Leslie has worked with FIU's athletic department since January of 2022 where she oversees the nutritional status of 18 athletic teams and over 400 student-athletes.     In today’s episode we have the honor of interviewing Ivonne Cobelo Duboy, an accomplished Registered and Licensed Dietitian with 27 years of experience specializing in the areas of Eating Disorders and Women’s Health and Wellness. Ashley and Jasmine Westbrook, her co-founder of EatWell Exchange, noticed there needed to be a stronger bridge between nutrition education and cultural competence and as a result started Eatwell Exchange. Eatwell Exchange is a nonprofit organization serving those in the Miami community by emphasizing the importance of their cultural background and providing nutrition education to support their well-being.
