You should be able to fit them onto two large cookie sheets. Panko plain bread crumbs, 8-ounce container Liquid from 1 can of low sodium chick peas Ground flax seed meal Red pepper flakes, basil, oregano, garlic powder Pasta sauce (see recipe), remove from freezer the night before Homemade Bread (or a healthy one that you can buy) - see recipe Directions Peel eggplant, and cut lengthwise into ½ to ⅝ inch thick slices. Microwave the slices for 5 minutes on high on each side to remove water. Use hand towels to help absorb moisture. This will take a while. This avoids the salt method in most eggplant recipes. Once completed, pour contents of liquid from can of chickpeas, along with some ground flaxseed meal, and some water (1 to 1 ½ ounces) into a bowl with a flat bottom and stir. In another bowl, pour about half of the container of bread crumbs in, and add red pepper flakes (¾ teaspoon tops), oregano, basil, and garlic powder, and stir to mix in. Bathe the eggplant slices in the liquids, then transfer to the bread crumb mix, making sure to cover both sides of the eggplant slices. At the halfway point of this process, the liquid used to bind the bread crumbs to the eggplant will overtake the bread crumb bowl. You'll need to discard it, and add the other half of the bread crumbs, along with the spices to coat the remaining eggplant. Place on to the baking sheet, and cook in the oven that has been preheated to 400 degrees for 20 minutes, convection setting if you have it. At that point remove from the oven, turn, and replace back into the oven, switching the sheets from top to bottom, and vice versa. Cook 20 more minutes. It is possible they may need to stay in a little longer to get them crispy. You can eyeball this. Better a little over cooked than under cooked. Toast bread, and heat pasta sauce. Serve with pickle and chips. Can be eaten as an “Eggplant Sammy”, or with a knife and fork.

Aman Soomal is a qualified psychotherapist, specialising in Cognitive Behavioural Therapy, with a focus on perinatal mental health. She goes by the 'Mentally Healthy Mummy' and regularly shares snippets from her journey about motherhood from a therapist's perspective. In this episode, we discuss getting into our respective roles within mental health in the NHS, as South Asian women. Whilst we have taken different routes into the field (with Aman working as a CBT therapist with over ten years' of experience), we both have shared experiences of our visibility. Going through the clinical training process has meant we had assimilated in certain ways, felt starkly visible in interview settings and suffered a loss of our identity. The journey into clinical training holds obstacles subtly painted by the colour of our skin, which can lead to some of us having imposter syndrome or that we are not in control of our brownness. This episode will explore us almost losing but ultimately seizing back control. Rhian Allen doesn’t do anything by halves! It was while she was pregnant and looking for nutrition and exercise options for new mums that she realised there was a real gap in the market. Six months pregnant, working in publishing sales she started a business plan (at six months pregnant I just wanted to put my feet up and eat peanut butter from the jar). Rhian believed in her idea wholeheartedly and convinced her husband that they take the gamble, sell the house and go for it! 10 years on The Healthy Mummy has helped 100,000’s of mum’s transform their health and bodies. I came away from our chat so enthused about my own career goals, Rhian is so inspiring and and her passion and joy is infectious. I really loved her honestly about making mistakes and owning them too. I mention an article she wrote during the episode. It’s a great read http://www.rhianallen.com/news/my-5-tips-for-building-your-business/Check out their website for more information.https://www.healthymummy.comInstagram @thehealthymummyFB @thehealthymummy See acast.com/privacy for privacy and opt-out information.

So, we are finding it a little hard to prevent ourselves piling on the kilos as Mums. It used to be so easy to go to the gym whenever we liked and we had so much energy so we could do endless workouts, plus there were no treats in the house and it was easier to be disciplied with food. Now we're time poor, energy poor and many of our diets consist of left over vegemite toast and left over kids pasta meals. Dad of two young toddlers Adam McDougal NRL Star helps out with pratical diet and exercise advice and Nutritionalist Cheree Sheldon recipe writer from The Healthy Mummy has some great recipe ideas.
