Dianne McGrath has been doing remarkable work on sustainability in the hospitality industry. While everyone believes in reducing food waste and improving sustainability, she has done detailed research on how the problem shows up in restaurants and foodservice, and how to make practical improvements. Ken Burgin interviewed Dianne to find out what he's learned from her research, and how that can be used by operators and the wider food production industry - the production chain moves from agriculture and harvesting to processing, distribution and then use by foodservice or households. You can find more about her projects at the Food Waste Cooperative Research Centre or LinkedIn. Topics they discussed: What Dianne found from her PhD research into food waste in restaurants and foodservice. Understanding the Value Chain in food production and distribution, and implications for foodservice. Shelf life issues - 'use by' or 'best by' dates, and what they mean. Handling food waste in the QSR and aged care sectors. Over-production issues that regularly hit the headlines eg avocados. Future developments in sustainability that will impact foodservice operations and profits. You'll find the Show Notes and links for today's episode on the HospoReset.com website. If you were offered the opportunity to travel to Mars, would you go? And what if it were a one way trip - meaning that you would be saying goodbye to Earth, and everything on it, for good? For Dianne McGrath, this is a very real goal. Dianne is one of the remaining one hundred candidates vying for a position to travel to the Red Planet with Mars One in 2031, and never return to Earth. Imagine that - leaving everything you know behind bound for a planet where no person has ever set foot before, and still so much is unknown. I needed to better understand this situation, and so I connected to Dianne to ask, What Shall we Do About Mars, and discover why we as a human race are so infatuated with our neighbouring planet.Keep up with Dianne McGrath on Twitter @liteandportable, and find out more at diannemcgrath.com.au.More about Mars One: https://www.mars-one.com/mission/roadmapThanks for listening to the show, I'm genuinely thankful that you did. Occasionally there are stories and expeditions that capture your attention more than others. Today’s guest is embarking on an expedition that is out of this world - quite literally. Dianne McGrath is one of only 100 remaining candidates worldwide from an initial 202,586 applicants for the one-way Mars One mission in 2031. We talk at length about this decision and the extraordinary impacts this journey has on how she lives her life right now. For example Dianne lives permanently house-sitting, experiments with her food intake, and embarks on regular bio-hacking experiments. What we uncover though is that Dianne’s innate curiosity has been with her for her whole life. She is a leading sustainability expert in environmental management, food sustainability, and food security. One of her experiments involved living off the scraps that people leave at cafes and restaurants for a whole week - turns out she never, ever went hungry. Dianne’s openness and her curiosity are insatiable. Given her own bio-hacking experiments have lead her to reverse vision impairment, improve bone mass, turn back the ageing process, increased cognitive function, and much more she may yet discover the key to eternal youth. These insights that are as relevant for the rest of staying here on planet earth as the pioneers who may one day leave to live on Mars. Dianne McGrath is currently among the choice 100 in the world who will potentially be selected into a team of 4 people for the first one-way trip to Mars in 2026. In this episode, we discuss firstly Diane's role models, what kicked off her signup for the one-way mission to Mars and why she made the choice. The conversation goes into the nuances of interplanetary life and the science behind Mars as the top pick for the first space colony. They also talk about how the government structure will initially work in Mars once it’s actually there. Leadership and politics, ladies and gents! It gets more interesting as Dianne shares how the initial phases of living will be like on the planet, growing the human population, and how we could potentially harness the natural resources on Mars. She also outlines how food growing systems are to be integrated and what the top food picks are for living extraterrestrial life. Further, they talk about the possibility of encountering extraterrestrial life and what that potentially means for humanity in general, as well as terraforming Mars.
