July, the Type 75 retail restaurant license gives brewpubs the ability to produce between 100 and 5,000 barrels annually. However, some business owners sought to obtain the licenses with the primary intent to sell spirits. The investigation found that nearly 50 licensees were either not brewing beer, not meeting the quotas or not functioning as a brewpub.California Gov. Jerry Brown signed a new law in September allowing Type 75 licensees to sell their products for off-premise consumption. The law also tightened requirements for obtaining the license, requiring license holders to operate at least a 7-barrel brewing system and produce and sell at least 200 barrels annually.Previously, Type 75 licensees were required to produce at least 100 barrels per year, with no sales requirements. That led some business owners to seek the licenses, which cost about $14,000, instead of obtaining liquor license, which can cost hundreds of thousands of dollars.More than 1,200 Breweries Join Sierra Nevada Wildfire Relief ProjectMore than 1,200 breweries have signed up to brew a special IPA, created by Sierra Nevada in an effort to raise money for wildfire relief. As part of those efforts, beer companies will brew the same beer and donate proceeds to the Camp Fire Relief Fund, which supports those affected by the California wildfire that killed 88 people and destroyed thousands of homes and businesses.Sierra Nevada founder Ken Grossman wrote that his company will donate 100 percent of sales from Resilience Butte County Proud IPA to the fund.“Our hope is to get Resilience IPA in taprooms all over the country to create a solid start for our community’s future,” Grossman wrote.Brewers large and small have agreed to participate.New Belgium Brewing Launches ‘Up Next’ Rotator Series with Brut IPAFORT COLLINS, Colo. — New Belgium Brewing’s brand new Up Next Series taps into the brewery’s tradition of innovation by offering easy-drinking, unique and flavor-bending beers that reflect evolving trends in food and drink. The beer offers a crisp alternative to hazy fruit-forward IPAs.Ross Koenigs, New Belgium Research & Development Brewer states “Our Brut IPA mashes wine notes with a beer backbone that delivers the best of both traditions. Photo by Clara Rice When Dave McLean moved to San Francisco’s Haight-Ashbury neighborhood after college, he was chasing one particular thing: the Grateful Dead. McLean was a small part of a wave of hippies, idealists, and rock mega fans who came to the city at the same time for a similar reason, but unlike many of the others, Dave actually stuck around. And then he built a business here: the Magnolia Brewing Company. With the nearly 20 years Dave was at the helm of Magnolia, he became part of the fabric of the modern Haight District. For a neighborhood that is synonymous with counterculture and the “summer of love,” turned out Jefferson Airplane and Janis Joplin, that’s something. Magnolia was, and is, a stalwart brewpub in a historic neighborhood of a rapidly changing city. But no one is immune from the effects of a changing economy. An investment in a difficult property in another evolving neighborhood proved too far ahead of its time, and Magnolia faltered financially. As a last resort, Dave called Kim Jordan and sold the business to New Belgium, Dick Cantwell, formerly of Elysian, and Oud Beersel of Belgium. It was a deal that was deeply personal for Dave. Ultimately, on as good as terms as possible, he left Magnolia, but not before setting out on a new venture: Admiral Maltings. The founder of another longtime brewery in San Francisco, Ron Silberstein of ThirstyBear Organic, knew Dave’s affinity for quality malts, and tapped him to help him establish a new craft malt house in Alameda —- the first of its kind in California. Brewers flocked to it because the offer was notable: local farm grown barley, sent to a local malting facility, sold to local brewery to be purchased by a local drinker. I’m not sure Dave would regard it as a renaissance for himself, but all things considered, it’s an incredible next step. And don’t count him out for any new breweries down the line. The Bay is, after all, the home to progress and reinvention.
This week on The Session, we welcome back to the studio Shaun O'Sullivan from 21st Amendment Brewery, along with Dick Cantwell from Magnolia Brewing Company, as the two discuss their latest collaboration, Eclectic IPA Month. Each brewery will brew 6 artisanal craft beers, for a total of 12 IPA's for fans to enjoy throughout November. Tune in and learn what's new at Magnolia since Dick took the help, and what our old friend Sully has been up to as he continues to change the landscape of craft beer. This is a special episode of the podcast, made possible by the underwriting of New Belgium Brewing and our collaborative series, Into the Wild. Last week, New Belgium kicked off their Sour Saison blending tour, starting in California, pulling this rad vintage trailer behind a pickup truck and parking it at bars and breweries across the country. I joined them for that leg of the journey, and again recently here in my hometown of Chicago. Right now, it’s headed back to Denver and then L.A., so you still have time to link up with the tour. One of the reasons this collaboration is so special for us is because it’s helping us devote a portion of our editorial, this podcast, and our design team to a category of beers we love—wild fermentation, sour, wood-aged, mixed-ferm. Those beers that are keeping alive an ancient tradition for a new generation of drinkers. In addition to the articles we’re writing, we also published a print mag, which we’re handing out for free at the events. And we’ve been able to put together some one-off podcast episodes, like this one, featuring Jay Goodwin of The Rare Barrel, and Dick Cantwell, formerly of Elysian, and now the owner of Magnolia brewing, not to mention the author of numerous books on brewing. So while the taproom at The Rare Barrel was full of people sampling and blending Sour Saison, and Dick was demonstrating how to take apart and re-build an oak barrel, we got together on the stage and struck up a conversation about the state of the category.
Fal Allen from Anderson Valley Brewing is our guest on Brew Ha Ha today, joining Steve Jaxon, Mark Carpenter and Herlinda Heras. Herlinda Heras says we will talk about Gose beers today with Fal Allen who has written a new book called Gose: Brewing an Ancient Beer in Modern Times. Anderson Valley Brewing Co. cans have the slogan Bahl Hornin' printed at the top of the can. This is an expression in Boontling, the dialect of Boonville, California. It means "good drinkin'." Visit this page on the AVBC website for more about Boontling. Here is a video where Fal Allen talks to a Boonville resident who speaks Boontling. Steve introduces Fal Allen from award-winning Anderson Valley Brewing Company in Boonville, in Mendocino County. Anderson Valley was a hop growing region in the late 1800s. Powdery mildew killed all the plants. The brewery opened in 1988. They opened a brewpub in a town of 500 people and they quickly found that people would come up from San Francisco to buy their beer. It became popular in the mid 90s and they switched from a brewpub to a production brewery. Mark notes that it was very early in the brewpub business. They did an annual beer festival that attracted more brewers than anywhere else. Herlinda notes that they still do it. But first she mentions Fal Allen’s new book about Gose beer. The one they are tasting is the Framboise Rose Gose beer. Steve likes it. Herlinda asks Fal Allen to describe Gose beer. It’s one of the oldest styles of beer in the world, from Germany, even before the Rheinheitsgebot. There were a lot of sour beers, like Gose. It’s very light and has a little salt in it and Fal explains why. The beer is named after the town and the river that runs through it, in Goslar. Herlinda has to leave early today because she’s going to the ELO concert in Oakland at Oracle Arena. After the break, Mark asks Fal Allen about his other books. He and Dick Cantwell wrote a book about Barley Wine several years ago. Sierra Nevada makes one, so does Anderson Valley Brewing. It's a big strong beer, and hard to make, with the highest alcohol and the most hops. Mark remembers that at Anchor Brewing, they were one of the first Barley Wine makers in the US. Fritz Maytag discovered it while visiting England. It's called Barley Wine because it is high in alcohol, but only used barley. Fal Allen says they make one every year. They're aged for a long time and can be rather sweet, with a raisiny, plummy flavor. They're made in the Fall to be consumed during the Winter. Next they taste a Gold Gose. Fal found demand for lower alcohol lighter beers. Coors Banquet came out the winner of their taste test. Their Boonville Gold is like a Pilsner but a bit more hoppy, easy drinking. Mark agrees there are two markets, one for low-alcohol lighter beers and another for the hoppy IPAs. Fal Allen is also a firefighter and Steve asks him about some fires that are burning up in Mendocino County right now (as the show is being recorded). He says they have had four fires just in July, from different causes. It is so dry up there that it takes hardly anything to start a fire. Steve mentions that a lot of California officials are using the term "the new normal" to describe the more dangerous fire conditions that are present in the last several years. Fal Allen mentions that the Santa Rosa fires last year were wind-driven and that once the wind pushes a fire there is no stopping it. Finally, they taste an Old Fashioned beer, made to taste like the cocktail of that name. It has some cherry and orange peel, aged it in Wild Turkey Bourbon barrels and added Angostura bitters. It's 8.3% alcohol. Fal Allen is happily surprised with the result. Mark agrees that it's fun in brewing, to try for a goal and then to achieve it.
In the second episode of Brews News Live, from BrewCon 2018, Matt speaks with Dick Cantwell. Dick co-founded Elysian Brewing Company in 1996, where he served as head brewer until its sale to Anheuser-Busch in 2015. During his tenure, Elysian was named Large Brewpub of the Year three times at the Great American Beer Festival® (1999, 2003 and 2004), and in 2004, he received the BA's Russell Schehrer Award for Innovation in Brewing. Dick was at the conference to present about the history and technical brewing practices of brewing eclectic IPAs, based on his book of the same name. Dick has also written or co-written books about Barley Wine, The Brewers Association's Guide to Starting Your Own Brewery, Second Edition, and Wood & Beer with New Belgium's Peter Bouckaert. It's a great chat about the evolution of the use of hops and the growth IPA and his views about the many variations of the style, including NEIPA. Enjoy the conversation.

We're back at it in our last to go show before the Q&A! (questions@experimentalbrew.com!) In the feedback section, Drew eats a big ole helping of crow for failing to hold to his stated principles. In the Pub - we talk about our Wyeast Q3 Private Collection Strains Contest and reveal the three winners and their recipes. Link below for the recipes themselves. Thanks to everyone who entered and our good sponsors at Wyeast! Then it's back to the business of beer with the latest round of acquisitions including Funky Buddha, Anchor and the really interesting combination of New Belgium, Dick Cantwell, Oud Beersel and Magnolia. Are we finally at that same tipping point where over expansion is pinching some brewers like Magnolia and the recently annouced to close Rubicon? In the lab, we actually invite in a guest as BrewTube's Short Circuited Brewers (Brian Huntley) makes us do a triangle test on the mics. What experimental madness is he up to and can Denny or Drew get it right? You're just going to have to listen to find out! And then in the lounge, Drew sits down with Devon Randall of Arts District Brewing and talks about leaving LA to become a brewer and coming back to the city and landing in a warehouse formerly run by a crazy man (Crazy Gideon). Devon's making a hell of a spread and you should give it a try. We race over Q&A because hey - you should be getting us questions for Episode 48! But we do take a moment to hit a quick tip about exploring your different varieties of specialty ingredients and Drew drops two things in Something Other - a hysterical set of Game of Throne recaps from BlackNerdProblems and the ongoing constantly moving CA Pinkham column "Off the Menu" with awful wonderful stories from the world of restaurants and bars.
